Key Ingredients for Your Roasted Cauliflower and Chickpea Salad

Before diving into the full recipe, let’s take a moment to explore the essential ingredients that make this salad truly special, along with some insightful notes and tips for each:

  • Cauliflower: For the best possible texture and flavor, I highly recommend using fresh cauliflower rather than frozen. Roasting fresh florets yields a delightful tenderness with perfectly charred edges, creating a depth of flavor that frozen simply cannot match. If you need a refresher, here’s a helpful guide on how to efficiently cut cauliflower into florets.
  • Chickpeas: You’ll need one standard (15-ounce) can of chickpeas, also known as garbanzo beans, for this recipe. Remember to rinse and drain them thoroughly before roasting to ensure they crisp up beautifully and absorb the seasonings.
  • Seasonings: Our preferred blend for roasting the cauliflower and chickpeas includes cumin, garlic powder, onion powder, smoked paprika, salt, and freshly-cracked black pepper. This combination infuses the vegetables with a warm, earthy, and slightly smoky flavor. However, feel free to personalize this; any seasoning blend you adore will work wonderfully. Think za’atar for a Middle Eastern twist or a touch of cayenne for a subtle kick.
  • Greens: I personally love the distinct peppery bite of fresh baby arugula in this salad; it beautifully complements the richness of the roasted vegetables and avocado. Nevertheless, feel free to substitute with any other crisp salad greens you have on hand, such as spinach, mixed greens, or chopped kale.
  • Avocado: Opt for one large, ripe avocado. Its creamy texture and mild flavor provide a luxurious counterpoint to the other ingredients. You can either dice it into neat cubes or slice it thinly, depending on your aesthetic preference.
  • Red Onion: Thinly-sliced fresh red onion adds a welcome sharpness and a delightful crunch to the salad. If you find raw red onion too intense, a simple trick is to briefly rinse the slices under cold running water for about 10 seconds before adding them to the salad. This mellows their flavor without sacrificing their crispness.
  • Pine Nuts: The buttery, delicate flavor of toasted pine nuts is an absolute treat in this salad, adding a sophisticated richness and textural contrast. If pine nuts aren’t readily available or you prefer an alternative, feel free to swap them out for other toasted nuts like slivered almonds, chopped walnuts, pecans, or pistachios. Seeds such as pepitas (pumpkin seeds) or sunflower seeds also make excellent substitutions.
  • Tahini Dressing: This salad truly shines when tossed with a half batch of my acclaimed Dreamy Tahini Dressing. Made with creamy tahini, fresh lemon juice, pungent garlic, a hint of cumin, salt, and pepper, it’s a staple in my kitchen. I often prepare a full batch to have extra dressing on hand for other salads throughout the week!
  • Extra Lemon Wedges: I highly recommend serving the finished salad with extra lemon wedges on the side. This allows everyone to add an additional burst of zesty lemon flavor to their individual portions, catering to personal taste.

Endless Possibilities: Potential Recipe Variations

This roasted cauliflower and chickpea salad recipe is remarkably versatile, making it easy to adapt and customize according to your preferences, dietary needs, or what you have available in your pantry. Here are some fantastic suggestions to inspire your creativity:

  • Enhance with Fresh Herbs: Elevate the freshness of the salad by stirring in some vibrant fresh herbs just before serving. Finely chopped mint, cilantro, or parsley would all be incredible additions, adding another layer of aromatic complexity.
  • Experiment with Seasonings: While our suggested spice blend is delicious, don’t hesitate to play around with different seasonings for the roasted cauliflower and chickpeas. A simple yet incredibly flavorful option we recently enjoyed was using only za’atar seasoning (plus salt and pepper). You can also introduce a pinch of cayenne pepper or red pepper flakes for an extra touch of heat if you like a little spice.
  • Swap the Roasted Veggie: If cauliflower isn’t your favorite or you’re looking for variety, many other vegetables roast beautifully and would be fantastic in this salad. Consider roasted broccoli florets, sweet potato cubes, or even roasted Brussels sprouts for a different flavor profile and texture.
  • Alternate Greens: While baby arugula offers a wonderful peppery kick, almost any fresh salad green would be a suitable substitute. Try baby spinach for a milder flavor, chopped romaine for extra crunch, or a spring mix for a delicate blend of greens.
  • Diverse Nuts and Seeds: Pine nuts are lovely, but a variety of toasted nuts and seeds can be used to add crunch and healthy fats. Toasted walnuts, almonds, or pistachios are excellent choices. For a nut-free option or a different flavor, consider toasted pepitas (pumpkin seeds) or sunflower seeds.
  • Add More Protein: Make this salad an even more substantial main course by incorporating additional protein sources. Grilled chicken or shrimp can be a fantastic complement for non-vegetarians. For plant-based protein, pan-fried tofu, tempeh, or even a handful of cooked quinoa could be stirred in.
  • Introduce a Salty Kick: A sprinkle of crumbled feta cheese or goat cheese can add a tangy, salty element that pairs wonderfully with the roasted vegetables and creamy dressing.

Description

This Roasted Cauliflower, Chickpea and Arugula Salad is a fresh and feel-good salad that’s bound to be a hit, especially when tossed with my favorite tahini dressing. It’s perfectly balanced and incredibly satisfying.

Ingredients

Scale

Salad Ingredients:

  • 1 medium head of cauliflower, cut into small florets
  • 1 (15 ounce) can chickpeas, rinsed and drained
  • 2 tablespoons olive oil
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon each: ground cumin, garlic powder, onion powder, smoked paprika
  • 1/4 teaspoon freshly-cracked black pepper
  • 5 ounces fresh arugula
  • 1 large ripe avocado, thinly sliced
  • 1/2 small red onion, thinly sliced
  • 1/3 cup toasted pine nuts
  • extra lemon wedges, for serving

Dreamy Tahini Dressing:

  • 1/4 cup tahini
  • 3 tablespoons freshly-squeezed lemon juice
  • 1/4 teaspoon ground cumin
  • 1 clove garlic, pressed or minced
  • 24 tablespoons warm water
  • fine sea salt and freshly-cracked black pepper, to taste

Instructions

  1. Prep the oven and baking sheet. Preheat your oven to 425°F (220°C). Lightly mist a large baking sheet with cooking spray or line with parchment paper for easy cleanup.
  2. Prep the cauliflower and chickpeas. In a large mixing bowl, combine the cauliflower florets, rinsed and drained chickpeas, olive oil, sea salt, ground cumin, garlic powder, onion powder, smoked paprika, and black pepper. Toss gently but thoroughly until all the vegetables are evenly coated with the oil and seasonings. Pour the seasoned mixture onto the prepared baking sheet, spreading it out into a single, even layer to ensure even roasting.
  3. Bake. Roast for 25-30 minutes, making sure to stir the mixture once halfway through the baking time. Continue roasting until the cauliflower is perfectly tender, slightly caramelized, and exhibits beautiful charred edges, and the chickpeas are lightly crisp. Once done, transfer the baking sheet to a wire cooling rack.
  4. Make the dressing. While the vegetables are roasting, prepare your dreamy tahini dressing. In a small bowl or a mason jar, whisk together the tahini, freshly-squeezed lemon juice, ground cumin, minced garlic, and 2 tablespoons of warm water until the mixture is smooth and creamy. Gradually add extra warm water, a tablespoon at a time, if needed, until the dressing reaches your desired pourable consistency. Finally, season with fine sea salt and freshly-cracked black pepper to taste.
  5. Finish the salad. In a generously sized serving bowl or artfully arranged on individual plates, combine the fresh arugula, creamy avocado slices, thinly sliced red onion, buttery toasted pine nuts, and the warm roasted cauliflower and chickpeas. Drizzle the salad evenly with your prepared tahini dressing. Serve immediately with extra lemon wedges on the side for squeezing, allowing everyone to customize their zesty preference, and savor every delicious bite!
