There’s a universal comfort that food brings, a profound connection to home and nostalgia that transcends cultures and borders. Living in Barcelona, one of the most heartwarming questions I love to pose to our expat friends is about their go-to spots when a craving for a taste of home hits. You see their eyes light up, a shared understanding of those days when all you yearn for is that specific flavor, that particular dish that whispers “home.” And without fail, everyone has their cherished refuge.

Our dear Irish friend eagerly directed us to the quintessential pub in Barcelona for a proper pint and a hearty stew. Our Romanian friend, with a swipe on her phone, revealed the most authentically traditional restaurant in town. Our Swiss friend, ever thoughtful, surprised us with a selection of her favorite Swiss chocolates. And our German friend, with culinary precision, mapped out where our next dinner date absolutely needed to be. This appreciation for culinary heritage extends even to our local Spanish friends, who, as you might have glimpsed in our latest monthly update video, went above and beyond to share their traditions, baking us our very own king cake for Epiphany and inviting us to our first-ever calçotada experience this month. It’s truly wonderful to witness and partake in these expressions of comfort and community.

This deep connection to food, however, often leads Barclay and me to a realization when the comfort food question is turned back on us: we haven’t once felt the need to visit an “American” restaurant here in Barcelona. Our homesickness, when it occasionally flares up, surprisingly doesn’t point us towards burgers or apple pie. Instead, it steers us unequivocally towards one culinary tradition: Mexican food. It seems our hearts, and our palates, have made a permanent pilgrimage south of the border for comfort.

Our journey with Mexican cuisine is a storied one, deeply woven into the fabric of our relationship. You might recall our first date, a marathon seven-hour affair fueled by endless chips and salsa. This epic meal was eventually followed by a surprise proposal party held at the very same beloved Mexican eatery. Our wedding celebration was, naturally, a veritable feast of tacos, and our honeymoon whisked us away to the culinary heartland of Oaxaca, Mexico. In between these significant milestones, countless happy hours were spent indulging in more chips and salsa. So, it comes as no great surprise that when we seek solace and the taste of home, our immediate craving is for tacos over virtually anything else. Fortunately, we’ve finally discovered a fantastic authentic Mexican restaurant here in Barcelona for those occasions when we fancy dining out. But more often than not, our perfect comfort involves cozy taco nights in, complete with homemade salsa, refreshing margaritas, and the most comfortable loungewear imaginable.

This past weekend presented a delightful double treat: savoring the comforting tastes of home, crafted by some wonderful friends from home! We had the pleasure of trying these exquisite Roasted Cauliflower and Black Bean Tacos from Sonja and Alex’s brilliant new cookbook. It was, without a doubt, exactly our kind of comfort food – healthy, flavorful, and deeply satisfying.

It’s almost unbelievable that our paths haven’t physically crossed yet (though I’m thrilled to say we hope to remedy that during their upcoming trip to Spain!). Despite the geographical distance, we’ve been internet friends for years, and I’ve been an ardent follower of their blog, drawing immense inspiration from their thoughtful approach to cooking and life.

Among the many qualities I admire about Sonja and Alex, their openness and honesty in sharing their personal story have always resonated deeply with me. It boasts 100 incredible dishes, each accompanied by a beautiful photograph, and is further enriched with stunning original watercolors. It was a cold, rainy day, and the craving for something warm, comforting, and yet fresh was palpable. A quick note on toppings: Sonja and Alex originally suggest topping their tacos with thinly sliced radishes, which sounds like a fantastic addition for an extra layer of crunch and a peppery bite. However, radishes are surprisingly difficult to come by in our neighborhood here in Barcelona (a peculiar local quirk!). So, if you’re looking to add that delightful crisp texture, be sure to include them on your grocery list when planning to make these tacos. Ingredients

Taco Ingredients:

  • 1 batch Turmeric Roasted Cauliflower (see below)
  • 1 batch Refried Black Beans (see below)
  • 1 batch Cumin Lime Crema (see below)
  • Corn tortillas*
  • Toppings: diced avocado, chopped fresh cilantro, fresh lime wedges, pepitas, and/or thinly-sliced radishes

Turmeric Roasted Cauliflower Ingredients:

  • 1 large head cauliflower (about 2 pounds)
  • 4 medium garlic cloves, peeled and minced
  • 2 tablespoons olive oil
  • 1 teaspoon each: ground cumin, kosher salt, paprika
  • 1/2 teaspoon each: crushed red pepper flakes, freshly-cracked black pepper, ground turmeric

Refried Black Beans Ingredients:

  • 1 small white onion
  • 2 (15-ounce) cans black beans
  • 3 tablespoons extra-virgin olive oil
  • 1/2 teaspoon each: chili powder, Kosher salt
  • 1/4 teaspoon freshly-ground black pepper

Cumin Lime Crema Ingredients:

  • 1 small garlic clove, peeled and minced
  • 1/4 cup lime juice (about 2 limes)
  • 3 tablespoons tahini
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon Mexican hot sauce (such as Cholula)
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon kosher salt

Instructions

To Make The Tacos:

  1. Prepare the cauliflower, refried black beans, and crema as directed below.
  2. To serve, lay a corn tortilla flat, spread a layer of refried black beans, then top with a generous serving of roasted cauliflower, a drizzle of the zesty crema, and your desired fresh toppings.

To Make The Turmeric Roasted Cauliflower:

  1. Preheat your oven to 450°F (230°C).
  2. In a large mixing bowl, combine the chopped cauliflower florets, minced garlic, olive oil, ground cumin, kosher salt, paprika, crushed red pepper flakes, black pepper, and ground turmeric. Toss everything together until the cauliflower is evenly coated with the spices.
  3. Line a baking sheet with parchment paper or a silicone mat. Arrange the seasoned cauliflower in a single layer on the prepared sheet. Roast for 25-30 minutes, or until the cauliflower is tender-crisp and beautifully browned, stirring once halfway through the cooking process to ensure even caramelization.
  4. Serve the roasted cauliflower immediately while it’s warm and fragrant.

To Make The Refried Black Beans:

  1. Peel and halve the small white onion, then slice it thinly into half-moon shapes. Drain the two cans of black beans, making sure to reserve 1/2 cup of the liquid from the can.
  2. In a medium saucepan, heat the extra-virgin olive oil over medium heat. Add the sliced onion and sauté until it becomes translucent and softened, which should take about 3-4 minutes. Stir in the drained black beans, the reserved can liquid, kosher salt, chili powder, and black pepper. Reduce the heat to medium-low and continue to cook for 10-15 minutes, stirring frequently. As the beans cook, use the back of a spoon or a potato masher to gently smash them against the bottom and sides of the pan, achieving a creamy, thick, and mashed texture as most of the liquid cooks out. Taste and adjust seasoning with additional salt as needed.

To Make The Cumin Lime Crema:

  1. In a small bowl, whisk together the minced garlic, fresh lime juice, tahini, extra-virgin olive oil, Mexican hot sauce, ground cumin, and kosher salt until all ingredients are thoroughly combined and smooth. If the consistency is too thick, add 1-2 tablespoons of water, one spoonful at a time, until you achieve a wonderfully creamy and drizzle-able consistency.

Notes

*If you wish to char your corn tortillas for an authentic touch and enhanced flavor, turn a gas burner to medium heat. Carefully place a tortilla directly on the grate. After about 15 seconds, once the edges begin to lightly char and blister, use tongs to flip the tortilla. Heat the opposite side until lightly charred as well. Repeat this process for all tortillas, making sure to keep a close eye on them to prevent burning or catching fire. This method adds a fantastic smoky depth to your tacos.
