This past summer, an invitation arrived that would happily challenge my long-standing culinary vow. My dear friend Kelly, along with two other inspiring women from our church, reached out for assistance with the annual benefit for the Kyrie Foundation. This remarkable organization is dedicated to supporting and raising awareness for pediatric brain cancer research – a cause that resonates deeply within our community. The request was specific yet ambitious: help prepare warm hors d’oeuvres for an event expecting 200 guests! Anyone familiar with my previous catering experiences knows I once swore off cooking for crowds larger than a modest dining room. However, the profound importance of this cause and the persuasive power of good friends quickly led me to reconsider. It was an opportunity too meaningful to decline.
Crafting the Perfect Appetizer: Inspiration Strikes
With the November benefit rapidly approaching, we decided a comprehensive “test run” was in order for the six main appetizers we planned to feature. These would complement a wonderful array of additional dishes generously donated by beloved local restaurants. My personal assignment was to create a chicken salad recipe designed to be served elegantly on endive leaves. This challenge ignited my creativity, and I’m delighted to share the flavorful result that emerged from that kitchen experiment.
My goal was to infuse a classic chicken salad with the vibrant, crisp flavors often found in my favorite autumn green salads. I envisioned a delightful blend of seasoned chicken, the refreshing crunch of fresh apples, the distinctive tang of Gorgonzola cheese, and the rich, toasty aroma of pecans. The first test batch was made with blue cheese, which was undeniably delicious. However, to introduce more variety to the event’s menu, we ultimately decided to feature Gorgonzola, offering a slightly milder yet equally complex blue cheese note. The verdict from my fellow chefs? A resounding “thumbs up!” This recipe proved to be exceptionally easy and quick to prepare, offering an “oh-la-la” classy presentation when nestled within the elegant endive spears. I am confident you will find it equally delightful.

As the date for the Kyrie Foundation benefit draws nearer, the scale of our undertaking becomes delightfully real. We aren’t simply making a few dozen of these delicious bites; we’re preparing an impressive 350! The thought is both a little daunting and incredibly exhilarating.
