Description

These butternut squash and mushroom tacos are made with simple ingredients, and full of the most delicious flavor! A perfect healthy, gluten-free, and vegetarian weeknight meal.

Taco Ingredients:

  • 2 tablespoons olive oil, divided
  • 2 cups finely diced butternut squash (about 1/2 of a large butternut squash that has been peeled and seeded)
  • 8 ounces baby bella or button mushrooms, finely diced
  • 1 serrano pepper, stem removed and thinly sliced (*I recommend using a seeded jalapeno instead, if you prefer less heat)
  • 3 cloves garlic, peeled and thinly sliced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly-ground black pepper
  • 1/8 teaspoon ground cumin
  • corn tortillas (for a gluten-free option)
  • for serving: chopped fresh cilantro, diced white onions, lime wedges, crumbled cotija cheese

Chipotle Lime Crema Ingredients:

  • 1/2 cup Greek yogurt or sour cream
  • 1 chipotle chile in adobo sauce
  • 1 clove garlic
  • 1 tablespoon lime juice
  • pinch of salt

Instructions

To Make The Tacos:

  1. Heat 1 tablespoon olive oil in a large saute pan over medium-high heat.  Add the finely diced butternut squash and saute for 6-8 minutes or until it becomes tender and slightly caramelized, stirring occasionally to ensure even cooking.  Carefully transfer the cooked squash to a separate plate using a slotted spoon, and set it aside.
  2. Add the remaining 1 tablespoon olive oil to the same saute pan. Add the diced mushrooms and thinly sliced serrano pepper (or jalapeno for less heat). Saute for 4-5 minutes, stirring frequently, until the mushrooms have softened and released their moisture.  Next, add the sliced garlic and continue to saute for an additional 2 minutes, stirring constantly to prevent burning and to infuse the flavors.  Return the cooked butternut squash to the pan with the mushrooms. Season the mixture generously with sea salt, freshly-ground black pepper, and ground cumin to taste. Stir everything together until well combined and heated through.  Remove the pan from the heat and set the filling aside.
  3. If desired, warm the corn tortillas for a few seconds each in a dry skillet over medium heat until they are soft and pliable. To assemble the tacos, layer two corn tortillas together (for extra stability), then generously top with some of the butternut and mushroom mixture. Finish with a sprinkle of fresh chopped cilantro, diced white onions, and a squeeze of fresh lime juice, if desired. Drizzle liberally with the prepared chipotle lime crema before serving.

To Make The Crema:

  1. For the quickest method, combine all crema ingredients (Greek yogurt or sour cream, chipotle chile in adobo sauce, garlic clove, and lime juice, plus a pinch of salt) in a food processor or small blender. Pulse until all ingredients are thoroughly combined and the mixture is smooth and creamy.
  2. Alternatively, if you don’t have a food processor, finely chop the chipotle chile in adobo sauce and mince the garlic clove. In a small bowl, combine the finely chopped chipotle and garlic with the Greek yogurt or sour cream, lime juice, and a pinch of salt. Stir vigorously until all ingredients are well incorporated and the crema is smooth.
