However, despite the deep dive, there’s a fascinating duality to our days here. About half the time, it still feels like we’re on an extended, luxurious vacation. We find ourselves marveling at charming new streets, eagerly consulting Yelp for the next culinary adventure, taking serene walks along the stunning Mediterranean beaches (oh, the beach!), and constantly delighted by the multitude of languages spoken around us. The adorable twinkling lights and festive banners adorning every thoroughfare only add to this wondrous, tourist-like enchantment.

Yet, the other half of the time, this new place already feels remarkably like home. It’s incredible how quickly familiarity sets in. Waking up each morning to the gentle cooing of neighborhood pigeons in our quaint little apartment, navigating the winding paths to our beloved local market, cozy coffee shop, serene yoga studio, and the familiar El Corte Inglés – these routes are quickly becoming second nature. Speaking Spanish daily, and receiving a friendly wave from Alejandro at the wine shop as we take our dogs out for a stroll, cement this feeling of belonging. In just two short weeks, Barcelona has welcomed us with open arms, making it feel less like a destination and more like a true home.

Barclay and I wholeheartedly agree that two things have truly grounded us here and made Spain feel like our permanent residence: having our beloved pups by our side, and the simple act of cooking in our own kitchen. For me, there’s an profound sense of connection and grounding that comes from visiting a local market, carefully selecting fresh ingredients, bringing them home, and preparing a homemade meal. It’s a ritual that transforms any new environment into a comforting haven. While our compact kitchen here is modestly equipped with a single sauté pan and saucepan, I was absolutely thrilled when our Instant Pot finally arrived from Spanish Amazon! These essential tools have already facilitated many enjoyable cooking dates for Barclay and me.

Ingredients

Instructions
