  • 4 cups vegetable stock
  • 1 cup beer (or you can just add extra vegetable broth for a non-alcoholic version)
  • 2 Tablespoons chili powder
  • 1 Tablespoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 teaspoon black pepper
  • (Optional toppings: shredded cheddar cheese, crushed tortilla chips or strips, thinly-sliced green onions, sour cream, salsa, fresh avocado, fresh cilantro, hot sauce, etc.)

Combine Ingredients: Add all listed ingredients (farro/quinoa, onion, garlic, chipotle chili, all beans, tomato sauce, diced tomatoes, green chiles, vegetable stock, beer/broth, chili powder, cumin, salt, sugar, and black pepper) to a 6-quart or larger slow cooker. Stir thoroughly to ensure all ingredients are well combined and evenly distributed.
  2. Cook: Cover the slow cooker with its lid. Cook on high for 3-4 hours, or on low for 6-8 hours, until the chili is rich, thick, and all ingredients are tender. The longer cook time on low allows for deeper flavor development.
  3. Season and Serve: Once cooked, taste the chili and adjust seasonings as needed. You might want to add a pinch more salt, pepper, or your preferred spices. Ladle into bowls and serve immediately, garnished generously with your favorite optional toppings.

  4. Combine and Serve: Once the farro/quinoa is cooked, add the entire contents of the small pot (cooked grain and any remaining vegetable stock) to the simmering chili. Stir thoroughly to combine. Taste and adjust seasonings as desired. Serve hot, garnished with your preferred toppings.
