There’s a special joy that comes with exploring new places, especially when those explorations lead to culinary discoveries. For my husband, Barclay, and me, our recent move to Barcelona has opened up a world of fresh, vibrant produce at local markets. It’s been an adventure of senses, each trip yielding a bag full of colorful vegetables, and often, something entirely new to try. Yet, amidst all the exciting finds, one item consistently makes its way into our shopping bag, almost without fail:

I’m not exaggerating when I say we’ve been enjoying steamed artichokes at least twice a week since settling into our new Spanish home. Part of this is because they are undeniably Barclay’s all-time favorite food, and serendipitously, they are incredibly abundant here in Spain. But perhaps even more compelling is the price tag! In Spain, we can snag these beautiful thistles for as little as $0.50 apiece, a stark contrast to the $3 per artichoke we were accustomed to paying back in Kansas City. It’s truly a game-changer for our weekly grocery budget and our taste buds!

The first time we saw the unbelievably low price, we were ecstatic. We immediately filled a bag with fresh alcachofas, eager to bring them home and steam them to perfection. However, upon returning to our “furnished” rental kitchen, we quickly realized a crucial detail: we didn’t have a single pot large enough to accommodate an artichoke steamer. A classic oversight! Just when we thought our artichoke feast was thwarted, a package arrived—my new Instant Pot (affiliate link) from Spanish Amazon. A spark of an idea, and we decided to put it to the test. Could this modern marvel pressure cook artichokes? Oh, friends, what a revelation it turned out to be!

It was, without a doubt, a culinary game changer.

While the number of artichokes you can cook will depend on their size and the capacity of your Instant Pot (I typically fit 4-5 medium artichokes in a single layer in my 6-quart Instant Pot), the preparation steps remain consistent. When choosing artichokes at the market, look for ones that feel heavy for their size, have tightly packed leaves, and a vibrant green color. Avoid those with dry, split, or bruised leaves.

While that tutorial focuses on the traditional stovetop method, all the essential trimming steps apply universally. This typically involves cutting off the top inch or so of the artichoke, trimming the stem, and optionally snipping off any sharp thorny tips from the outer leaves. This not only makes them easier to handle but also prepares them for optimal steaming.

Once your artichokes are neatly trimmed and ready, it’s time to set up your Instant Pot. Begin by placing the steamer basket inside the pot. This is crucial for ensuring the artichokes are steamed, not boiled, preserving their delicate texture and flavor. Next, pour in about 1 cup of water to create the steam, then add a few cloves of garlic and a bay leaf to the bottom of the pot. These aromatic additions will infuse the steam with subtle flavors, enhancing the natural taste of the artichokes without overpowering them. Take a fresh lemon slice and rub it generously all over the outside of each trimmed artichoke. This not only adds a bright citrus note but also helps to prevent browning or oxidization, keeping your artichokes looking beautiful. Select the “Manual” or “Pressure Cook” setting on high pressure. For medium-sized artichokes, set the cooking time for 10 minutes. If you’re working with particularly large artichokes, increase the cooking time slightly to 12 minutes. Once the cooking cycle is complete, carefully perform a quick release of the pressure by turning the vent to the “Venting” position. Stand clear of the steam and wait until the float valve drops, indicating that all pressure has been released. Then, and only then, is it safe to remove the lid.

…and voilà!

In less than 30 minutes (including prep and depressurization), you’ll be rewarded with a batch of absolutely gorgeous, perfectly tender, and incredibly flavorful steamed artichokes. The process is remarkably simple, yielding consistent results that will impress both you and your guests. Instructions

  1. Add water, smashed garlic cloves, and the bay leaf to the inner pot of your Instant Pot. Carefully place the steamer basket directly on the bottom of the pot.
  2. Using a fresh lemon wedge, generously rub the exterior of each trimmed artichoke. This step is essential for both enhancing flavor and preventing any undesirable browning or oxidization. Arrange the rubbed artichokes in a single layer within the steamer basket, ensuring they are not stacked. Drop the used lemon wedge into the water at the bottom of the pot. Securely close the Instant Pot lid and set the steam release handle to the “Sealing” position.
  3. Select the “Manual” or “Pressure Cook” button, then adjust the pressure setting to “High Pressure”. Set the cooking time to 10 minutes*. Once the cooking cycle is complete, carefully and slowly turn the steam release handle to the “Venting” position for a quick release. Allow all the steam to fully escape until the float valve drops down completely. Once safe, remove the lid.

*Adjusting Cook Time: For extra-large artichokes, we recommend increasing the cooking time to 12 minutes to ensure complete tenderness. To verify if your artichokes are perfectly cooked, insert a sharp knife into the stem. If the knife slides in smoothly with no resistance, they are ready. If you encounter any resistance, simply cook them for an additional 2 minutes in the Instant Pot.
