The Heart of the Roll: Essential Ingredients

As mentioned, spring rolls are a canvas for your culinary creativity. However, for these Mango Avocado Spring Rolls, we focus on a harmonious blend of textures and tastes. Here are the key components we recommend:

Sweet Mango & Creamy Avocado

  • Mango: Choose ripe mangoes that yield slightly to gentle pressure. Their sweet, tropical notes provide a delightful contrast to the savory elements.
  • Avocado: Perfectly ripe avocados lend a creamy, rich texture that complements the crispness of the other fillings.

Crisp Vegetables for Crunch & Color

A good spring roll needs crunch! These vegetables not only add fantastic texture but also a vibrant spectrum of colors and essential nutrients.

  • Cabbage: Red cabbage adds a beautiful purple hue and a satisfying crispness.
  • Carrot: Thinly sliced or julienned carrots contribute a touch of sweetness and a lovely orange pop.
  • English Cucumber: Known for its mild flavor and minimal seeds, English cucumber provides a refreshing coolness.
  • Other great options: Bell peppers, lettuce leaves (like butter or romaine), bean sprouts, or even thinly sliced radishes can be excellent additions.

Aromatic Fresh Herbs

Herbs are non-negotiable for authentic, fresh spring rolls. They elevate the flavor profile significantly.

  • Mint: Fresh mint leaves bring a bright, cooling sensation that is quintessential to Vietnamese spring rolls.
  • Cilantro: Its fresh, citrusy notes add depth and complexity.
  • Optional: Thai Basil: If you can find it, Thai basil offers a slightly anise-like flavor that is truly remarkable in spring rolls.

Silky Vermicelli Noodles & Delicate Rice Paper Wrappers

  • Vermicelli Rice Noodles: These thin, delicate noodles add substance and a soft, chewy texture that perfectly balances the crisp vegetables. They are essential for a truly satisfying spring roll.
  • Spring Roll Wrappers (Rice Paper): These translucent, thin wrappers are the vessel for all your delicious fillings. They become pliable when rehydrated and offer a wonderfully delicate chew.

How to make spring rolls

Crafting Your Perfect Spring Rolls: A Step-by-Step Guide

Making spring rolls is a process that requires a little patience and a gentle hand, but it’s far from difficult. Think of it as a relaxing, meditative culinary art form. Put on your favorite playlist, perhaps pour yourself a glass of icy lemon water or a crisp sauvignon blanc, and immerse yourself in the rhythmic chopping and rolling. The reward, we promise, is absolutely worth it!

Preparation is Key (Mise en Place)

Before you even think about rolling, ensure all your ingredients are prepped and laid out like a colorful assembly line. This “mise en place” approach will make the rolling process seamless and enjoyable.

  1. Cook Vermicelli Rice Noodles: Follow the package instructions carefully until they are al dente. Immediately rinse them under cold water to stop the cooking process and chill them completely. Toss with a tiny drizzle of sesame oil to prevent sticking.
  2. Slice All Fillings: Thinly slice your mangoes, avocados, carrots, cucumbers, and cabbage. The thinner and more uniformly sliced, the easier they are to roll and the more visually appealing your rolls will be.
  3. Prepare Your Water Bath: Fill a large, shallow pan (a sauté pan or a pie dish works perfectly) with warm water. Keep a kettle of hot water nearby to replenish and re-warm the water as you go, ensuring your wrappers remain pliable.

Mastering the Rice Paper Wrapper

The rice paper wrapper is delicate, so handling it correctly is crucial.

  1. Soak a Single Wrapper: Gently submerge one spring roll wrapper into the warm water. Allow it to soak for approximately 20-30 seconds. You want it to be soft and pliable, but not overly limp or mushy, which can make it tear easily.
  2. Transfer to a Flat Surface: Carefully lift the softened wrapper and lay it flat on a clean, slightly damp tea towel or a plate. A tea towel often provides a better grip than a plate, making the rolling process easier for beginners.

Arranging Your Fillings

The arrangement of your fillings contributes to both the aesthetics and structural integrity of the roll.

  1. Layer the Ingredients: Arrange a small, short line of your desired fillings in the middle of the wrapper, leaving ample space on the sides for folding. Start with a bed of herbs, then add noodles, followed by your mango, avocado, and crisp veggies. After rolling one or two, you’ll get a feel for the optimal amount of filling for your specific wrapper size. Avoid overfilling, as this can lead to tears.

The Art of Rolling

This is where it all comes together! The goal is a tight, secure roll that won’t unravel.

  1. Fold Sides In: Fold the bottom edge of the wrapper up over your fillings.
  2. Tuck and Roll: Then, fold in the left and right sides of the wrapper towards the center, tucking them snugly against the fillings. Begin rolling the wrapper from the bottom, working your way up. As you roll, gently but firmly tuck the fillings inward to create a tight, compact cylinder. The tighter the roll, the less likely it is to fall apart when you eat it.

Serving Suggestions

Once your beautiful rolls are complete, it’s time to enjoy!

  1. Immediate Enjoyment: Serve your spring rolls immediately with the irresistible peanut dipping sauce. You can cut them in half diagonally for easier dipping and a lovely presentation, or serve them whole.
  2. Dipping Sauce Options: While the peanut sauce is a must, consider offering a side of traditional nuoc cham (Vietnamese dipping sauce) for an extra layer of flavor and choice.

Storage Tips

If by some miracle you have leftovers, here’s how to keep them fresh:

Store spring rolls in an airtight container in the refrigerator for up to 3 days. To prevent them from sticking to each other, you can either wrap each roll individually in plastic wrap or place them on a plate lined with a damp paper towel and cover tightly with plastic wrap.

The BEST Peanut Sauce recipe, served with Mango Avocado Spring Rolls

The Secret Weapon: Irresistible Peanut Dipping Sauce

No spring roll is complete without the perfect dipping sauce, and this peanut sauce recipe truly delivers. It’s creamy, savory, subtly sweet, and incredibly addictive – the ideal partner to our fresh mango and avocado rolls. The best part? It’s remarkably simple to make!

To create this magic, you’ll whisk together natural peanut butter, hoisin sauce (which adds a wonderful depth and sweetness that pairs exceptionally well with spring rolls), low-sodium soy sauce (or tamari for a gluten-free option), bright rice vinegar, and a touch of fragrant sesame oil. Finally, warm water helps achieve the desired consistency. For those who enjoy a little kick, a dash of chili garlic sauce or sriracha is highly recommended; adjust to your preferred level of spice. Feel free to add more or less warm water to thin the sauce to your liking – a slightly thinner consistency also makes it a fantastic salad dressing!

Description

These Mango Avocado Spring Rolls are filled with a rainbow of fresh and delicious ingredients, and served with the most irresistible peanut dipping sauce.

Ingredients

Spring Roll Ingredients:

  • 2 ounces rice stick (vermicelli) noodles
  • 2 mangoes, peeled, cored and thinly sliced
  • 2 avocados, peeled, pitted and thinly sliced
  • 2 carrots, thinly sliced
  • 1 English cucumber, thinly sliced
  • quarter of a small red cabbage, thinly sliced
  • 1 bunch fresh cilantro leaves
  • 1 bunch fresh mint leaves
  • 10-12 spring roll wrappers

Peanut Sauce Ingredients:

  • 1/3 cup natural peanut butter
  • 2 tablespoons hoisin sauce
  • 1 tablespoon low-sodium soy sauce (or tamari)
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon chili garlic sauce (or more, to taste)
  • 1/4 teaspoon sesame oil
  • 1/3 cup warm water

Instructions

  1. To Make The Peanut Sauce: Whisk all ingredients together in a small bowl until combined. If you would like a thinner sauce, whisk in more water.
  2. To Make The Spring Rolls: Cook thin rice vermicelli noodles according to package directions. Once they are al dente, transfer the noodles to a strainer and rinse with cold water until the noodles are completely chilled. Toss thoroughly with a drizzle of oil (sesame oil works great) to prevent the noodles from sticking together. Set aside.
  3. Fill a large shallow pan with warm water (a sauté pan or pie dish works great). Lay a spring roll wrapper in the hot water and let it rest there for about 20-30 seconds until soft, but not mushy. Transfer the spring roll wrapper to a plate (or a clean towel spread out on a flat surface, which will help the wrapper not to stick).
  4. Arrange your fillings in the center of the wrapper in a vertical line. Fold in the top and bottom sides of the wrapper. Then fold over the left side of the wrapper, tightly tucking in the fillings, and roll the wrapper to the right until it is sealed.
  5. Serve immediately with the peanut dipping sauce and/or nuoc cham, or refrigerate in a sealed container for up to 3 days.
