Description

These Nutella Cupcakes are made with delicious chocolate cupcakes, generously filled with creamy Nutella, and crowned with a simple yet irresistible Nutella frosting. A must-try for any chocolate hazelnut lover!


Ingredients

Cupcake Ingredients:

  • 1/2 cup (1 stick) unsalted butter, softened to room temperature
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 2 tsp. vanilla extract, store-bought or homemade
  • 1 1/2 cups all-purpose flour
  • 1/2 cup dark chocolate cocoa powder (or any unsweetened cocoa powder)
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 cup buttermilk
  • 1/2 cup freshly brewed coffee, lukewarm (decaf can be used if preferred)
  • 1 (13-ounce) jar Nutella, for filling the cupcakes (you may not use the entire jar for filling)
  • Nutella frosting (ingredients and instructions below)
  • Coarse sea salt, for sprinkling (optional garnish)

Nutella Frosting Ingredients:

  • 1 cup (2 sticks) unsalted butter, at room temperature
  • 1 cup Nutella
  • 2 tsp. vanilla extract
  • 4 cups powdered sugar, sifted
  • Pinch of kosher salt
  • 2-3 Tbsp. milk (or heavy cream), as needed


Instructions

To Make The Cupcakes:

  1. In the bowl of an electric stand mixer fitted with the paddle attachment, cream together the softened butter and granulated sugar on medium speed until the mixture is light and fluffy, about 3-5 minutes. Add the eggs one at a time, beating well after each addition to fully incorporate. Stir in the vanilla extract until just combined.
  2. In a separate medium bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt until thoroughly combined. In another small bowl, stir together the buttermilk and lukewarm coffee. Gradually add the dry ingredients to the creamed butter mixture alternately with the buttermilk and coffee mixture, beginning and ending with the dry ingredients. Beat on low speed until just combined after each addition, being careful not to overmix the batter. Overmixing can result in tough cupcakes.
  3. Preheat your oven to 375°F (190°C). Line two standard 12-cup muffin pans with about 20-24 paper baking cups. Fill each baking cup two-thirds full with the cupcake batter. For a detailed guide on filling cupcake liners evenly, you can refer to my tutorial here. Bake for 15-20 minutes, or until a wooden toothpick inserted into the center of a cupcake comes out clean. Let the cupcakes cool in the pans for about 10 minutes before carefully transferring them to a wire rack to cool completely to room temperature.
  4. Once the cupcakes are completely cooled, use a melon baller or a small spoon to carefully scoop out a small portion from the middle of each cupcake, creating a well about 1 teaspoon in size. Fill each empty space with approximately one teaspoon of Nutella. This creates a delightful hidden surprise! Then, top the filled cupcakes generously with the prepared Nutella frosting (instructions provided below).

To Make The Nutella Frosting:

  1. In the bowl of an electric mixer, cream together the room temperature unsalted butter and Nutella on medium speed until the mixture is smooth and well combined. This usually takes about 2-3 minutes. Add the vanilla extract and beat until smooth. Reduce the mixer speed to low and gradually add the sifted powdered sugar, one cup at a time, until fully incorporated. Add the milk (or heavy cream) one tablespoon at a time until you reach your desired frosting consistency** (see note below). Once the desired consistency is achieved, increase the mixer speed to medium-high and beat for one additional minute to make the frosting light and fluffy. Use immediately to pipe or spread onto the cooled cupcakes, or cover and refrigerate in a tightly-sealed container for future use. Bring to room temperature and re-whip before using if refrigerated.
  2. **Note on consistency: If your buttercream frosting appears too thick, add more milk or cream, a teaspoon at a time, until it reaches your desired spreadable or pipeable consistency. If the frosting is too thin, gradually add more powdered sugar, a tablespoon at a time, until it thickens to your preference.
