For too many years, the vulnerability of migrant workers in the Immokalee region made them targets of exploitation, a stark contrast to the wholesome image we often associate with food production. As Chief Assistant US Attorney Douglas Malloy once described it, the situation was truly dire, highlighting the urgent need for systemic change.

However, this story, once filled with despair, has transformed into a beacon of hope and progress. Thanks to the relentless efforts of dedicated individuals and organizations like the Coalition of Immokalee Workers (CIW), significant strides have been made. Over the past 15 years, more than 1,000 people have been liberated from forced labor in these very fields. Perhaps even more inspiring is the proactive role of the tomato farmers themselves, who collaborated to develop the groundbreaking Fair Food Program. This pioneering initiative establishes a zero-tolerance policy against slavery, child labor, and abuse, ensuring fair wages and safe working conditions for farmworkers. The program has garnered widespread support, with major fast-food companies and prominent grocery chains like Whole Foods and Trader Joe’s proudly endorsing its principles. This collective commitment ensures that the tomatoes we enjoy are harvested with dignity and respect, embodying a true ‘Recipe For Change’.

  • 1 head garlic, separated into (unpeeled) individual cloves. Roasting whole cloves in their skins prevents burning and allows them to steam and soften beautifully, developing a sweet, mild flavor.
  • 2 Tbsp. olive oil. A good quality extra virgin olive oil enhances the roasting process and adds a silky texture to the final dish.
  • Salt and freshly-cracked black pepper. Essential for seasoning and bringing out the natural flavors of the tomatoes and garlic. Don’t be shy with a generous pinch!
  • 1 lb. (16 oz.) dried pasta. Choose your favorite shape! Spaghetti, linguine, fettuccine, penne, or fusilli all work wonderfully. The key is to cook it perfectly al dente.
  • 1 cup loosely-packed fresh basil, thinly sliced or chopped. Basil adds a crucial aromatic freshness that brightens the entire dish, complementing the sweetness of the tomatoes and garlic.
  • 1 cup freshly-grated Parmesan cheese. Or Parmigiano-Reggiano for authentic flavor. Its salty, umami notes tie all the ingredients together and add a creamy richness when melted into the warm pasta.
  • 1/2 cup toasted pine nuts. These provide a delightful crunch and a subtle, buttery, nutty flavor that elevates the dish. Toasting them beforehand enhances their aroma and taste.

Instructions

  1. Prepare for Roasting: Begin by preheating your oven to a low 250 degrees F (120 degrees C). This gentle heat is crucial for the slow-roasting process that develops deep flavors without scorching the produce. Line a large baking sheet with parchment paper or aluminum foil for easy cleanup.
  2. Arrange and Season Tomatoes & Garlic: Evenly spread your halved cherry or grape tomatoes and the unpeeled individual garlic cloves in a single layer across the prepared baking sheet. Drizzle them lightly but thoroughly with the olive oil. Then, season generously with salt and freshly-cracked black pepper. Ensure every piece gets a touch of seasoning.
  3. Slow-Roast to Perfection: Place the baking sheet in the preheated oven and bake for approximately 2 1/2 to 3 hours. The goal is for the tomatoes to shrivel significantly, releasing their juices and concentrating their sweetness, but still retaining a slight juiciness inside. The garlic cloves should become wonderfully soft and golden brown within their skins. Keep an eye on them during the last hour to ensure they don’t overcook. Once roasted, remove the tray from the oven and set it aside.
  4. Cook the Pasta: Approximately 30 minutes before the tomatoes are ready to come out of the oven, start preparing your pasta. Fill a large pot with generously-salted water – it should taste like the sea. Bring the water to a rolling boil. Add a tablespoon or more of salt to the boiling water, then add your chosen dried pasta. Cook the pasta according to package instructions until it is perfectly al dente – firm to the bite but not hard. This is crucial for the overall texture of the dish.
  5. Combine and Serve: Once the pasta is cooked, drain it thoroughly, reserving a small amount of the pasta water if you wish to adjust the sauce consistency later. Immediately transfer the hot, drained pasta back into the large pot or a spacious serving bowl. Add the slow-roasted tomatoes and the tender, roasted garlic (gently squeeze the soft garlic pulp from their skins directly into the pasta). Add the fresh, thinly sliced basil. Toss everything together gently until the pasta is evenly coated with the tomato-garlic “sauce” and the basil is distributed. Serve this delightful pasta immediately, garnished generously with freshly-grated Parmesan cheese and a sprinkle of toasted pine nuts for added texture and flavor.
