  • 5 cloves fresh garlic, peeled and thinly sliced or minced
  • 2 cups (approximately 10 ounces) vibrant cherry or grape tomatoes, halved
  • 1/2 cup dry white wine (such as Pinot Grigio or Sauvignon Blanc)
  • 3 large handfuls (about 5-6 ounces) fresh baby spinach leaves
  • Optional toppings for serving: 1/4 cup toasted pine nuts and/or freshly-grated Parmesan cheese


Instructions

  1. Bring a large stockpot of generously-salted water to a rolling boil. Add the whole-wheat pasta and cook according to package instructions until it reaches a perfect al dente texture. Drain the pasta thoroughly once cooked, reserving about a half cup of the starchy pasta water for later use if needed.
  2. While the pasta water heats up, begin preparing your vegetables. Melt the butter in a large sauté pan or a deep skillet over medium-high heat. Once the butter is shimmering, add the sliced mushrooms and season them with a pinch of salt and pepper. Sauté for 4-5 minutes, stirring occasionally, until the mushrooms are beautifully browned around the edges and have released most of their moisture.
