Ironically, this particular recipe came into existence out of necessity. Our charming, half-sized Spanish fridge has approximately zero free space. When we had a batch of leftover soup last week that desperately needed a home, the large bunch of kale occupying half a shelf simply had to go. Thus, this delicious pasta dish was conceived.

- Half a medium red onion, thinly sliced
- 5 garlic cloves, peeled and thinly sliced
- 2 cups roughly-chopped kale leaves, tough stems removed
- 1/4 cup dry white wine (or chicken or vegetable stock)
- 2 tablespoons white balsamic vinegar (or traditional balsamic vinegar*)
- 1/2 cup toasted pine nuts
- Toppings: lots and lots of freshly-grated Parmesan cheese, chopped fresh basil (optional), diced cooked bacon (optional)
Instructions
- Cook pasta al dente according to package directions in a large stockpot of generously-salted water. Once cooked, drain the pasta thoroughly and set it aside.
- Meanwhile, melt 2 tablespoons of butter (or olive oil for a dairy-free option) in a large sauté pan over medium-high heat. Add the sweet potato cubes and season generously with a pinch of salt and black pepper. Sauté for 7-9 minutes, stirring and flipping occasionally, until the sweet potatoes are tender on the inside and beautifully caramelized and golden-brown on the outside. Transfer the cooked sweet potatoes to a separate plate and set aside.
- Add the remaining 2 tablespoons of butter (or olive oil) to the same sauté pan. Add the thinly sliced red onion and garlic, and sauté for about 2 minutes, stirring occasionally, until they become fragrant and slightly softened. Stir in the chopped kale, dry white wine (or stock), and balsamic vinegar. Continue to sauté for an additional 3 minutes, stirring occasionally, until the kale has wilted and the liquid has slightly reduced. Remove the pan from the heat and set aside.
- Once the pasta is ready and drained, return it to the large stockpot. Add the caramelized sweet potatoes, the kale mixture from the sauté pan, and the toasted pine nuts to the pasta. Toss everything together thoroughly until all the ingredients are well combined and coated in the flavorful sauce. Serve the pasta warm, garnished with a generous amount of freshly-grated Parmesan cheese and any other desired toppings, such as fresh basil or crispy bacon.
