Homemade Crispy Fried Shallots

Homemade Crispy Fried Shallots is a sides recipe on Avoteb. Plan on 15 minutes from start to plate. The amounts and the method are both on this page.

Ingredients

  • 3 to 4 large shallots
  • 1/4 cup olive oil
  • fine or flaky sea salt

Method

  1. Prep the shallots. Peel and slice the shallots thinly into rings or half-moons (about 1/16-inch thick). It's easiest to do this evenly with a mandoline, but you can also just use a sharp knife.

  2. Fry. Tip in the sliced shallots and oil to a small saucepan or skillet (starting in cold oil helps them cook evenly). Warm over medium and cook for about 8-12 minutes, stirring often, until the shallots slowly turn golden brown. Watch closely near the end, as they can burn quickly once they've begun to brown.

  3. Tip off. Take a slotted spoon to move the shallots to a paper towel-lined plate. Spread them out and sprinkle with salt. They will continue to crisp as they cool.

  4. Plate Plate while it is hot or store in an airtight container at room temperature for up to 1 week.
