The Jammy Tomato Pasta We’ve Been Making On Repeat!

This is my go-to pasta for summer. Bright lemon, fragrant garlic-infused olive oil, and sweet cherry tomatoes reduced until jammy create a sauce that tastes fresh and vibrant. It’s light, satisfying, and perfectly seasonal.
The sauce comes together quickly in a single skillet while the pasta cooks, so this is an ideal 20-minute weeknight dinner. It’s one of those recipes that feels special without requiring much effort. The tomatoes cook down to a glossy, flavorful base that clings to the pasta, especially when you finish it with a bit of reserved starchy pasta water and freshly grated Parmesan.
For families, reduce the crushed red pepper if needed; for lovers of heat, add a little more to taste. I usually finish with a generous dusting of Parmesan and some chopped fresh basil or extra cracked black pepper. The final lemon zest and juice are stirred in off the heat so the citrus stays bright and fresh instead of becoming muted by cooking.
If you have a basket of cherry tomatoes and a lemon, you can make this. It’s simple, fast, and delicious—perfect for busy nights or casual summer dinners with friends and family.

Recipe Tips
Here are a few practical tips to make this lemony cherry tomato pasta turn out exceptionally well:
- Salt the pasta water generously. The water seasons the pasta and becomes part of the sauce, so it should taste well seasoned.
- Cook the pasta slightly under al dente. It finishes cooking in the skillet with the sauce, which allows the flavors to meld and the texture to be perfect.
- Reserve pasta water. Starchy pasta water helps turn the tomato mixture into a glossy, clingy sauce. Set aside at least 3/4 cup, or up to 1 cup to be safe.
- Add lemon off the heat. Stirring in lemon zest and juice just after removing the pan from heat keeps the citrus bright.
- Taste and adjust at the end. Add salt, pepper, or red pepper flakes after tossing so you can judge the final seasoning accurately.
- Serve immediately. The pasta is best hot and glossy, right out of the skillet.

Variations You Can Try
This dish is very adaptable. Try one of these ideas to change the flavor or add protein and texture:
- Add burrata. A ball of burrata on top melts into the warm pasta, creating a rich, creamy finish.
- Stir in greens. Baby spinach or arugula wilted into the pasta adds color and nutrients.
- Add shrimp. Sear shrimp separately or tuck them into the sauce near the end until just cooked through for a seafood option.
- Make it creamy. A splash of heavy cream or half-and-half before tossing the pasta makes the sauce richer.
- Introduce briny elements. Capers or chopped olives provide a salty, acidic contrast that pairs nicely with lemon.
- Use fresh herbs. Basil, parsley, oregano, or thyme brighten the dish—add them at the end.
- Add crunch. Toasted pine nuts or breadcrumbs add a pleasant texture contrast with the lemon and tomatoes.

FAQ
Yes. Wide ribbons like pappardelle catch the sauce beautifully, but spaghetti, linguine, bucatini, rigatoni, fusilli, or farfalle will all work. Use 8 ounces of your preferred pasta.
Absolutely. Grape tomatoes are a great substitute—halve them and cook until they soften and release their juices.
Keep leftovers in an airtight container in the refrigerator for up to three days. Reheat gently on the stovetop or in the microwave with a splash of water to revive the sauce.

Lemony Cherry Tomato Pasta

Ingredients
- 8 ounces uncooked pasta (pappardelle recommended)
- 2 tablespoons olive oil
- 4 large cloves garlic, pressed or finely minced
- 1 tablespoon tomato paste
- 1/4 teaspoon crushed red pepper flakes (adjust to taste)
- 1 pound (450 g) cherry tomatoes, halved
- 1 teaspoon fine sea salt, plus more to taste
- Freshly cracked black pepper
- 2 tablespoons lemon juice and zest of 1 lemon
- Optional garnishes: chopped fresh basil, freshly grated Parmesan, extra black pepper
Instructions
- Prep the pasta water. Bring a large pot of generously salted water to a boil.
- Sauté the aromatics. While the water heats, warm the olive oil in a large skillet over medium heat. Add the garlic, tomato paste, and crushed red pepper flakes. Cook for about 2 minutes, stirring frequently, until fragrant.
- Cook the pasta and start the sauce. Add the halved cherry tomatoes, the teaspoon of salt, and a few twists of black pepper to the skillet. Stir briefly to combine. At the same time, add the pasta to the boiling water and cook until just shy of al dente. Cook the tomato mixture for 8 to 10 minutes, stirring every few minutes, until the tomatoes soften and begin to break down. Reserve about 3/4 cup of the starchy pasta water before draining the pasta.
- Toss the pasta. Add the drained pasta to the skillet with the tomatoes and a few splashes of the reserved pasta water. Toss until the pasta becomes glossy and is evenly coated, adding more pasta water if needed so the sauce clings lightly to the noodles.
- Finish and serve. Remove the skillet from the heat and stir in the lemon zest and juice. Taste and adjust seasoning with additional salt, black pepper, or red pepper flakes if desired. Serve warm, topped with chopped basil and freshly grated Parmesan if you like. Enjoy!
