  • 2 stalks celery, finely diced
  • 4 cloves garlic, peeled and minced
  • 1/4 cup all-purpose flour (or 1.5 tbsp cornstarch dissolved in stock for GF)
  • 1/2 cup dry red wine (or substitute with more beef stock)
  • 2 cups beef stock (or vegetable or chicken stock)
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 2 bay leaves
  • 2 sprigs each fresh rosemary and thyme (or 1.5 tbsp dried Italian seasoning)

  3. Sauté the veggies: Add the diced onion to the pan and sauté for 5 minutes. Add carrots, celery, mushrooms, and garlic; sauté for another 5-7 minutes until softened.
  4. Add flour and wine: Stir in the flour and cook for 1 minute, stirring frequently. Pour in the wine, scraping the bottom of the pan to loosen any browned bits.
