The Art of Baking These Cupcakes: A Step-by-Step Tutorial
What makes this recipe even better is how surprisingly easy it is to make, especially with the optional, yet highly recommended, “surprise inside.” We’ll walk you through each step, ensuring you achieve perfect, moist chocolate cupcakes crowned with a rich, fluffy peanut butter frosting. The process is straightforward, allowing you to enjoy the baking experience and the incredible aroma that will fill your kitchen.

Starting with Quality Ingredients: Gold Medal Flour
Our baking journey begins with Gold Medal Flour, the trusted sponsor of our Virtual Bake Day. For this recipe, I utilized their reliable all-purpose flour, known for its consistent quality and versatility in all kinds of baking. Using a good quality flour ensures a tender crumb and a structure that holds up beautifully to the rich flavors and fillings.

The Delightful “Surprise Inside”
To truly elevate these cupcakes, consider adding a peanut butter chocolate “surprise inside.” This involves unwrapping about 24 mini Reese’s peanut butter cups. While mini is my preferred size, you could certainly use full-sized cups for an even larger surprise. If you prefer a simpler cupcake, you can omit this step, but I wholeheartedly recommend including these little gems – they add an incredible burst of flavor and a delightful textural contrast that makes each bite exciting.
Next, prepare your chocolate cake batter. For an extra rich and deep chocolate flavor, I opted for dark chocolate cocoa powder, which truly makes a difference. The batter should be smooth and luscious, ready to cradle our special peanut butter surprise.

Assembling and Baking Your Cupcakes
For the optimal “surprise inside” experience, place the mini Reese’s peanut butter cups directly on top of the cupcake batter, rather than at the bottom of the liner. This adjustment helps prevent the bottoms of the peanut butter cups from potentially burning and ensures they melt perfectly into the center of the cupcake. I find using an ice cream scoop to fill cupcake liners provides a consistent amount of batter. Simply adjust the amount of batter slightly to accommodate the Reese’s cup. This method ensures each cupcake bakes evenly and delivers that delightful molten center. Bake until a toothpick inserted comes out clean, signaling a perfectly cooked cupcake.

Crafting the Fluffy Peanut Butter Frosting
While your cupcakes are baking and cooling, it’s time to whip up the star topping: an incredibly easy and utterly delicious peanut butter frosting. This frosting is the perfect complement to the rich chocolate, balancing the flavors with its creamy, nutty sweetness. Once the cupcakes have cooled completely to room temperature – a crucial step to prevent melting – generously apply the frosting. You can use a simple knife for a rustic look or a piping bag with a decorative tip (like Wilton Tip 1M for those beautiful swirls) to create an elegant finish. Either way, the flavor will be divine!

Dive In: The Moment of Truth!
With frosting meticulously applied, the only thing left to do is dive in! Take that first glorious bite and discover the little “surprise” tucked inside. That molten peanut butter cup, combined with the moist chocolate cake and creamy frosting, is what we call a true winner. It’s a symphony of textures and flavors that will undoubtedly bring a smile to your face.

Timeless Frosting Technique
Some might say the swirly frosting technique is going out of style, but I wholeheartedly disagree! It’s incredibly easy to achieve, makes cupcakes look professionally delightful, and adds an appealing visual element to your baked creations. So, I’m sticking with it – and I encourage you to embrace it too!

Indeed, this recipe presents peanut butter and chocolate at their finest – a perfect marriage of flavors and textures.

Here’s another tantalizing close-up, showcasing the delicious Reese’s surprise nestled within the cupcake, ready to melt in your mouth.

Customizing Your Cupcakes: Simple or Drizzled
You can choose to present your chocolate peanut butter cupcakes simply, just as I did, allowing the rich frosting and cake to speak for themselves. Their inherent deliciousness needs no embellishment.

Alternatively, for an extra touch of elegance and chocolatey goodness, drizzle them with a bit of melted chocolate. While this was my initial plan, I personally found the clean, simple look equally appealing. Ultimately, whether plain or adorned with chocolate, these cupcakes are guaranteed to be a delightful success!
These cupcakes are undoubtedly a wonderful dessert, a genuine hit among friends, and a joyous contribution to any festive occasion. - 1 1/2 cups all-purpose flour (I used Gold Medal)
- 1/2 cup unsweetened cocoa powder (I used dark chocolate cocoa powder)
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1/2 cup buttermilk
- 1/2 cup coffee, lukewarm (you can use decaf coffee if desired!)
- 24 mini peanut butter cups, unwrapped (I used Reese’s)
- (optional: melted chocolate for drizzling)
Peanut Butter Frosting Ingredients:
- 2 cups creamy peanut butter
- 1/2 cup (1 stick) butter, at room temperature
- 2 tsp. vanilla extract, store-bought or homemade
- 2 cups powdered sugar
- 1/4 tsp. salt
- 1/4 cup heavy cream
Instructions
To Make The Chocolate Peanut Butter Cupcakes:
- Prepare 24 baking cups with paper baking liners. Set aside.
- In the bowl of a stand mixer, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Add in vanilla extract.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt until combined. Then, in an additional separate bowl, stir together buttermilk and coffee. Add the dry ingredients to the creamed butter mixture alternately with the buttermilk and coffee, beating well after each addition until just combined. Be careful not to overmix.
- Fill baking cups until they are about two-thirds full with batter. Then, gently nestle a mini peanut butter cup on top of the batter in each liner. Bake at 375°F (190°C) for 15-20 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes in the muffin tins before removing to wire racks to cool completely.
- Top with peanut butter frosting once completely cooled. (Optional: Then drizzle with melted chocolate for an extra touch.)
To Make The Peanut Butter Frosting:
- Using an electric mixer, beat creamy peanut butter, softened butter, and vanilla extract together on medium speed until well combined and smooth.
- Add the powdered sugar and salt, beating on low speed until incorporated. Then increase to medium-high speed and beat for an additional minute until the frosting is smooth and fluffy.
