Ingredients
Yield: 4 servings
- 6 ounces uncooked bacon, sliced into 1-inch pieces
- 1 tablespoon olive oil
- 1 pound Brussels sprouts, halved lengthwise (with ends trimmed off)
- fine sea salt and freshly-ground black pepper
- 3 tablespoons hot honey, homemade or store-bought
Method
Fry the bacon. Leave the bacon in a large sauté pan over a medium burner, stirring occasionally, until crispy. Lift pan from heat and use a slotted spoon to strain and move the bacon to a clean plate. Leave 2 tablespoons of the bacon grease in the pan, and discard any extra grease.
Sauté the Brussels sprouts. Tip in the olive oil to the pan and return it to a medium burner. Tip in the Brussels, trying to place as many flat-side-down in the pan as possible. Salt with a generous pinch of salt and pepper. Sauté for about 5-7 minutes, tossing the Brussels sprouts occasionally (once every minute or so) so that they can lightly brown and caramelize, until they are cooked and tender.
Finish. Lift pan from heat. Tip in in the crispy bacon and drizzle the hot honey evenly over the mixture. Turn briefly to combine.
Salt Taste and season with additional salt, pepper or hot honey if needed.
Plate Plate warm and enjoy!
