  • half a small red onion, peeled and thinly sliced or diced, for a touch of sharpness
  • 1/3 cup dried cranberries, for a burst of sweet-tart flavor
  • 1/3 cup pepitas (pumpkin seeds), for a satisfying crunch
  • 1 batch of our renowned Dreamy Tahini Dressing

For the Roasted Sweet Potatoes and Chickpeas:

  • 2 medium sweet potatoes, peeled and diced into 1-inch cubes
  • 1 (15 ounce) can chickpeas, thoroughly drained and rinsed
  • 2 tablespoons olive oil

Instructions

To Assemble The Salad Bowls:

  1. Begin by preparing the Roasted Sweet Potatoes and Chickpeas as detailed in the instructions below. To optimize your cooking time, use the roasting period to prep the remaining salad ingredients, such as chopping your kale, slicing the red onion, and preparing your dressing.
  2. Once the sweet potatoes and chickpeas are perfectly roasted and tender, transfer the kale to your main serving bowl or divide it evenly among your food storage containers for meal prep.
