This summer, I’ve had the incredible opportunity to partner with Skinny Cow on their inspiring #WoCave campaign, a series designed to encourage women to embrace new experiences and celebrate sisterhood. My journey with them has been nothing short of transformative. My first mission involved hosting an in-home cooking class with a professional chef, where friends and I savored a exquisite 7-course tapas meal. The experience was delightful, filled with laughter, learning, and delicious food. However, the arrival of my next inspiration box, brimming with vibrant pink workout gear, signaled a shift in focus. This time, the mission wasn’t about consuming calories, but rather about burning them off in an entirely new and exhilarating way.
The challenge that awaited me?
Embracing the Grace and Challenge of Ballet!

That’s right! My mission was to gather a group of close girlfriends and embark on a “new” fitness adventure. For the first time in an astonishing 15 years, I mustered every ounce of courage I had, laced up a brand new pair of ballet flats, and stepped into my very first adult ballet class at the esteemed Kansas City Ballet School. This wasn’t just a fitness class; it was a journey back to a profound part of my past.
While this particular adult ballet class felt new, the world of ballet itself is deeply ingrained in my personal history. During my childhood, I was a dedicated and serious ballet student. I trained for approximately a decade, from a young age until I was about 14, primarily under the rigorous instruction of a classical instructor at Friends University. Our days were filled with intense classes, often multiple hours long, almost every day of the week, pushing us to our physical and mental limits. I genuinely loved it, and looking back, I believe I had developed a respectable level of skill and artistry.
However, just before I was set to begin high school, my ballet journey took an unexpected and abrupt turn. I was diagnosed with advanced scoliosis, which was progressing rapidly. Within a mere three months, I underwent major back surgery. This significant medical procedure not only pulled me out of school for the entire fall semester but also permanently ended my classical ballet program. The sudden cessation of an activity that had consumed so much of my young life was a difficult and emotional experience.

Despite the physical limitations imposed by my surgery, my love for dance never waned. I seized every opportunity to participate in smaller dance projects, performing in music theater shows or joining my high school’s “poms” dancing squad. (Though I’m quite sure those routines would have caused my former strict ballet instructor to either faint or blush!) Even in recent years, I’ve found joy and fitness in ballet-inspired workouts like The Bar Method and Barre3, which offer a taste of the discipline and grace I once knew.
Yet, none of these quite captured the essence of my first love: classical ballet. The profound beauty of the art form, the incredible intensity of the workout, the meticulous discipline of its classical structure, and the sheer joy of experiencing it alongside friends is truly unparalleled. Even though I knew I would never regain the flexibility of my youth or be able to prance around for hours as I did as a child, a persistent curiosity always lingered. I wondered what it would truly be like to return to ballet after so many years, to reconnect with that long-lost passion.

Serendipitously, I recently discovered that two of my friends, also fellow book club members, had also danced for years as children and harbored a similar desire to try an adult ballet class. So, when I learned that my second mission from Skinny Cow was to undertake a new fitness “experience” collectively, the pieces perfectly aligned. We decided to bravely gear up, sign up, and attend a beginning adult ballet class together at the renowned Kansas City Ballet School.
The Kansas City Ballet boasts an outstanding reputation within the community, but I was particularly thrilled for the chance to visit their newly-renovated home in the Todd Bolender Center for Dance & Creativity downtown. One of my favorite architecture firms played a pivotal role in transforming the historic 100-year-old Union Station power house building into this magnificent, state-of-the-art ballet facility. The center is truly a sight to behold, featuring beautiful sunlit studios with soaring ceilings and exposed brick walls, alongside a brand new performance theater for their talented dancers. It’s an incredible testament to architectural vision and community spirit, filling me with immense pride for our city.

I must confess, on the day of the class, I was a bundle of nerves! A whirlwind of questions raced through my mind: What should I expect from an adult ballet class? Would I actually be able to execute the movements? Would the instructor be kind and patient? Was I wearing the appropriate attire? What if I tripped over my feet and sprained an ankle? I realized, with a chuckle, that I felt exactly like a child on her very first day of school. Yet, the moment I stepped into the grand Bolender Center, an unfamiliar but comforting sensation washed over me – a strange sense of coming home.
The facility itself was absolutely stunning, and the vibrant energy in the air was contagious. I quickly learned that the Kansas City Ballet School boasts the most incredibly kind and welcoming staff imaginable! They graciously answered all of our anxious questions and guided us to our studio. Slipping on ballet flats and walking into a ballet studio again felt like the most surreal moment of déjà vu. But as soon as the class began, my initial nerves completely melted away. It was, quite simply, so much fun!
Gone were the days of overly competitive, intensely grueling, and exhausting ballet classes from my youth. This adult class was designed to be completely accessible to students of all levels, and it was evident that everyone present was there to support one another and genuinely enjoy the experience. There was no judgment, only encouragement and shared enthusiasm.
We instantly adored our instructor, Sean, who proved to be an exceptional teacher. He kept us engaged not only with clear instruction but also by making us laugh with his random stories and trivia throughout the class. Relearning the foundational steps of our childhood in that gorgeous studio, with the evening sun casting a warm glow over the distant downtown skyline, was a magical experience. But more than anything, I think we all cherished the simple act of getting to dance again. And even better, getting to dance together.
This experience served as a powerful reminder of why I eagerly joined the #WoCave campaign with Skinny Cow this summer. At its core, the campaign is about celebrating those precious moments when you can truly let go, be entirely yourself, and connect authentically with a group of close girlfriends. For me, many of those moments traditionally revolve around deep conversations, shared glasses of wine, and delicious food. But let me tell you — pulling on ballet flats, walking into a brand new class, and bravely stumbling through tentative pirouettes in front of my friends and a room full of strangers was a completely different, yet incredibly rewarding, kind of vulnerability. It was so worth it, brimming with joy and a profound sense of accomplishment. I’m certain the shared feeling of triumph we all felt as we walked out the door will be a cherished memory I hold forever.

Nutella Energy Bites: The Perfect Post-Workout Treat (or Pre-Workout Boost!)
Alright, let’s circle back to those delectable energy bites I mentioned earlier. Every good workout deserves an equally good, and ideally wholesome, post-workout snack. And since Skinny Cow is all about embracing healthier treats without sacrificing flavor, I decided to create a “healthier” no-bake dessert that could even provide a wonderful boost of energy before a demanding ballet class or any physical activity.
So, without further ado, allow me to proudly introduce my latest creation — Nutella Energy Bites!
Now, I’ll admit, these little delights won’t necessarily win the award for the absolute healthiest snack on the block, primarily because they proudly feature a generous amount of that universally adored chocolate hazelnut spread. However, their true genius lies in their foundation: they are packed with an array of wholesome, nutrient-dense ingredients. We’re talking about hearty old-fashioned oats for sustained energy and fiber, natural honey for a touch of sweetness and antioxidants, shredded coconut for healthy fats and texture, crunchy roasted hazelnuts that complement the Nutella beautifully, and powerhouses like ground flax seeds and chia seeds, providing essential omega-3s, fiber, and protein. And the best part? They can literally be whipped up in your food processor in mere minutes, making them the ultimate convenient snack.
I personally prefer to form mine into neat little 1-inch balls, which are perfect for a quick pop, but feel absolutely free to portion them out into whatever size suits your preference. These versatile bites are fantastic for a grab-and-go breakfast, a guilt-free dessert, or an essential boost of sustained energy before hitting the gym or, in my case, the ballet studio. My friends and I are completely obsessed with them, and I’m overwhelmingly confident that you will be too!

Nutella Energy Bites

- Yield: 20-24 energy bites
Description
These delicious no-bake energy bites get an extra chocolate and hazelnut kick with some Nutella, making them an irresistible snack for any time of day!
Ingredients
- 1 1/2 cups old-fashioned oats
- 2/3 cup Nutella (chocolate hazelnut spread)
- 1/2 cup shredded coconut
- 1/2 cup honey
- 1/2 cup roasted hazelnuts
- 2 Tbsp. ground flax seeds
- 1 Tbsp. chia seeds
- 2 tsp. vanilla extract
- 1/2 tsp. salt
Instructions
- Combine all ingredients together in a food processor and pulse until well combined. Cover the mixture and transfer it to the refrigerator, allowing it to cool for about 30-60 minutes. This chilling period will slightly harden the mixture, making it much easier to form into uniform balls.
- Once the mixture is cool and firm enough to handle, remove it from the refrigerator and roll it into balls of your desired size. (Mine were approximately 1-inch in diameter, perfect for a bite-sized treat.) Enjoy immediately, or store them in a covered container in the refrigerator for up to a week.
