  • 1 jar of sundried tomatoes, drained (reserve 2 Tbsp. of the oil from the jar)
  • 1 bunch asparagus, tough ends trimmed and cut into 2″ pieces
  • 23 boneless, skinless chicken breasts, cooked and cut into bite-sized pieces (pre-cooked rotisserie chicken is a great shortcut!)
  • 1/2 cup basil pesto, homemade or your favorite store-bought brand
  • 23 cups fresh baby arugula
  • Freshly-grated or shaved Parmesan cheese, for serving

Instructions

  1. Cook the Pasta: Begin by filling a large pot about three-fourths full of generously-salted water. Bring this to a rolling boil over high heat. Once boiling, add your chosen pasta, ensuring it’s fully submerged. Cook the pasta according to the package directions until it reaches a perfect al dente texture – firm to the bite but not hard. This usually takes about 8-12 minutes depending on the pasta shape. While the pasta cooks, proceed to the next step.
  2. Sauté Asparagus and Sun-Dried Tomatoes: In a large skillet, heat 2 tablespoons of the reserved oil from the sun-dried tomato jar (or use regular olive oil if you prefer) over medium heat. Once the oil shimmers, add the cut asparagus pieces and sprinkle them with a good pinch of freshly-ground black pepper. Sauté for about 2 minutes, allowing the asparagus to become tender-crisp and vibrant green. Next, add the drained sun-dried tomatoes to the skillet and continue cooking for another 4-5 minutes, stirring occasionally, until the asparagus is cooked to your desired tenderness and the tomatoes are slightly warmed and fragrant. Remove the skillet from the heat.
  3. Combine All Ingredients: Once the pasta is al dente, carefully drain the excess water from the pot, reserving about half a cup of pasta water if you like for thinning the sauce later. Return the drained pasta to the pot. Immediately add the sautéed asparagus and sun-dried tomatoes mixture, the flavorful basil pesto, the cooked and bite-sized chicken pieces, and the fresh baby arugula. Using tongs or a large spoon, gently toss all the ingredients together until the pasta is evenly coated with the pesto and all components are well-combined. The residual heat from the pasta will slightly wilt the arugula, releasing its peppery notes and integrating it beautifully into the dish.
