Ingredients

Yield: 6 servings

  • 2 pork tenderloins, about 2 pounds total
  • 1/3 cup olive oil
  • 1/3 cup low-sodium soy sauce
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons freshly-squeezed lemon juice or lime juice
  • 4 large cloves garlic, pressed or finely minced
  • 1 teaspoon fine sea salt
  • 1 teaspoon freshly-ground black pepper
  • 1 teaspoon smoked paprika
  • flaky sea salt, for topping

Method

  1. Make the marinade. In a medium bowl, whisk together the olive oil, soy sauce, Dijon mustard, honey, lemon juice, garlic, sea salt, black pepper and smoked paprika until combined.

  2. Marinate the pork. Tip in the pork tenderloins to a large zip-top bag or shallow dish. Tip the marinade over the pork and turn to coat. Lid or seal and refrigerate for at least 30 minutes, or up to 8 hours.

  3. Warm the grill to medium-a hot burner, around 400°F. Clean and oil the grill grates.

  4. Grill the pork. Lift the pork tenderloins from the marinade, letting any excess drip off, and discard the remaining marinade. Set the pork on the grill and cook for 12 to 16 minutes total, turning every 3 to 4 minutes, until the pork is browned on all sides and reaches an internal temperature of 145°F.

  5. Rest and serve. Move the pork to a clean cutting board and let it rest for 5 to 10 minutes. Slice against the grain and sprinkle with flaky sea salt. Plate warm and enjoy!
