Ingredients
Yield: 3 servings
- 9 ounces soba noodles
- 2 Persian cucumbers (or 1 English cucumber), thinly sliced
- 2 scallions, thinly sliced
- 2/3 cup chopped fresh cilantro
- 2/3 cup shelled edamame
- toasted sesame seeds, for sprinkling
- 1/4 cup natural peanut butter
- 1/4 cup freshly-squeezed lime juice
- 2 tablespoons low-sodium soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon honey or maple syrup
- 1 tablespoon toasted sesame oil
- 1/2 teaspoon ground ginger
Method
Leave the soba noodles al dente according to package instructions. Tip off completely, then rinse with cold water until chilled. Keep nearby.
Prepare the peanut sauce. While that cooks, as the noodles are cooking, whisk together all of the peanut sauce ingredients until combined.
Mix everything. In a large mixing bowl, combine the chilled soba noodles, cucumbers, scallions, cilantro, edamame and peanut sauce. Turn until evenly combined. Taste and season with extra soy sauce, if needed.
Plate Plate while it is hot, sprinkled with toasted sesame seeds. Or refrigerate in a sealed container for up to 3 days.
