Ingredients
Yield: 6 servings

- 1 red bell pepper, diced
- 4 mini cucumbers, diced
- 1 pint cherry tomatoes, halved
- 1 cup loosely-packed fresh mint leaves, chopped
- ½ cup finely-diced red onion
- 4 ounces crumbled feta cheese (optional)
- ¼ cup extra-virgin olive oil
- 3 tablespoons freshly-squeezed lemon juice
- 1 tablespoon ground sumac
- 1 teaspoon Dijon mustard
- 1 garlic clove, grated or pressed
- 1 teaspoon fine sea salt
- lots of freshly-ground black pepper
Method
Leave the quinoa according to package instructions. Fluff with a fork, then spread it out on a baking sheet or large plate to cool until no longer steaming.
Make the dressing. While that cooks, whisk together the olive oil, lemon juice, sumac, Dijon, garlic, sea salt and lots of black pepper in a small bowl until combined.
Turn the quinoa. Move the cooled quinoa to a large mixing bowl. Spoon with about half of the dressing and toss until evenly combined.
Mix Tip in the chickpeas, bell pepper, cucumbers, tomatoes, mint, red onion and feta. Spoon with the remaining dressing and gently toss until evenly combined.
Salt Taste and season with additional salt, pepper, lemon juice and/or sumac if needed.
Plate Plate while it is hot or refrigerate in a sealed container for up to 3 days. Enjoy!!
