The Ultimate Guide to Homemade Condensed Cream of Mushroom Soup

Following up on our popular homemade condensed cream of chicken soup recipe, it’s time to shine the spotlight on its equally beloved and versatile counterpart: the rich and flavorful homemade condensed cream of mushroom soup. This recipe promises to transform your cooking, offering a healthier, tastier, and preservative-free alternative to the store-bought canned version.

Growing up, my relationship with mushrooms was, to put it mildly, complicated. I distinctly remember my aversion to these earthy fungi. Mom, bless her heart, would often try to sneak cream of mushroom soup into family casseroles, only to find me diligently picking out every single mushroom piece. My plate became a battlefield, and mushrooms were the enemy. It seemed we were destined never to be friends.

However, life has a funny way of challenging our perceptions, especially when it comes to food. In my early twenties, a friend introduced me to her incredible portobello fajitas. Skeptical but swayed by my unwavering love for Mexican cuisine, I gave them a try. And just like that, my long-held anti-mushroom stance crumbled. The savory, meaty texture and deep umami flavor of the portobellos opened my eyes – and my palate – to a whole new world. Since that day, mushrooms have become a cherished ingredient in my kitchen, a testament to how tastes can evolve and delightful culinary discoveries can be made.

So, here it is, a public declaration to the culinary universe:

Mom, you were absolutely right.

To atone for all those years I turned up my nose at cream of mushroom soup, I proudly present this homemade version. It’s not just a recipe; it’s a culinary redemption. And I can confidently say, it’s pretty darn good. In fact, many would argue it’s far superior to anything you’ll find in a can.

Crafting Your Own: A Simple Step-by-Step Guide

Ready to ditch the can opener? Here’s how you can easily make your own batch of delicious condensed cream of mushroom soup:

Fresh mushrooms are key for the best homemade cream of mushroom soup. Explore different varieties like baby bella or white button.

The Heart of the Soup: Fresh Mushrooms

Our journey begins with the star ingredient: fresh mushrooms! The quality of your mushrooms will significantly impact the final flavor, so opt for fresh, firm varieties. The great news is that this recipe is incredibly flexible when it comes to mushroom choice. While I often use a delightful mix of baby bella (cremini) and classic white button mushrooms for their balanced flavor and texture, feel free to experiment with your favorites. Shiitake or oyster mushrooms can add an even deeper umami note, while a combination can create a more complex profile. Simply ensure they are finely chopped to integrate smoothly into the condensed soup base.

Preparing the creamy base for homemade condensed mushroom soup. Whisking milk and flour into boiling vegetable stock for thickening.

Building the Velvety Base

First, bring a generous amount of vegetable stock to a gentle boil in a saucepan over medium-high heat. You can use homemade stock for an extra layer of flavor, or a good quality store-bought version for convenience. While the stock heats, whisk together your choice of milk and all-purpose flour in a separate bowl until the flour is completely dissolved and no lumps remain. This mixture is crucial for thickening the soup to its condensed consistency. Once the stock is boiling, slowly pour in the milk and flour mixture, whisking constantly. You’ll notice the soup starting to thicken almost immediately. Keep whisking to ensure a smooth, lump-free base.

*A note on dietary flexibility: Feel free to use your preferred type of milk in this recipe. Whole milk, 2%, or even unsweetened almond or soy milk can work beautifully. For those with gluten sensitivities, a high-quality gluten-free all-purpose flour blend can be substituted with excellent results. Always check the blend’s instructions, as some may require slight adjustments to liquid ratios.

Finely chopped mushrooms and seasonings simmering in homemade cream of mushroom soup base. Stir constantly to prevent burning.

Simmer to Perfection

Once your base has thickened, it’s time to incorporate the finely chopped mushrooms and your chosen seasonings. Reduce the heat to medium-low and allow the mixture to simmer for a few minutes. This gentle simmering period is essential for cooking the mushrooms until they are tender and for fully cooking out the raw flour taste. The key here is constant stirring. Keep a close eye on the bottom of the pan and stir continuously to prevent the soup from sticking or burning, which could impart an undesirable flavor. After about 3-5 minutes, your soup should be perfectly thickened and ready.

And just like that, you’re done!

Homemade condensed cream of mushroom soup is ready to use in recipes or store for up to one week in the refrigerator.

Using and Storing Your Homemade Condensed Soup

Yes, it really is that easy to make your own condensed cream of mushroom soup! You have two immediate options: either use this freshly made condensed soup right away in your favorite recipe, or prepare it for storage. To store, simply transfer the cooled soup into a clean jar or an airtight container. It will keep beautifully in the refrigerator for up to one week. Please note that for this particular recipe, we do not recommend canning or freezing. The texture and consistency may change upon thawing or after the canning process, making it less ideal for its intended use as a condensed soup base. This recipe is designed for fresh use or short-term refrigeration.

It’s crucial to remember that this is a condensed soup, meaning it is highly concentrated and not intended to be eaten plain. Its rich, thick consistency is specifically formulated to be an ingredient in other dishes. Think of it as a powerful flavor enhancer and thickener. Add it to a classic green bean casserole for an unforgettable side dish. Incorporate it into a creamy sauce for scalloped potatoes. Or, if you desire a simple, comforting bowl of soup, simply whisk equal parts of this condensed soup with milk (or vegetable stock) and heat gently until warmed through. The possibilities are endless!

Say goodbye to canned soup! Homemade condensed cream of mushroom soup offers superior flavor and natural ingredients.
