We’ve embraced a more wholesome approach, ensuring every forkful is packed with natural goodness without sacrificing the incredible flavor and satisfying crunch that made the original so popular. This salad is not only easy to prepare but also remarkably versatile, making it an ideal choice for busy weeknights, casual lunches, or impressive contributions to any social event.
The Evolution of a Classic: From Simple to Sensational
Let’s take a stroll down memory lane. The original ramen noodle salad, a true relic of the 90s, was often characterized by a straightforward ingredient list:
- Store-bought coleslaw mix
- Pre-sliced almonds
- Green onions
- A simple vinaigrette typically made with vegetable oil, white vinegar, and a generous amount of white sugar
- Canned mandarin oranges (often packed in syrup)
- And, of course, the inexpensive noodles from those classic $0.29 ramen packets, sans seasoning.
While undeniably popular, this version left room for improvement in terms of nutritional value and ingredient quality. Our modern take thoughtfully re-imagines each element, opting for freshness and natural flavors wherever possible. We still rely on the convenience of coleslaw mix (though organic is preferred), and the familiar crunch of green onions and almonds remains. However, we’ve introduced exciting new players and upgraded existing ones to create a truly exceptional salad experience.
Elevating the Ingredients: What’s New and Improved
Our goal was to enhance the salad’s nutritional profile and flavor complexity while retaining its beloved characteristics. Here’s a detailed look at the stellar ingredients that make this updated Crunchy Ramen Noodle Salad shine:
Fresh and Flavorful Salad Components:
- Cole Slaw Mix (Organic Preferred): This provides the essential crisp base and saves time on chopping. Choosing organic ensures a cleaner, more natural vegetable foundation.
- Creamy Avocado: Adds a luxurious creaminess and healthy fats, contrasting beautifully with the crunchy elements. Its mild flavor pairs well with the Asian-inspired dressing.
- Sweet Fresh Mango: A fantastic upgrade from canned mandarin oranges, fresh mango offers a natural sweetness and vibrant tropical flavor without added sugars. Its soft, juicy texture is a delightful counterpoint to the crunch. Learning how to properly cut a mango can be quite simple once you get the hang of it!
- Nutrient-Rich Edamame: These tender, shelled soybeans bring a boost of plant-based protein and a slightly chewy texture, adding depth and substance to the salad.
- Crisp Green Onions (Scallions): Essential for their mild oniony bite and fresh aroma, green onions provide a subtle sharpness that brightens the entire dish.
- Toasted Sliced Almonds: Retaining this classic ingredient ensures that beloved nutty crunch. Toasting them amplifies their flavor and aroma significantly.
- Healthier Ramen Noodles: This is where a significant upgrade happens. Instead of conventional deep-fried ramen, we recommend opting for healthier organic ramen noodles or even gluten-free ramen noodles made from brown rice. These alternatives offer the same satisfying crunch when toasted, but with fewer processed ingredients and often a better nutritional profile. Remember, you’ll only be using the noodles, discarding the seasoning packets.
The Signature Sesame Honey Vinaigrette:
The dressing is the soul of this salad, tying all the diverse textures and flavors together. Our updated vinaigrette is a harmonious blend of savory, sweet, and tangy notes, providing a light yet incredibly flavorful coating:
- Avocado Oil: A neutral-flavored, heart-healthy oil that provides a smooth base without overpowering the other ingredients. You can also use vegetable oil or any other mild cooking oil.
- Rice Vinegar: Offers a delicate, clean tang that is characteristic of many Asian-inspired dressings.
- Honey: Our preferred natural sweetener, providing a gentle sweetness that balances the tang of the vinegar and savory notes of soy sauce. Feel free to adjust to your desired level of sweetness or use another natural sweetener like maple syrup.
- Soy Sauce: Delivers a crucial umami depth and savory richness, creating that authentic Asian flavor profile. For gluten-free options, use tamari.
- Toasted Sesame Oil: A little goes a long way! This ingredient is a flavor powerhouse, providing an intensely nutty, aromatic essence that is synonymous with Asian cuisine.
- Pinch of Salt and Black Pepper: To enhance and round out all the flavors.
Mastering the Method: A Simple Guide to Assembly
Creating this irresistible Crunchy Ramen Noodle Salad is surprisingly straightforward. The key to its success lies in a few simple steps, particularly the toasting of the noodles and almonds, which unlocks their full potential for crunch and flavor.
Step-by-Step Instructions:
- Toast the Crunch: Preheat your oven to 425°F (220°C). Break the dried ramen noodles into small, bite-sized pieces and spread them evenly on a baking sheet. Add the sliced almonds to the same sheet. Stir gently to ensure an even distribution. Bake for about 5 minutes, keeping a close watch. The goal is a light golden color and a fragrant aroma. Remove from the oven, give the mixture another good stir to promote even toasting, then return it for an additional 3 minutes. This careful two-stage toasting prevents burning and ensures a perfect crispness. Let them cool slightly once removed from the oven. This step is a game-changer for flavor and texture!
- Whisk the Vinaigrette: While the noodles and almonds are toasting (or cooling), prepare your dressing. In a small bowl, whisk together the avocado oil, honey, rice vinegar, soy sauce, and toasted sesame oil until thoroughly combined and emulsified. Add a pinch of salt and black pepper to taste.
- Assemble the Salad: In a large mixing bowl, combine the coleslaw mix, shelled edamame, diced avocado, julienned or diced mango, and thinly-sliced green onions.
- Combine and Serve: Add the cooled, toasted ramen noodles and almonds to the large bowl with the other salad ingredients. Drizzle generously with the prepared sesame honey vinaigrette. Toss everything gently but thoroughly until all ingredients are well coated.
And just like that, in a matter of minutes, you’ll have a vibrant, delicious, and utterly irresistible salad ready to be enjoyed! This recipe is proof that healthy and delicious can coexist beautifully, especially when it comes to classic comfort food remakes.
The Ultimate Potluck and Picnic Companion
This Crunchy Ramen Noodle Salad isn’t just a meal; it’s an experience, and it’s perfectly suited for sharing. Its robust flavors and diverse textures make it an excellent choice for any gathering, easily complementing a variety of main dishes. Whether you’re planning a casual backyard barbecue, a formal picnic in the park, or simply need a standout side for a family dinner, this salad fits the bill beautifully.
- For Picnics: It travels well! Pack the dressing separately and toss just before serving to maintain maximum crunch. Its vibrant colors make it an appealing addition to any picnic spread.
- For Potlucks: Be prepared to share the recipe! This salad is consistently the first to disappear. It’s unique enough to stand out but familiar enough to be universally loved.
- For Everyday Meals: Don’t reserve this gem just for special occasions. It makes a fantastic light lunch, a quick dinner side, or even a meal prep option for the week.
The beauty of this salad lies in its balance. It’s light and refreshing yet satisfying, thanks to the combination of fresh produce, healthy fats from the avocado, protein from the edamame, and the delightful crunch of the noodles and almonds. It’s a versatile dish that adapts to various dietary preferences with simple modifications, making it a truly inclusive crowd-pleaser.
Customization and Variations to Make It Your Own
One of the joys of cooking is the ability to adapt recipes to suit your taste, dietary needs, or what you have on hand. This Crunchy Ramen Noodle Salad is incredibly versatile and welcomes creative modifications:
- Add Protein: For a heartier meal, consider adding grilled chicken, pan-seared shrimp, baked tofu, or even chickpeas. These additions turn the side dish into a complete and satisfying main course.
- Vegetable Swaps: While the core ingredients are fantastic, feel free to experiment with other vegetables. Shredded carrots, bell peppers, cucumber, snap peas, or even a sprinkle of cilantro or mint can add new dimensions of flavor and color.
- Nutty Alternatives: If almonds aren’t your preference, try toasted cashews, peanuts, or even sunflower seeds for a different crunchy element. Ensure they are unsalted to control the overall sodium content.
- Spice It Up: A dash of sriracha or a pinch of red pepper flakes in the vinaigrette can add a delightful kick for those who enjoy a bit of heat.
- Citrus Zest: A little lime or orange zest grated into the dressing can brighten the flavors even further.
- Gluten-Free Option: As mentioned, using organic brown rice ramen noodles is an excellent way to make this salad entirely gluten-free without sacrificing the signature crunch. Ensure your soy sauce is tamari for a fully GF dressing.
Storage Tips for Enjoying Later
While this Crunchy Ramen Noodle Salad is at its absolute best when served immediately, thanks to the crispness of the noodles, it can certainly be stored and enjoyed for a few days. Here are some tips to maximize its freshness:
- Immediate Serving is Key: For the ultimate crunch, prepare and toss the salad right before serving. This prevents the noodles from softening too much from the dressing.
- Refrigeration: Cover any leftovers tightly and refrigerate for up to 3 days.
- Managing the Crunch: Be aware that the ramen noodles will naturally soften over time once mixed with the dressing. While it will still be delicious, it won’t have the same intense crunch as on day one. If you anticipate leftovers, you might consider storing a portion of the toasted noodles and dressing separately, then adding them just before eating.
- Avocado Browning: Avocado may brown slightly over time. A squeeze of lemon or lime juice over the avocado before adding it to the salad can help mitigate this, but it’s a natural oxidation process. Even if slightly browned, the salad remains perfectly edible and tasty.
This salad offers both convenience and incredible flavor. So go ahead, enjoy it fresh, and don’t hesitate to savor the delicious leftovers!

Description
This delicious Crunchy Ramen Noodle Salad recipe is tossed with a simple sesame vinaigrette…and tastes absolutely delicious!
Ingredients
Scale
Salad Ingredients:
- 1 (16-ounce) bag coleslaw mix
- 2 (3-ounce) packages of ramen noodles*, crumbled (you will not use the seasoning packet)
- 1 cup shelled and cooked edamame
- 1 avocado, peeled, pitted and diced
- 1 mango, peeled, pitted, and julienned (or diced)
- 1/2 cup thinly-sliced almonds
- 1/2 cup thinly-sliced green onions (scallions)
- Sesame honey vinaigrette (see ingredients below)
Sesame Honey Vinaigrette
- 1/2 cup avocado oil (or vegetable oil, or any cooking oil)
- 1/4 cup honey (or your desired sweetener)
- 1/4 cup rice vinegar
- 2 teaspoons soy sauce
- 1/4 teaspoon toasted sesame oil
- pinch of salt and black pepper
Instructions
To Make The Salad:
- Heat oven to 425°F (220°C). Spread the crumbled ramen noodles and sliced almonds out on a baking sheet, and stir a bit to combine. Bake for about 5 minutes, or until the almonds and noodles are slightly toasted and golden. Remove baking sheet, and give the mixture a good stir to toss. Then return it to the oven and toast for an additional 3 minutes. Keep a very close eye on the mixture so that it does not burn. Remove and set aside to cool slightly.
- Add all salad ingredients (coleslaw, edamame, avocado, mango, green onions, and the cooled toasted noodles/almonds) together in a large bowl.
- Drizzle the prepared vinaigrette over the salad mixture and toss until all ingredients are well combined and coated.
- Serve immediately, or cover and refrigerate for up to 3 days. (This salad is much better eaten the first day, as the noodles lose their “crunch” the longer it sits, and the avocado may brown a bit. Still, it’s perfectly edible and enjoyable even after a few days!)
To Make The Vinaigrette:
- In a small bowl, whisk all vinaigrette ingredients together until thoroughly combined and emulsified.
Notes
*You can use any kind of packaged ramen noodles for this recipe. If you’d like organic (and less-processed) alternatives to the classic $0.30 packets at the grocery store, I recommend these organic classic ramen noodles or organic brown rice ramen noodles.
**I also like sprinkling mine with some toasted sesame seeds (I used black sesame seeds in the photo), but that’s totally optional for an extra touch of flavor and visual appeal.
