Ingredients

Yield: 6 servings

  • 1 tablespoon olive oil
  • 12 ounces andouille smoked sausage, thinly sliced on the diagonal
  • 1 medium yellow onion, diced
  • 2 medium carrots, diced
  • 2 celery ribs, diced
  • 4 large cloves garlic, minced
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • ¼ teaspoon freshly ground black pepper, plus more to taste
  • 1½ cups green or brown lentils, rinsed and picked over
  • 1 (14.5-ounce) can fire-roasted diced tomatoes
  • 6 cups chicken stock
  • 1 bay leaf
  • 2 handfuls (about 1½ ounces) finely chopped kale
  • 1 to 2 tablespoons fresh lemon juice, to taste
  • fine sea salt, to taste
  • optional toppings: chopped fresh parsley, extra black pepper and/or crushed red pepper flakes

Method

  1. Brown the sausage. Warm the olive oil in a large stockpot over medium-a hot burner. Tip in the sausage and cook for 4 to 5 minutes, stirring occasionally, until browned. Move to a clean plate and keep nearby.

  2. Sauté the vegetables. Tip in the onion, carrots and celery to the same pot and sauté for 5 to 6 minutes, stirring occasionally, until softened. Tip in the garlic, smoked paprika, thyme and black pepper and sauté for 1 minute, stirring frequently.

  3. Let it bubble gently. Tip in the lentils, fire-roasted tomatoes, chicken stock and bay leaf and stir to combine. Raise the soup to a boil. Lower the heat to medium-low, partially cover, and let it bubble gently for 30 to 40 minutes, stirring occasionally, until the lentils are tender.

  4. Finish. Put back the sausage to the pot and mix in the kale. Let it bubble gently for 2 to 3 minutes, until the kale is tender and the sausage is warmed through. Lift and discard the bay leaf. Stir in 1 tablespoon lemon juice, then taste and season with salt, additional black pepper and more lemon juice as needed.

  5. Plate Plate warm, topped with parsley, extra black pepper and/or crushed red pepper flakes if desired.
