A delightful and sophisticated twist on the classic pear and arugula salad, perfect as a light, elegant lunch or a vibrant, flavorful accompaniment to any meal.

Roasted Pear, Blue Cheese & Arugula Salad: An Elegant Fall Delight
Last weekend, the crisp autumn air outside perfectly complemented the warmth and laughter inside, as I spent a beautiful Friday night celebrating the birthday of my dear friend, Sarah. Instead of venturing out to a bustling restaurant, we opted for a more intimate and cozy fall evening at home. My friend Ally and I eagerly volunteered to take on the cooking duties. Ally, a devoted admirer of the legendary Barefoot Contessa, Ina Garten, was thrilled to incorporate one of Ina’s signature recipes into our menu. Alongside a comforting butternut squash and crab bisque, freshly baked honey beer bread, an array of appetizers, and an improvised homemade apple pie, this particular salad stood out as a highlight.
Indeed, the star of the evening was this incredible roasted pear, blue cheese, cranberry, walnut, and arugula salad. While the full list of ingredients might not fit neatly into a single title, each component plays a crucial role in creating a symphony of flavors and textures. Upon my arrival, Ally had already meticulously prepped the pears, laying them out in anticipation. As we worked together to prepare the rest of the meal, these glorious pears slowly roasted in the oven. Minute by minute, the house began to fill with the most enchanting and delicious aroma – a sweet, warm scent that promised something truly special. It was pure bliss.
True to form, Ina Garten delivered another culinary triumph. This warm salad not only boasts an incredibly classy and sophisticated presentation, making it perfect for any special occasion, but it is also remarkably simple to put together. The masterful combination of sweet, tender roasted pears and tart dried cranberries with the pungent tang of sharp blue cheese, the rich, earthy crunch of toasted walnuts, and the peppery bite of fresh arugula creates a perfectly balanced and utterly satisfying dish. To elevate it further, a delectable port (or red wine) and cider sauce is drizzled over the top, adding a layer of complex sweetness and acidity that ties all the elements together. While I personally adore this salad exactly as presented, its versatility allows for substitutions of your favorite cheeses or greens, ensuring it can be tailored to individual preferences. This salad is more than just a side dish; it’s a testament to the joy of simple, high-quality ingredients coming together to create something truly extraordinary.
So, here’s to cherished friendships, unforgettable meals, and, of course, the unparalleled culinary wisdom of Ina Garten. I am already looking forward to making this exquisite salad again very soon, perhaps for another cozy gathering or simply to savor its comforting flavors on a quiet evening.

The Art of a Perfect Fall Salad: Why This Recipe Shines
What makes this Roasted Pear, Blue Cheese & Arugula Salad an absolute standout? It’s the thoughtful interplay of contrasting flavors and textures. The roasting process transforms ordinary pears into tender, caramelized jewels, enhancing their natural sweetness. This sweetness is then beautifully offset by the sharp, salty notes of blue cheese, creating a dynamic flavor profile that awakens the palate. The addition of dried cranberries introduces a burst of tartness and a chewy texture, while toasted walnuts provide a satisfying crunch and a rich, nutty depth. Finally, the vibrant, peppery arugula cuts through the richness, offering a refreshing counterpoint and a slight bitterness that balances the sweeter elements. The magic truly happens with the dressing—a warm, luscious reduction of apple cider and port, infused with brown sugar, that glazes the pears and permeates the entire salad with an irresistible aroma and taste. This isn’t just a salad; it’s an experience, a harmonious blend of autumn’s finest ingredients.
Ingredient Spotlight: Crafting Flavor and Texture
Each ingredient in this salad is carefully selected to contribute to its overall excellence. Understanding their roles can help you appreciate the depth of this dish and even inspire your own variations.
- Pears: Using ripe but firm pears like Anjou or Bartlett is crucial. They hold their shape during roasting while becoming incredibly tender and juicy. Roasting caramelizes their sugars, intensifying their sweetness and adding a delightful warmth.
- Lemon Juice: Essential for preventing the sliced pears from oxidizing and turning brown, preserving their appealing appearance. It also adds a subtle bright note.
- Blue Cheese: A sharp, coarsely crumbled blue cheese is key. Its pungent, creamy, and salty characteristics provide a powerful counterpoint to the sweetness of the pears and cranberries.
- Dried Cranberries: These jewel-toned berries bring a welcome tartness and a chewy texture, adding visual appeal and a burst of fruity flavor.
- Walnuts: Toasted and chopped, walnuts offer a satisfying crunch and an earthy, slightly bitter note that complements the other ingredients beautifully. Toasting enhances their flavor significantly.
- Apple Cider: Forms the base of the exquisite basting liquid, contributing a gentle acidity and a fruity sweetness that pairs perfectly with pears.
- Port (or Red Wine): Adds a sophisticated layer of deep, fruity flavor and a touch of elegance to the dressing. Red wine is a perfectly acceptable substitute.
- Light Brown Sugar: Helps to balance the tartness of the cider and wine, encouraging caramelization during the roasting process and adding richness to the dressing.
- Olive Oil: A good quality olive oil is essential for the final dressing, providing a smooth mouthfeel and carrying the vibrant flavors.
- Baby Arugula: The foundation of the salad, offering a fresh, peppery, and slightly bitter kick that contrasts wonderfully with the sweet and savory components.
This careful selection ensures every bite is a journey of delightful contrasts.

Tips for Perfecting Your Roasted Pear Salad
Creating this gourmet salad is straightforward, but a few expert tips can ensure your dish is truly outstanding:
- Pear Selection: Choose pears that are ripe enough to be flavorful but still firm to the touch. This prevents them from becoming mushy during roasting. Anjou and Bartlett are excellent choices.
- Lemon Juice is Your Friend: As Ali wisely advises, immediately toss your peeled and sliced pears with lemon juice. Pears oxidize quickly, and lemon juice is the best defense against browning, keeping them visually appealing.
- Don’t Skimp on Roasting: Allow the pears to roast until they are truly tender. This deepens their flavor and softens their texture, making them melt-in-your-mouth delicious. Basting occasionally with the cider mixture infuses them with even more flavor.
- Blue Cheese Quality: The quality of your blue cheese significantly impacts the final flavor. Opt for a sharp, good-quality blue cheese that you enjoy on its own.
- Toasting Walnuts: Don’t skip toasting the walnuts! A few minutes in a dry pan or oven brings out their natural oils and enhances their nutty flavor and crunch.
- Customize Your Greens: While arugula offers a unique peppery kick, if you prefer a milder flavor, consider using mixed greens or baby spinach as an alternative.
- Make Ahead (Partially): The pears can be roasted a few hours in advance and served warm or at room temperature. Assemble the salad just before serving to keep the arugula fresh and crisp.
These small details can elevate your salad from good to truly exceptional.
Roasted Pear, Blue Cheese & Arugula Salad

Cook Time: 30 minutes
Total Time: 40 minutes
Yield: 4-6 servings 1x
Description
A delicious twist on this pear and arugula classic recipe – great on it’s own for a light lunch, or for a super-flavorful addition to any meal!
Ingredients
- 3 ripe but firm Anjou pears (or I used Bartlett)
- freshly squeezed lemon juice (3 lemons)
- 3 ounces coarsely crumbled sharp blue cheese
- 1/4 cup dried cranberries
- 1/4 cup walnut halves, toasted and chopped
- 1/2 cup apple cider
- 3 Tbsp. port (or red wine)
- 1/3 cup light brown sugar, lightly packed
- 1/4 cup good olive oil
- 6 ounces baby arugula
- salt
Instructions
- Preheat the oven to 375 degrees F.
- Peel the pears and slice them lengthwise into halves. With a small sharp paring knife and a melon-baller, remove the core and seeds from each pear, leaving a round well for the filling. Trim a small slice away from the rounded sides of each pear half so that they will sit in the baking dish without wobbling. Toss the pears with some lemon juice to prevent them from turning brown. Arrange them, core side up, in a baking dish large enough to hold the pears snugly.
- Gently toss the crumbled blue cheese, dried cranberries, and walnuts together in a small bowl. Divide the mixture among the pears, mounding it on top of the indentation.
- In the same small bowl, combine the apple cider, port, and brown sugar, stirring to dissolve the sugar. Pour the mixture over and around the pears. Bake the pears, basting occasionally with the cider mixture, for 30 minutes, or until tender. Set aside until warm or at room temperature.
- Just before serving, whisk together the olive oil, 1/4 cup of lemon juice, and 1/4 cup of the basting liquid in a large bowl. Divide the arugula among 6 plates and top each with a pear half. Drizzle each pear with some of the basting liquid, sprinkle with salt, and serve warm.
