Delicious Blue Cheese Bacon Macaroni and Cheese, a gourmet comfort food recipe.

The Ultimate Blue Cheese Bacon Macaroni and Cheese Recipe: A Gourmet Twist on Classic Comfort

Ah, blue cheese. It’s one of those polarizing ingredients that people either adore or vehemently avoid. But if you belong to the former camp, or if you’re open to having your culinary world rocked, prepare yourself for an absolutely epic new macaroni and cheese recipe that promises to be a game-changer. This isn’t just any mac and cheese; it’s a sophisticated, incredibly flavorful dish that elevates classic comfort food to gourmet heights, all while being surprisingly simple to prepare.

Let’s be real for a moment: bacon and blue cheese are two of the most universally loved (and sometimes debated) ingredients on the planet. When these two powerhouses unite, they create a symphony of savory flavors that is nothing short of heavenly. The moment I envisioned this recipe, I was instantly convinced. And I wasn’t alone! A handful of friends eagerly volunteered as taste-testers, and the initial glimpse shared on social media sent my Instagram followers into a frenzy. Yet, despite these high expectations, the final dish surpassed every single one. It was even better than I dared to imagine, a truly unforgettable experience.

Why This Blue Cheese Bacon Mac and Cheese Will Be Your New Favorite

I’d been contemplating creating a blue cheese and bacon macaroni and cheese recipe for quite some time. The idea had been simmering in the back of my mind, waiting for the perfect moment. That moment arrived when my wonderful friends, Rachel and Brandy, announced they were orchestrating a “Mac and Cheese Mania” (#maccheesemania). This exciting event was designed to showcase an array of creative macaroni and cheese recipes from food bloggers and home cooks everywhere, and I knew immediately that this was the perfect opportunity to bring my dream dish to life.

Initially, I considered a lighter approach, perhaps using turkey bacon and a reduced-fat blue cheese, pairing it with the whole-wheat pasta and lighter sauce base I often use in other recipes. However, when it comes to true indulgence, I believe in embracing the real deal. I would much rather savor a smaller, intensely flavorful portion of a rich, authentic dish than compromise on the quality and taste of key ingredients like bacon and cheese. While you are always welcome to make substitutions to suit your dietary preferences, my philosophy for this particular recipe leans towards an “all-things-in-moderation” approach, ensuring maximum flavor and satisfaction. This commitment to quality is what makes this Blue Cheese Bacon Macaroni and Cheese recipe truly stand out.

Crafting Your Gourmet Mac and Cheese: A Step-by-Step Guide

Let’s dive into how you can create this incredible Blue Cheese Bacon Macaroni and Cheese in your own kitchen. The process is straightforward, designed to deliver maximum flavor with minimal fuss, making it a perfect quick dinner or impressive side dish.

1. The Irresistible Bacon Foundation

We start with the star of the show: glorious bacon. Begin by dicing your bacon strips into small, uniform pieces. Then, in a skillet over medium-high heat, sauté the bacon until it’s perfectly crispy and golden brown. This step is crucial, as the rendered fat adds immense depth of flavor, and the crispy bits provide a delightful textural contrast. For a lighter touch and less grease, you can follow my grandma’s ingenious trick: microwave the bacon between layers of paper towels until crisp. Whichever method you choose, set the cooked bacon aside, reserving a tablespoon or two of the rendered fat if you prefer an even richer sauce.

2. Crafting the Velvety Sauce Base

Next, we prepare the creamy, luscious sauce that will bind everything together. In a separate bowl, whisk together 2% evaporated milk, a large egg, salt, pepper, and a pinch of cayenne pepper. This is the same tried-and-true base I use across many of my macaroni and cheese recipes, and it’s a winner! It’s not only quick and easy but also offers a lighter yet incredibly creamy texture thanks to the evaporated milk. The egg helps thicken the sauce and gives it a luxurious, smooth finish. Set this mixture aside.

3. Perfecting the Pasta

While the bacon cooks, bring a large pot of generously salted water to a rolling boil. Add your elbow macaroni (I love using whole wheat varieties for a slightly nuttier flavor and added texture) and cook it until it’s perfectly al dente. This means it should be tender but still have a slight bite to it – not mushy. Al dente pasta holds its shape better in the creamy sauce and provides a satisfying mouthfeel. Once cooked, drain the pasta thoroughly and return it to the pot over medium-low heat. Add a tablespoon of butter and toss until it’s completely melted, coating each noodle with a rich foundation.

4. The Sauce Meets the Pasta

With the butter melted and coating your al dente macaroni, it’s time to introduce the creamy sauce base. Pour the evaporated milk mixture directly into the pot with the pasta and stir gently until everything is thoroughly combined. Continue to cook this mixture over medium-high heat, stirring occasionally, for about 3-5 minutes. You’ll notice the sauce beginning to thicken slightly and come to a gentle simmer. This step ensures the sauce is properly heated and starts to develop its full body before the cheese is added.

5. The Heavenly Cheese Infusion

Now comes the moment of pure bliss – the cheese! Remove the pan from the heat. This is important to prevent the cheese from seizing or getting oily. Add both the crumbled blue cheese and the freshly-grated sharp white cheddar cheese to the pot. I love the combination of pungent blue cheese with the creamy, tangy sharpness of white cheddar; it creates a complex and balanced flavor profile. However, feel free to experiment with other cheeses if you wish, though the blue cheese is essential here! Stir continuously until all the cheese is beautifully melted and has transformed into a rich, velvety sauce that coats every single noodle.

6. The Grand Finale: Bacon Bliss

Finally, it’s time for the crispy bacon. Add the cooked, diced bacon to the macaroni and cheese, stirring gently to distribute those smoky, salty bits throughout the creamy pasta. This last addition brings a fantastic textural element and another layer of irresistible flavor. For an extra touch of decadence and visual appeal, garnish individual servings with a sprinkle of additional crispy bacon and a few extra crumbles of blue cheese. It’s not just for decor; it enhances the experience!

The Unforgettable Taste and Experience

Seriously, this Blue Cheese Bacon Macaroni and Cheese was everything I had dreamed of and so much more. The richness of the blue cheese is perfectly balanced, not overwhelming but distinct, melding beautifully with the creamy texture of the sauce. The smoky, salty crunch of the bacon elevates every bite, creating a truly unforgettable flavor profile. And the best part? This entire dish comes together in approximately 30 minutes, making it an ideal choice for a weeknight indulgence or a quick yet impressive meal. As my friend Cate so perfectly put it, this one deserves “two thumbs and two toes up.” It’s truly THAT good.

This recipe is a testament to the fact that homemade mac and cheese reigns supreme. Forget the boxed versions; a few simple, quality ingredients can transform a humble pasta dish into a culinary masterpiece. Serve it with a crisp green salad to cut through the richness, or alongside some crusty bread for soaking up every last drop of that incredible sauce. Whether you’re a lifelong blue cheese devotee or curious to explore new flavors, this recipe is a must-try. Get ready for a new favorite comfort food that will have you coming back for more!

Description

Blue cheese and bacon are the PERFECT combo for this killer macaroni and cheese recipe.

Ingredients

Scale

  • 8 strips (about 1/2 lb.) bacon, diced
  • 1 (12-ounce) can 2% evaporated milk
  • 1 large egg
  • 1/2 tsp. salt
  • 1/4 tsp. ground black pepper
  • pinch of cayenne
  • 8 oz. elbow macaroni (I used DeLallo whole wheat)
  • 1 Tbsp. butter
  • 5 oz. crumbled blue cheese
  • 4 oz. freshly-grated sharp white cheddar cheese

Instructions

  1. Heat bacon in a skillet over medium-high heat for about 5-7 minutes, stirring frequently, until crispy.
  2. In a separate bowl, whisk together evaporated milk, egg, salt, pepper and cayenne until combined. Set aside.
  3. Meanwhile, bring a large pot of generously-salted water to a boil, and cook the pasta al dente according to package instructions. When the pasta is cooked, drain it and then return it to the pot and reduce heat to medium-low. Immediately add the butter, and toss until the butter is melted. Pour in the evaporated milk mixture and stir until combined. Continue cooking over medium-high heat, stirring occasionally, for about 3-5 minutes, or until the sauce comes to a simmer.
  4. Remove pan from heat and add in the cheeses. Stir until melted, then stir in the cooked bacon. Serve immediately, garnished with extra bacon and blue cheese if desired.
