Smoky Corn and Bacon Chowder

Irresistible Bacon Corn Chowder: The Ultimate Comfort Food Recipe

Delicious Bacon Corn Chowder, perfect for fall and winter

As the vibrant days of summer gradually give way to the crisp embrace of autumn, there’s often a bittersweet nostalgia that settles in. It feels like just yesterday we were basking in the sun, enjoying long evenings, and savoring the peak of summer’s bounty. Yet, here we are, seeing glimpses of fall – cooler temperatures, kids heading back to school, and even early Halloween candy making an appearance in grocery aisles. While it’s hard to say goodbye to the season of flip-flops and endless sunshine, there’s a silver lining that makes the transition a little easier to bear: the comforting allure of fall cuisine.

For many, the changing leaves signal the unofficial start of soup season, and few dishes capture the essence of this transition quite like a rich, creamy corn chowder. It’s a dish that perfectly bridges the gap, allowing us to hold onto the sweet memories of summer’s fresh corn while welcoming the warmth and coziness that autumn soups bring. This Bacon Corn Chowder recipe is not just a meal; it’s an experience – a delicious homage to seasonal change, packed with flavors that are both familiar and deeply satisfying. It’s the kind of dish that makes saying goodbye to summer a little less painful, especially when enjoyed with the windows open, a gentle breeze flowing through, and maybe a nostalgic playlist in the background, a silent nod to the season that was.

Why This Bacon Corn Chowder Stands Apart

Not all chowders are created equal, and this Bacon Corn Chowder truly shines. It strikes a remarkable balance of flavors and textures that dance on your palate, offering a symphony of deliciousness in every spoonful. The natural sweetness of fresh corn is exquisitely complemented by the smoky depth of crispy bacon, creating a harmonious blend that is utterly addictive. But the magic doesn’t stop there. The addition of sharp cheddar cheese introduces a savory, tangy note, while tender diced potatoes provide a wonderfully thick and hearty body to the chowder, making it incredibly filling and satisfying.

What sets this chowder apart is its delightful creaminess, achieved with milk rather than heavy cream, offering a lighter yet equally luxurious texture. This thoughtful choice ensures that the chowder is rich without being overly heavy, allowing the individual flavors to truly shine. The careful selection of seasonings elevates the dish from good to extraordinary: the distinct, robust flavor of Old Bay seasoning, the earthy aroma of dried thyme, and a generous pinch of cayenne pepper add a subtle kick and an irresistible complexity that makes this “chowdah” truly memorable. Each ingredient plays a crucial role, culminating in a dish that is both profoundly flavorful and deeply comforting, perfectly suited for any time you crave a bowl of pure culinary happiness.

The Heart of the Ingredients: Crafting Flavor from Scratch

The success of any great chowder lies in the quality and synergy of its ingredients. For this Bacon Corn Chowder, each component is carefully chosen to contribute to its robust flavor profile and comforting texture. Let’s delve into the star players:

Fresh Corn: A Taste of Summer’s Sweetness

While this recipe brilliantly accommodates canned corn, the use of fresh corn, especially at the tail end of summer, truly makes a difference. The natural sugars in fresh corn caramelize beautifully when dry-roasted, adding an unparalleled depth of sweetness and a slightly toasted flavor that elevates the entire dish. If fresh corn is out of season, don’t fret! Canned whole-kernel or creamed corn (or a combination) offers a convenient and delicious alternative, ensuring this chowder can be enjoyed year-round.

Smoky Bacon: The Foundation of Flavor

Bacon is more than just a garnish here; it’s a fundamental flavor builder. Diced and fried until crisp, it infuses the chowder with its signature smoky, savory notes. Crucially, the rendered bacon fat is reserved and used to sauté the aromatics, laying a rich foundation for the rest of the ingredients. This step is non-negotiable for achieving that deeply satisfying, umami-rich taste.

Potatoes: For Body and Creaminess

Diced potatoes are essential for giving the chowder its characteristic thick and hearty texture. As they simmer, they release starches that naturally thicken the broth, and their tender flesh provides a soft contrast to the crisp bacon and sweet corn. Yukon Gold potatoes are an excellent choice due to their buttery texture and tendency to hold their shape without becoming mushy, offering a delightful creaminess without needing excessive heavy cream.

Dairy: Achieving Perfect Creaminess

Instead of heavy cream, this recipe opts for milk to achieve its luscious, creamy consistency. This choice makes the chowder feel lighter on the palate while still delivering that coveted velvety texture. It allows the other flavors to shine through without being overpowered by excessive richness. For those who prefer an even richer chowder, a splash of half-and-half or light cream can be substituted for some of the milk.

Aromatics and Spices: The Soul of the Chowder

Onions and garlic form the aromatic backbone of the chowder, sautéed in bacon fat until fragrant, releasing their sweet and pungent flavors. The flour, stirred in after the aromatics, creates a roux that is key to thickening the soup to the perfect consistency. But it’s the spices that truly make this chowder sing. Old Bay seasoning, with its unique blend of herbs and spices, brings a distinctive coastal flavor. Dried thyme adds an earthy, herbaceous note, while a touch of cayenne pepper provides a gentle warmth and a subtle kick, balancing the sweetness and richness. These seasonings work in concert to create a complex, vibrant flavor profile that is truly irresistible.

Mastering the Bacon Corn Chowder: Step-by-Step Excellence

Creating this flavorful Bacon Corn Chowder is a straightforward process, but paying attention to each step ensures the best possible outcome. From developing rich layers of flavor to achieving the perfect creamy texture, every action contributes to the chowder’s irresistible appeal.

The journey begins with enhancing the corn’s natural sweetness. By dry-roasting the corn kernels in a hot stock pot until their edges caramelize, you unlock deeper, toastier notes that regular simmering alone cannot achieve. This simple yet impactful step transforms the corn, making it a standout element in the chowder. Once perfectly roasted, the corn is set aside, ready to be reintroduced later to maintain its texture and flavor.

Next, the bacon takes center stage. Frying the diced bacon until crisp not only yields delectable crispy bits for garnish but also produces that essential smoky fat. This reserved bacon grease is the secret weapon, used to sauté the diced white onion and minced garlic. This initial sautéing in bacon fat infuses the entire base of the chowder with a foundational layer of savory, aromatic goodness, ensuring every spoonful is packed with flavor. After the aromatics are tender and fragrant, all-purpose flour is stirred in, creating a roux. This roux is cooked briefly, allowing it to toast slightly and lose its raw flour taste, which is crucial for thickening the chowder without imparting a starchy flavor.

With the flavor base established, chicken stock and milk are gradually added, whisked thoroughly to prevent lumps. Along with these liquids, the diced potatoes, chopped green chiles, Old Bay seasoning, and dried thyme are introduced. The mixture is then brought to a gentle simmer, allowing the potatoes to cook until fork-tender and the flavors to meld beautifully. This slow simmer is key to achieving a perfectly cooked potato texture and a well-integrated broth. Finally, the star ingredients – the roasted corn and grated cheddar cheese – are stirred in, along with most of the crispy bacon bits, reserving a few for garnish. A final seasoning adjustment with salt, freshly-cracked black pepper, and cayenne pepper ensures the chowder is tailored to your taste preferences. Serve it warm, perhaps with additional garnishes, and prepare to savor a bowl of pure comfort.

Tips for the Perfect Chowder Every Time

Achieving the perfect Bacon Corn Chowder is easy with a few expert tips:

  • Maximize Corn Flavor: Don’t skip the dry-roasting step for fresh corn. This caramelizes the sugars, intensifying its sweetness and adding a nutty depth. If using canned corn, drain and rinse it thoroughly before adding to the chowder. You can still lightly sauté canned corn for a few minutes to develop some flavor.
  • Bacon Fat is Gold: Reserve some of the rendered bacon fat. It’s a flavor powerhouse and essential for sautéing the aromatics and building the roux.
  • Roux for Richness: Ensure you cook the flour for at least a minute after stirring it into the bacon fat and aromatics. This step cooks out the raw flour taste and helps achieve a smooth, lump-free thickening agent.
  • Low and Slow Simmer: Avoid boiling the chowder vigorously, especially after adding milk, as it can curdle. A gentle simmer is ideal for tenderizing the potatoes and allowing the flavors to deepen without scorching.
  • Taste and Adjust: Seasoning is highly personal. Always taste the chowder before serving and adjust salt, pepper, and cayenne as needed. Remember, Old Bay is salty, so account for that when adding additional salt.

Delicious Variations and Serving Suggestions

While this Bacon Corn Chowder is perfect as is, it’s also wonderfully adaptable:

  • Make it Vegetarian: Omit the bacon and use olive oil or butter for sautéing. Add a teaspoon of smoked paprika for a hint of smoky flavor. Use vegetable broth instead of chicken stock.
  • Add More Veggies: Sauté diced celery, bell peppers, or even a jalapeño for extra flavor and texture. Add them with the onion.
  • Boost the Creaminess: For an extra decadent chowder, substitute half of the milk with half-and-half or heavy cream.
  • Different Cheeses: Experiment with other cheeses like Monterey Jack, Colby, or even a smoked gouda for a different flavor profile.
  • Spice It Up: For those who love heat, increase the cayenne pepper or add a few dashes of your favorite hot sauce.

When it comes to serving, a warm bowl of Bacon Corn Chowder is best enjoyed with:

  • Crusty Bread: Perfect for soaking up every last drop of the creamy broth.
  • Fresh Garnishes: A sprinkle of reserved crispy bacon bits, thinly sliced green onions, an extra spoonful of shredded cheddar cheese, or a dollop of sour cream or Greek yogurt can add a beautiful finish and fresh burst of flavor.
  • Side Salad: A light, fresh green salad with a vinaigrette dressing provides a refreshing contrast to the richness of the chowder.

The Joy of Comfort in a Bowl

Whether you’re celebrating the final days of summer’s harvest or seeking a warm embrace as the colder months set in, this Bacon Corn Chowder is a recipe that delivers pure comfort. It’s more than just a soup; it’s a versatile dish that evokes warmth, coziness, and the joy of simple, flavorful ingredients coming together. Description

This Bacon Corn Chowder is full of delicious, comforting flavors that can be made with fresh or canned corn. A perfect recipe for transitioning seasons or any time you crave a hearty, flavorful soup.

Ingredients

  • 5 ears of fresh corn, shucked (*or you can substitute 2 15-ounce cans of whole kernel corn, OR a combination of 1 can each of whole-kernel and creamed corn)
  • 8 slices (about 1/2 pound) bacon, diced
  • 1 small white onion, diced
  • 3 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 3 cups chicken stock
  • 2 cups milk
  • 1.5 pounds potatoes, diced into 1/4-inch cubes (I used Yukon gold)
  • 1 (4-ounce) can chopped green chiles
  • 1 tablespoon Old Bay seasoning (add more/less to taste)
  • 1/2 teaspoon dried thyme
  • 1 cup grated cheddar cheese
  • 1 teaspoon salt (add more/less to taste)
  • 1/2 teaspoon freshly-cracked black pepper
  • 1/4 teaspoon cayenne pepper
  • optional garnish: extra shredded cheddar cheese, thinly-sliced green onions, reserved bacon bits, sour cream

Instructions

  1. Heat a large stock pot over high heat. Add the corn kernels and let them dry-roast for about 6-8 minutes, stirring occasionally, until their edges begin to brown and caramelize. Transfer the corn to a plate to set aside.
  2. In the same stock pot, fry the bacon pieces over medium-high heat until crisp. Remove from the pan using a slotted spoon and set aside. Reserve 1 tablespoon bacon grease in the pan, and discard the rest.
  3. Add the onion and saute for 5 minutes, or until tender. Add the garlic and cook for an additional 1 minute, or until fragrant. Stir in the flour until combined, then cook for an additional 1 minute, stirring occasionally.
  4. Add in the chicken stock, milk, potatoes, green chiles, Old Bay, and thyme, and stir to combine. Continue heating until the mixture reaches a simmer but not a boil. Reduce heat to medium and let simmer for 15 minutes, or until the potatoes are tender. Add in the corn, cheese and most of the bacon bits, reserving a few to save as a garnish if desired. Stir to combine.
  5. Taste test the broth, then season with salt, pepper and cayenne to taste. (I recommended the amounts that I used, but your seasoning preferences may vary.)
  6. Serve warm, with additional garnishes if desired.
