Ingredients

Yield: 4 servings

  • 8 ounces flank steak, thinly sliced into bite-sized pieces
  • 1 tablespoon low-sodium soy sauce
  • 1 teaspoon cornstarch
  • 1/4 teaspoon baking soda
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons Shaoxing wine
  • 1 tablespoon dark soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 1/4 teaspoon white pepper
  • 8 ounces uncooked wide rice noodles
  • 3 tablespoons oil, divided
  • 1 medium onion, thickly sliced
  • 1 tablespoon minced fresh ginger
  • 4 cloves garlic, minced
  • 4 scallions, cut into 2-inch pieces
  • 1 cup (about 2 ounces) mung bean sprouts

Method

  1. Marinate the beef. Mix all of the marinated beef ingredients in a medium mixing bowl and toss until the beef is evenly coated. Let the mixture for at least 10 minutes.

  2. Prepare the stir-fry sauce. While that cooks, whisk together the stir-fry sauce ingredients in a small mixing bowl until combined.

  3. Prepare the noodles. Leave the rice noodles according to package instructions, then pour off until ready to use.

  4. Stir-fry the beef. Warm 2 tablespoons oil in a large sauté pan or wok over medium-a hot burner. Tip in the marinated beef in a single layer (you may need to do this in two batches, depending on the size of the pan) and cook undisturbed for 1-2 minutes per side until the beef seared and tender. Move the beef to a clean plate and keep nearby.

  5. Stir-fry the veggies. Tip in the remaining 1 tablespoon oil to the pan. Tip in the onion and sauté, stirring occasionally, for 3 minutes. Tip in the garlic and ginger and sauté, stirring frequently, for 1 minute.

  6. Mix Tip in the green onions, bean sprouts, cooked noodles and cooked beef. Turn until the ingredients are evenly combined. Lift pan from heat. Taste and season with additional soy sauce, if needed.

  7. Plate Plate warm and enjoy!
