Homemade Chicken and Asparagus Stir-Fry is a chicken recipe on Avoteb. The yield on the card is 2. Plan on 15 minutes from start to plate. The amounts and the method are both on this page.

Ingredients

Yield: 2 servings

  • 1 Tbsp. soy sauce
  • 1 Tbsp. honey
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces (about 1-inch)
  • 1 Tbsp. olive oil
  • 1 bunch asparagus, cut into bite-sized pieces
  • 4 cloves garlic, thinly sliced
  • 2 scallions, chopped
  • 2 tsp. toasted sesame oil
  • (optional) 1 tsp. toasted sesame seeds

Method

  1. In a small bowl or in a ziplock bag, combine soy sauce and honey. Tip in chicken, and stir to coat. Set in the refrigerator until ready.

  2. While that cooks, heat oil in a wide skillet over medium-a hot burner. Tip in asparagus, and saute until cooked, about 5 minutes. Lift the asparagus with a slotted spoon, and keep nearby.

  3. Lift chicken from marinade, and add to skillet. Cook until nearly cooked through (with the insides still slightly pink), about 5 minutes. Then add garlic, scallions, and the reserved marinade to the pan. Cook for an additional 2 minutes until the chicken is cooked and the garlic is fragrant. Lift from heat and mix in the cooked asparagus and sesame oil until combined. Plate while it is hot with rice, garnished with toasted sesame seeds if desired.
