Our trip was filled with delightful discoveries: we stayed in a truly wonderful hotel, enjoyed leisurely strolls through diverse and vibrant neighborhoods, explored a fascinating museum, greeted nearly every animal at the renowned Henry Doorly Zoo and Aquarium, and hit the jackpot with an array of phenomenal restaurants and lively bars. It’s Monday morning, and I’m still savoring the memories – and the flavors – from a weekend packed with an abundance of incredible food.

- 2 cups cooked brown rice or farro (quinoa also works well)
- 2/3 cup dried cranberries or cherries (for a touch of sweetness and chewiness)
- 2/3 cup chopped toasted pecans (or walnuts, pepitas, or almonds for crunch)

Vinaigrette Ingredients:
- 3 tablespoons extra virgin olive oil

Instructions
To Make The Salad:

- In a large mixing bowl, combine the diced sweet potatoes with 1 tablespoon of olive oil. Toss thoroughly to ensure all pieces are lightly coated. Season with a pinch of salt and pepper.
- Spread the seasoned sweet potatoes out in a single, even layer on one half of the prepared baking sheet. This ensures they roast rather than steam, leading to delicious caramelization.
