  • 1 pound uncooked pasta (campanelle or your preferred shape)
  • 3 tablespoons extra-virgin olive oil, divided
  • 1 pound Italian sausage (choose traditional pork, chicken, or Field Roast plant-based sausage), sliced into rounds or crumbled
  • salt and freshly ground black pepper, to taste
  • 1 pound (16 ounces) baby bella or white button mushrooms, quartered
  • 1 large bunch fresh kale, thoroughly washed and roughly chopped (ensure coarse stems are removed for best texture)
  • 8 cloves garlic, peeled and thinly-sliced (or finely minced for a stronger flavor)
  • 1/3 cup dry white wine** (such as Sauvignon Blanc or Pinot Grigio)
  • pinch of crushed red pepper flakes (adjust to your spice preference)
  • generous amounts of freshly grated Parmesan cheese, for serving


Instructions

  1. Bring a large stock pot of generously-salted water to a rolling boil. Add the pasta and cook according to package instructions until it is perfectly al dente. Before draining, reserve approximately 1/4 cup of the starchy pasta water; this will be used later to help create a luscious, cohesive sauce. Drain the cooked pasta thoroughly and set it aside.
  2. Meanwhile, while your pasta water is heating and the pasta is cooking, heat 1 tablespoon of olive oil in a large sauté pan or skillet over medium-high heat. Add your chosen Italian sausage (whether traditional, chicken, or Field Roast) to the hot pan. Sauté the sausage, breaking it up if crumbled or flipping the rounds occasionally, until it is beautifully browned and crispy on both sides. This browning develops deep flavors and a desirable texture. Using a slotted spoon, carefully transfer the cooked sausage to a separate plate and set aside, leaving any rendered fat or oil in the pan if using traditional sausage.
  3. To the same pan, add the remaining 2 tablespoons of olive oil (or less, if you’re using traditional sausage and there’s enough grease left in the pan). Add the quartered mushrooms and sauté for about 3 minutes, stirring occasionally, until they begin to brown and soften. Next, add the chopped kale and the thinly sliced or minced garlic to the pan. Continue to sauté for another 3-4 minutes, stirring periodically, until the garlic becomes fragrant and the kale has wilted and softened.   4. Return the cooked pasta to the large sauté pan with the mushroom and kale mixture. Add the reserved cooked sausage. Toss everything together vigorously to ensure the pasta is thoroughly coated with the delicious vegetables and sausage. If you desire a slightly more saucy consistency, gradually stir in some of the reserved pasta water, a tablespoon at a time, until it reaches your preferred richness.
