Robust Mexican Beef and Vegetable Soup

This Mexican Vegetable Beef Soup recipe is a culinary masterpiece, brimming with succulent steak, tender potatoes, and a medley of garden-fresh vegetables. All brought together in a deeply comforting and vibrantly spiced tomato-chile broth. Whether you prefer the classic stovetop method, the lightning-fast Instant Pot, or the convenient Crock-Pot, detailed instructions are provided below to help you create this hearty and wholesome meal.

There’s nothing quite like a steaming bowl of soup to chase away the chill, especially when the weather outside turns brisk. Here in beautiful Barcelona, where the Mediterranean climate usually graces us with mild winters, even a slight dip in temperature can feel surprisingly “cold” to those of us accustomed to different climates. While it might not compare to the snowy forecasts back home in Kansas City, the crisp mornings and cool evenings have certainly prompted us Midwesterners to seek out extra layers of warmth.

Our daily routines now involve miles of walking, a stark contrast to the car-centric life we once knew, complete with its cozy heaters and the welcoming glow of a fireplace. In our charming, yet sometimes perplexing, 200-year-old building, we’ve also embarked on an ongoing adventure to master the heater and hot water system – which, to our amusement (and occasional frustration), seems to operate on its own unpredictable schedule. A hot shower can turn into a refreshing, albeit unwelcome, cold rinse at a moment’s notice!

So, it’s safe to say, our winter survival strategy has revolved around a delightful combination of extra snuggly blankets, endless mugs of hot cinnamon tea, and heartwarming cuddles with our furry companions around the (Netflix-simulated) fireplace. Most importantly, our kitchen has become a haven for creating an astonishing array of our favorite warming soups. This year, a new contender has emerged, stealing our hearts and warming us from the inside out:

This truly unbelievable Mexican interpretation of the beloved classic vegetable beef soup has quickly become a household staple.

For years, traditional Vegetable Beef Soup held a special place in our family’s heart, a cherished winter comfort food that I still crave every time the mercury begins to fall. The simple yet profound flavors of tender beef, hearty vegetables, and a savory broth always hit just right. However, this year, after discovering an undeniable love for vibrant Mexican flavors – particularly after experiencing the incredible depth of this Carnitas Soup – I was inspired to infuse our classic with a distinctive Mexican spirit. The idea was simple yet exciting: what if we took all the elements we adore in a traditional vegetable beef soup and gave them a flavorful Mexican Barbacoa Beef-inspired twist?

Imagine tender, fall-apart steak, comforting potatoes, and crisp vegetables, all swimming in a rich, tomato-infused broth. Now, elevate that with the warm, earthy notes of mild chiles, aromatic cumin, and fresh cilantro. And, as a crowning glory, a generous topping of creamy, fresh avocado. The thought alone was enough to make my stomach rumble. Sí, por favor!

The result, I’m thrilled to report, was everything I had envisioned and more. The broth, a foundational element, received a significant flavor boost from my favorite dried pasilla chiles. These mild, smoky chiles provide a wonderful depth without overpowering the other ingredients. Alternatively, dried guajillo chiles would offer a similar, slightly fruitier profile, or for a quick and convenient smoky heat, canned chipotles in adobo sauce are an excellent choice (affiliate links). What truly made this broth irresistible, however, was the inclusion of fire-roasted tomatoes and sweet roasted red peppers. These ingredients lend a natural sweetness and char that perfectly complement the earthy chiles, creating a complex and utterly delicious base for our Mexican vegetable beef soup. While I haven’t yet managed to track down diced green chiles here in Spain, I can only imagine the additional layer of zesty flavor they would bring to this already fantastic recipe – perhaps a quest for another day!

For the vegetables, I opted for the timeless combination of tomatoes, carrots, onion, and potatoes, keeping the dish grounded in its classic roots. This quartet ensures a balanced texture and flavor that everyone loves. However, the beauty of this Mexican beef and vegetable soup lies in its adaptability. Feel free to incorporate any other leftover vegetables you have on hand – corn, bell peppers, zucchini, or even green beans would be delightful additions, making this soup truly your own. When it comes to the star protein, almost any lean cut of steak will perform wonderfully. Sirloin, round steak, or even chuck steak cut into bite-sized pieces will become incredibly tender as it simmers. If you prefer, ground beef can also be used for a slightly different, yet equally delicious, texture. This flexibility makes the recipe a convenient option for any pantry.

And now, for a game-changer that deserves a spotlight: the sheer ease of preparing this recipe in the Instant Pot (affiliate link). Seriously, if you’re looking for an ultra-simple, time-saving option this winter, the Instant Pot is your culinary hero. I’ve thoughtfully included comprehensive instructions for both the traditional stovetop and the set-it-and-forget-it slow cooker (affiliate link) methods further down. But let me tell you, the Instant Pot truly shines here. You simply toss all the ingredients into the pot, seal the lid, set the timer, and in less than an hour, you’ll have incredibly tender, fall-apart steak and perfectly cooked vegetables swimming in that rich, flavorful broth. It’s a marvel of modern cooking that continues to impress me; truly a game-changer in the kitchen, especially on busy weeknights when you crave a homemade, comforting meal without the long cooking times.

For those who appreciate the slower, more deliberate pace of cooking, the stovetop method allows flavors to meld beautifully over a gentle simmer, filling your home with an irresistible aroma. And the slow cooker? It’s the ultimate convenience champion, letting you prep in the morning and return to a ready-to-eat, deeply flavorful soup that has been simmering to perfection all day long. Each method yields a slightly different nuance in texture and depth, but all deliver an outstanding Mexican vegetable beef soup that will warm your soul.

Once your Mexican Vegetable Beef Soup has reached its peak of perfection, it’s time to ladle it into bowls, ready to be enjoyed.

Serve this hearty soup nice and warm, allowing its fragrant steam to entice everyone at the table. The finishing touches are key to elevating this dish from simply delicious to truly unforgettable. A generous sprinkle of fresh, vibrant cilantro adds a burst of herbaceousness and a beautiful pop of color. And, I absolutely insist, do not skip the diced avocado! Its creamy texture and mild flavor provide a perfect counterpoint to the rich, spicy broth, adding a luxuriousness that ties all the flavors together. For those who enjoy an extra kick, a squeeze of fresh lime juice, a dollop of sour cream or Mexican crema, or a few crumbled tortilla chips can further enhance the experience, adding brightness, tang, or a delightful crunch. Every spoonful is a journey of flavor, offering warmth, comfort, and a taste of vibrant Mexican cuisine.

Embrace the cozy, comforting, and warming power of winter soups! This Mexican Vegetable Beef Soup is more than just a meal; it’s an experience, a delightful fusion of classic comfort and bold, zesty flavors, perfect for sharing with loved ones. Enjoy, everyone, and savor every delicious bite!

Its unique Mexican-inspired seasoning sets it apart from traditional vegetable beef soups, offering a smoky, savory, and mildly spicy profile that’s utterly comforting. Ingredients

Scale

  • 1 tablespoon olive oil
  • 1 medium white onion, peeled and diced
  • 4 cloves garlic, peeled and minced
  • 4 cups beef stock
  • 2 (15-ounce) jars diced fire-roasted tomatoes
  • 1 (12-ounce) jar roasted red peppers, drained and chopped
  • 2 carrots, peeled and chopped
  • 1 pound Yukon gold potatoes, chopped
  • 1.5 pounds sirloin steak, cut into 1-inch pieces*
  • 2 dried pasilla chiles or dried guajillo chiles (or 1-2 chipotles in adobo sauce**, chopped)
  • 2 teaspoons ground cumin
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon freshly-cracked black pepper
  • optional toppings: diced avocado, chopped fresh cilantro, diced red onion, and/or crumbled tortilla chips

Instructions

On The Stovetop:

  1. In a large stockpot, heat the olive oil over medium-high heat. Add the diced white onion and sauté for approximately 5 minutes, stirring occasionally, until it has softened and become translucent. Introduce the minced garlic and continue to sauté for another 1-2 minutes until it becomes fragrant, ensuring not to burn it.
  2. Pour in the beef stock, diced fire-roasted tomatoes, chopped roasted red peppers, carrots, potatoes, and the cubed sirloin steak. Add the dried chiles (or chopped chipotles in adobo, if using), ground cumin, Kosher salt, and freshly-cracked black pepper. Stir all the ingredients thoroughly to combine. Bring the soup to a gentle simmer. Once simmering, reduce the heat to medium-low, cover the pot, and continue to simmer for 20 minutes, or until the potatoes are fork-tender and the steak is perfectly tender.
  3. Carefully remove and discard the dried chiles from the pot (if you used chipotles in adobo, leave them in as they add essential flavor). Taste the soup and adjust the seasoning as needed, adding more salt, pepper, or cumin to suit your preference.
  4. Ladle the warm, flavorful Mexican Vegetable Beef Soup into bowls and serve immediately, garnished with your desired toppings.

In The Instant Pot (Pressure Cooker):

  1. Add all the soup ingredients* to the inner pot of your Instant Pot. Give them a brief stir to ensure everything is well combined. Securely close the lid and set the vent to the “Sealing” position. Press the “Manual” (or “Pressure Cook”) button, then press “Pressure” until the “High Pressure” light illuminates. Adjust the +/- buttons to set the cooking time to 40 minutes. Once the cooking cycle is complete, carefully and quickly turn the vent to “Venting” for a quick release, and wait until all the steam has fully released and the float valve has dropped before opening the lid.
  2. Remove and discard the dried chiles (if using; leave chipotles in). Taste the soup and adjust seasonings with additional salt, pepper, or cumin if desired.
  3. Serve the hot soup, beautifully garnished with your chosen toppings.

In The Crock-Pot (Slow Cooker):

  1. Combine all soup ingredients* into the bowl of a large slow cooker. Stir everything gently to mix. Cover and cook on high for 4 hours, or on low for 8 hours, until the steak is incredibly tender and the vegetables are soft.
  2. Carefully remove and discard the dried chiles (if using; chipotles should remain in the soup). Taste and season the soup with extra salt, pepper, or cumin as needed to perfect the flavor profile.
  3. Serve this comforting soup warm, topped with your favorite garnishes.

Notes

*When preparing this rich Mexican Vegetable Beef Soup in either the slow cooker or Instant Pot, you have the option to cook larger pieces of steak, or even a whole steak cut, to ensure maximum tenderness. Once the soup has finished cooking, you can then easily remove the steak, shred it into bite-sized pieces, and return it to the pot. This method often results in even more succulent meat. Additionally, feel free to use your preferred cut of lean steak for this recipe; sirloin is recommended for its balance of flavor and tenderness, but other cuts like chuck or round steak work wonderfully too, becoming incredibly tender through slow cooking.

**If you choose to use chipotles in adobo sauce for a smoky and slightly spicier kick, we recommend starting with just one chipotle. Chipotles can vary in heat and intensity, so it’s best to gauge the flavor as you go. After the soup has completed its cooking process, taste it and, if you desire a more pronounced smoky or chile flavor, you can always chop and stir in an additional chipotle or two. This allows you to perfectly customize the heat level to your liking.

Please note that the cooking time listed above in the recipe card is specifically for the stovetop method. Instant Pot and slow cooker times are detailed within their respective instruction sections.
