Ingredients

Yield: 4 servings

  • 1 1/4 pounds sirloin steak, cut into 1 1/4-inch pieces
  • 2 bell peppers, cut into 1-inch pieces
  • 1 medium red onion, cut into 1-inch pieces
  • flaky sea salt, for topping
  • 1/4 cup avocado oil (or olive oil)
  • 2 tablespoons red wine vinegar
  • 1 tablespoons Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 3 cloves garlic, pressed or finely minced
  • 1 teaspoon coarse freshly-ground black pepper
  • 1 teaspoon fine sea salt

Method

  1. Make the marinade. In a medium bowl, whisk together the oil, red wine vinegar, Dijon mustard, Worcestershire sauce, garlic, black pepper, and sea salt until combined.

  2. Marinate the steak. Tip in the steak to a large zip-top bag or shallow bowl. Tip the marinade over the steak and toss until evenly coated. Lid or seal and refrigerate for at least 30 minutes, or up to 6 hours.

  3. Prep the skewers. If using wooden skewers, soak them in water for at least 30 minutes. Thread the marinated steak, bell peppers, and red onion onto skewers, alternating the ingredients.

  4. Grill. Warm the grill to medium-a hot burner. Set the kabobs on the grill and cook for 8 to 10 minutes, turning every few minutes, until the steak reaches your desired level of doneness and the veggies are lightly charred.

  5. Plate Move the kabobs to a serving platter and let rest for 5 minutes before serving.
