Yet, the true star of our post-vacay recovery turned out to be this impromptu soup I whipped up using our leftover greens and various vegetables.   • 2 teaspoons ground cumin
  • 12 teaspoons sea salt (or to taste)
  • pinch of crushed red pepper flakes and freshly-cracked black pepper
  • 6 cups (about 5 ounces) baby spinach
  • zest and juice of 1 lemon (yielding about 2 tablespoons juice)
  • Optional Toppings: sliced avocado, chopped fresh cilantro, and/or toasted seeds (such as pepitas, sunflower seeds, or even chopped walnuts)

Instructions

  1. Sauté Aromatics: Heat the olive oil in a large stockpot or Dutch oven over medium-high heat. Add the diced onion and sauté for about 5 minutes, stirring occasionally, until it becomes softened and translucent. Stir in the minced garlic and continue to sauté for an additional 1-2 minutes, stirring frequently, until it becomes fragrant. Be careful not to burn the garlic.
  2. Simmer Vegetables: Pour in the vegetable stock, then add the chopped broccoli, cauliflower, rinsed white beans, ground cumin, 1 teaspoon of sea salt, crushed red pepper flakes, and freshly-cracked black pepper. Once simmering, reduce the heat to medium-low, cover the pot, and continue to cook for 5-8 minutes, or until the broccoli and cauliflower florets are tender when pierced with a fork. Alternatively, if you don’t have an immersion blender, transfer the soup in batches to a traditional blender (filling only halfway to prevent splashing) and blend until smooth. Return the pureed soup to the pot.
