  • 5 cups thinly sliced (and peeled, if desired) ripe peaches (about 6 or 7 medium-sized peaches)
  • 1/2 cup granulated white sugar
  • 1/2 cup packed light brown sugar
  • 1/2 cup all-purpose flour
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • A pinch of fresh nutmeg
  • 2 tsp fresh lemon zest
  • 1 tsp fresh lemon juice
  • 1/4 cup quality bourbon
  • 1 Tbsp unsalted butter (or vegan butter for a fully vegan pie)
  • A splash of milk (or plant-based milk) and a sprinkle of sugar, for brushing the crust
  • 1 chilled double (unbaked) pie crust recipe (homemade or store-bought)

Instructions

  1. Prepare the Filling: In a large mixing bowl, thoroughly whisk together the flour, white sugar, brown sugar, cinnamon, nutmeg, and salt. Add the lemon zest. Add the thinly sliced peaches to the dry mixture and gently toss to ensure they are evenly coated. Next, pour in the lemon juice and the bourbon, tossing again until all the peaches are beautifully and uniformly coated with the flavorful mixture.
  2. Assemble the Pie: On a lightly floured surface, roll out one half of your chilled pie dough into a 12-inch circle. Carefully transfer this dough to a 9-inch pie pan, pressing it gently into the bottom and up the sides. After 30 minutes, reduce the oven temperature to 350 degrees Fahrenheit (175 degrees Celsius) and continue to bake for an additional 25-30 minutes, or until the crust is a beautiful golden brown and the filling is visibly bubbling around the edges. If you notice the crust browning too quickly, loosely cover the edges or the entire top of the pie with aluminum foil to prevent over-browning.
