  • 8 purple potatoes, halved (purple)


Instructions

To Make The Vinaigrette:

  1. In a small bowl, whisk together the olive oil, white balsamic vinegar, minced garlic, salt, and freshly-ground black pepper until well blended. Set aside.

To Prepare and Grill The Vegetables:

  1. Bring a large pot of lightly salted water to a boil. Add the halved purple potatoes and boil for approximately 10 minutes, or until they are fork-tender but still firm. Stir occasionally to ensure even cooking. Carefully drain the potatoes and set them aside to cool slightly.
  2. In a large mixing bowl, combine the par-boiled purple potatoes with the remaining prepared vegetables (cherry tomatoes, red bell pepper, orange bell pepper, yellow squash, yellow bell pepper, zucchini, and red onion). Pour the prepared vinaigrette over the vegetables and toss gently until all components are evenly coated. Cover the bowl and refrigerate for at least 10 minutes, or up to 8 hours, to allow the flavors to meld beautifully.
