  • 1 large egg
  • 2 tsp. vanilla extract, store-bought or homemade
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. kosher salt
  • 1 cup semi-sweet chocolate chips

Method

  1. Warm the oven to 350 degrees F and grease the bottom and sides of a 9-inch cast-iron skillet with 2 tablespoons of the butter.

  2. Tip in the remaining 8 tablespoons of butter and the sugars to the bowl of a stand mixer and beat until light and fluffy. Tip in the egg and vanilla, beating until well combined.

  3. Tip in the flour, baking soda, and salt to a large bowl and mix to combine. Tip in the dry ingredients to the wet ingredients, mixing on low. Tip in the chocolate chips and mix on low until just combined. Press the cookie dough into the prepared skillet and bake for 20 to 25 minutes, until the edges are crisp and the cookie is golden and cooked through. Lift from oven.
