Description

  • 1 small boneless skinless chicken breast*
  • Kosher salt and freshly-cracked black pepper
  • 2 slices of bread (sourdough recommended)
  • butter
  • 34 Arla NaturallyGood Fontina Cheese Slices
  • 2 tablespoons roughly-chopped sun-dried tomatoes
  • 1 handful fresh baby spinach**

Instructions

  1. Heat olive oil in a medium sauté pan over medium-high heat. As the oil heats, season the chicken breast generously with kosher salt and freshly-cracked black pepper on both sides. Carefully add the seasoned chicken to the hot pan and cook for 6-8 minutes, flipping once halfway through, until the chicken is thoroughly cooked, golden brown, and no longer pink inside. Remove the pan from heat, transfer the chicken to a cutting board, and allow it to rest for 5 minutes. Resting ensures juicy chicken. Then, slice it into thin strips, perfect for layering in your sandwich.
  2. While the chicken is resting, prepare your bread. Take one slice of bread and generously butter one side. Repeat with the second slice of bread. Even buttering is key for that perfectly golden, crispy crust.
  3. To assemble the sandwich, place one buttered slice of bread butter-side down on your clean prep surface. Layer it evenly with 1-2 Arla Fontina cheese slices. Next, arrange the thinly sliced cooked chicken, followed by the chopped sun-dried tomatoes, and finally, a fresh handful of baby spinach. Top with the remaining slice of bread, butter-side up.
