Oven-Fried Spanish Croquettes: A Culinary Journey from WoCave to Your Kitchen
A few weeks ago, I shared exciting news about my partnership with Skinny Cow for a delightful summer project. The campaign celebrates women and their unique spaces – their “WoCaves.” What exactly is a WoCave? Think of it as the ultimate female equivalent of a “man cave” – a personal sanctuary where you can unwind, be authentically yourself, and indulge in life’s simple pleasures. For me, this cherished time often revolves around the kitchen, a space made even more enjoyable when shared with dear friends.
My enthusiasm soared when my first “mission” for the summer arrived. It wasn’t just a mission; it was an experience! I received a beautifully curated gift box brimming with entertaining essentials and a save-the-date for an incredible in-home, hands-on Spanish tapas cooking class led by a professional chef. To be candid, the thought of a *professional* chef in my relatively modest kitchen initially sparked a flicker of nervousness. As someone who adores cooking but lacks formal culinary training, I worried about my knife skills being scrutinized. And let’s be honest, my kitchen is wonderfully cozy, but certainly not expansive!
Despite the slight trepidation, the prospect sounded immensely fun. So, I gathered a few girlfriends who share my passion for cooking, and together, we embarked on an unforgettable evening with the brilliant Chef Jim! We crafted an impressive seven (yes, seven!) delectable tapas courses, creating lasting memories along the way. I’m thrilled to share some snapshots from that evening, along with the standout recipe of the night: these incredible Oven-Fried Spanish Croquettes.
The WoCave Experience: Embracing Culinary Creativity with Friends
The concept of a WoCave truly resonated with me. It’s about creating a space, physical or metaphorical, where you feel inspired and comfortable. For many, it’s a quiet corner for reading, a vibrant studio for art, or a peaceful garden. For me, it’s undeniably my kitchen – especially when it transforms into a hub of laughter, learning, and delicious aromas. This partnership with Skinny Cow perfectly aligned with my belief in savoring moments and sharing joy through food. The tapas class was the perfect embodiment of this spirit, bringing together friends for an evening of shared passion and discovery.

The culinary adventure commenced with the arrival of Chef Jim Sturm from KC Chef. From the moment he stepped into my kitchen, we were all instantly charmed. Beyond being an exceptional cook and a phenomenal instructor, Chef Jim exuded an infectious enthusiasm and an easy-going demeanor. It was crystal clear that he *loves* what he does. His inspiring journey includes a courageous leap a decade ago, leaving the corporate world to pursue his true calling at the esteemed Le Cordon Bleu culinary school. Since then, he has dedicated himself to his passion: creating exquisite food and empowering others to do the same. His story alone was incredibly motivating, setting a wonderful tone for our evening.
A Master Chef’s Preparation and a Taste of Spain
Prior to the class, Chef Jim had graciously assured me via email that he would arrive with everything necessary – and he certainly delivered! He literally brought along every conceivable item required to teach a comprehensive cooking class and prepare eight magnificent courses. From a full array of professional knives to a mega-cooler packed with fresh ingredients, from various pots and pans to a beautiful molcajete (which I was lucky enough to keep!), I was utterly impressed by the meticulous organization and preparation that underpinned our evening. It allowed us to dive straight into the fun, without any logistical hitches.

As a devoted sangria enthusiast, I was thrilled to discover that our first course of the evening would be a delicious, fruity sangria. We provided the base wine, and Chef Jim guided us in transforming it with an artful blend of various fruits and apricot nectar. The result was a heavenly drink that perfectly set the stage for our Spanish-themed culinary adventure. It was the ideal way to kick off the evening, infusing it with vibrant flavors and a festive atmosphere.

With our sangria expertly crafted, we transitioned into the “class” portion of the evening – a crucial Knife Skills 101 session! Chef Jim had thoughtfully provided each of us with our own cutting boards and sharp knives, accompanied by a generous bag of onions. We eagerly set to work, learning the correct way to hold a knife, and the proper techniques for peeling and precisely cutting onions. A memorable lesson we learned was that the sharper the knife, the less likely you are to shed tears when cutting onions, as duller blades create a messier cut that releases more irritants. It was a practical tip that instantly improved our chopping game.

Okay, we might have still shed a few onion-induced tears, but the important thing was that no fingers were sliced – a definite victory in our book! We gained confidence with every chop.

With our newly acquired (or refreshed) knife skills, Chef Jim then set us to the enjoyable task of chopping, dicing, julienning, and meticulously preparing a vibrant array of produce and fresh herbs for our extensive tapas meal. The kitchen was alive with the rhythmic sounds of knives on cutting boards, and the air filled with the fresh scents of garlic, herbs, and vegetables.

Our adorable little “vacuum cleaner” (my dog) stayed right in the middle of the action, ready to assist with any stray crumbs that dared to escape our chopping boards. His presence added an extra layer of warmth and humor to our lively kitchen environment.

We also introduced a few of the girls to the sheer joy of how to properly roast garlic. Oh, man, that stuff is truly like candy once it’s sweet and caramelized. It’s a game-changer for so many dishes, especially a rich aioli, and the aroma alone is enough to make your mouth water. Learning this simple technique enhanced our understanding of flavor building.

I even picked up a few new techniques myself, such as grating tomatoes directly into a sauce. Initially, I was a little skeptical, but the result was a wonderfully fresh and vibrant sauce that perfectly complemented our Patatas Bravas. It’s these small, ingenious methods that truly elevate home cooking.

Preparing seven recipes in one evening was a significant undertaking, but we were serious students, diligently following Chef Jim’s instructions. And, of course, we had plenty of fun along the way, sipping sangria, munching on slices of exquisite Manchego cheese, and sharing stories and laughter. The evening was a perfect blend of focused learning and relaxed camaraderie.

One of my favorite aspects of the evening was that dinner was served “Spanish-style” – course by course, as each dish was perfected and ready. And boy, when those incredible aromas started wafting from the oven, we were absolutely ready to dive in. Every single dish was nothing short of amazing, a true testament to Chef Jim’s guidance and the quality of the ingredients.

Our meticulously planned menu included a vibrant Moorish Carrot Salad (expertly julienned with our new knife skills!), crispy Patatas Bravas served with a tantalizing Spicy Tomato Sauce (I literally could *not* stop eating these roasted potatoes), flaky Galacian Chicken Empanadas (pictured above – a true triumph of puff pastry!), a creamy Roasted Garlic Aioli, and the undisputed winner of the night in my book – the sensational Oven-Fried Spanish Croquettes with Chorizo. Each dish contributed to a rich tapestry of flavors and textures, showcasing the diversity of Spanish cuisine.
The Star of the Evening: Oven-Fried Spanish Croquettes

Oh my goodness. I could genuinely write an entire essay on almost every single course we prepared that night. However, I absolutely *had* to share the recipe for these croquettes with you. They were the very last item on our menu, and trust me when I say that by the time they emerged from the oven, we were all beyond full! Despite our satiated appetites, after painstakingly rolling them into perfect little balls, coating them in crunchy Panko breadcrumbs, and baking them to golden perfection, none of us could resist taking just a “little” taste. That little taste quickly turned into another, and then another – until we were just passing the plate around, eager for more. They were simply irresistible.

This Spanish croquettes recipe was beyond good! The Panko breading achieved an exquisite crispness on the outside, creating a delightful crunch with every bite. But the real magic happened when you bit into them: the rich, creamy Manchego-Béchamel filling, infused with savory Spanish chorizo, just melted in your mouth. And that chorizo – oh, that glorious chorizo – kept us all reaching for more. It was such an amazing, perfectly balanced flavor combination that truly captured the essence of Spanish tapas. The textures and tastes danced together, making these croquettes an instant favorite and a dish I knew I had to recreate at home.
Recreating the Magic: The Oven-Fried Success Story
Being the food blogger that I am, I felt compelled to recreate these croquettes in my own kitchen the very next week. While Chef Jim taught me the art of frying, I confess I’m not typically a deep-fryer at home. So, I decided to experiment with an *oven-fried* version using Panko. My intern, Rachel, and I whipped up a batch, making one crucial mistake initially: we mistakenly used Mexican chorizo instead of Spanish chorizo. While not quite the same authentic flavor profile, they were still incredibly tasty! We followed Chef Jim’s instructions for the filling and breading process, but for the final step, instead of pan-frying, we cranked the oven up to 450 degrees F and baked them.

Thankfully… it worked! I was absolutely thrilled with the results. I had my doubts about whether the oven-fried version could truly rival the original, but these croquettes emerged from the oven perfectly crispy on the outside and wonderfully melty in the middle. We unequivocally declared it a success! An added bonus of this oven-fried method is the convenience: you can easily prep them up to a day in advance, store them in the fridge, and then simply pop them into the oven when you’re ready to entertain or enjoy a delicious snack. I’m already certain these will be making a frequent appearance in my kitchen for future gatherings.
Oven-Fried Spanish Croquettes
- Prep Time: 20 minutes
- Cook Time: 15 minutes
- Total Time: 35 minutes
- Yield: 12-15 croquettes
Description
These Oven-Fried Spanish Croquettes are crispy on the outside, incredibly melty on the inside, and absolutely overflowing with authentic Spanish flavor! A healthier take on a classic tapas favorite.
Ingredients
- 1/4 cup (half stick) unsalted butter
- 2 Tbsp. olive oil
- 1/2 cup all-purpose flour, plus more for breading
- 1 1/2 cups whole milk
- 1/2 tsp. smoked Spanish paprika
- 1/2 cup Manchego or Gouda cheese, freshly grated
- 1/2 cup Spanish-style chorizo, finely chopped (ensure it’s Spanish for authentic flavor)
- 1 cup panko breadcrumbs
- 2 large eggs, whisked
- Salt and freshly ground black pepper to taste
Instructions
- Prepare the Béchamel: In a large, heavy-bottomed skillet over medium-low heat, melt the butter and olive oil together. Add the 1/2 cup of flour and cook for 1 minute, whisking constantly, until a smooth paste (roux) forms. Continue to cook for another minute or two until the flour loses its raw, starchy aroma and turns a very light golden color. Increase the heat to medium-high, and gradually whisk in the milk, a little at a time, incorporating fully before adding more. Continue whisking constantly for about 1 minute until the mixture is completely smooth and thickened to a creamy béchamel sauce.
- Add Flavorings: Reduce the heat to low. Stir in the grated cheese, finely chopped Spanish chorizo, and smoked paprika until the cheese is fully melted and everything is well combined. Season generously with salt and freshly ground black pepper to taste.
- Chill the Filling: Transfer the croquette mixture to a shallow baking dish or bowl that has been lightly greased with cooking spray or a thin layer of oil. Press a layer of plastic wrap directly onto the surface of the filling mixture to prevent a skin from forming. Cover completely, sealing in the edges. Refrigerate until the mixture is thoroughly cool and firm, which will take approximately 1-2 hours (or even overnight for best results). This step is crucial for easy shaping.
- Form and Bread the Croquettes: When you’re ready to cook, preheat your oven to 450 degrees F (230 degrees C). Remove the chilled filling mixture from the refrigerator. Using your hands or a small cookie scoop, form the filling into small, uniform balls. Mine were about 1.5 inches in diameter, but you can also make them smaller, around 1 inch.
- Set Up Breading Station: Prepare your breading assembly line. Place flour in one small bowl, the two whisked eggs in a second bowl, and the panko breadcrumbs in a third bowl. Take one filling ball, dredge it thoroughly in the flour until completely coated, shaking off any excess. Then, dip it into the whisked egg mixture, allowing any excess to drip off. Finally, roll it in the panko breadcrumbs, pressing gently to ensure an even and complete coating. Place the breaded ball on a parchment-paper-lined baking sheet. Repeat this process with the remaining filling balls.
- Lightly Mist: Once all croquettes are breaded, lightly mist them all over with cooking spray or a fine spray of olive oil. This helps achieve that beautiful golden-brown, crispy finish in the oven.
- Final Chill (Optional but Recommended): For the crispiest results and to prevent the cheese from melting too quickly, transfer the baking sheet with the breaded croquettes back to the refrigerator for a final 10-15 minutes to cool down before baking.
- Bake to Perfection: Place the baking sheet with the chilled croquettes into the preheated oven. Bake for 12-16 minutes, or until the panko breading is beautifully golden brown and the filling is visibly melted and bubbly. Cooking time may vary slightly depending on the size of your croquettes.
- Serve Immediately: Remove from the oven and serve these delightful Oven-Fried Spanish Croquettes immediately, allowing your guests to savor their warm, crispy exterior and gooey, flavorful interior.
