Beef and Broccoli at home is a beef recipe on Avoteb. The yield on the card is 4. Plan on 30 minutes from start to plate. The amounts and the method are both on this page.

Ingredients

Yield: 4 servings

  • 1 pound flank steak
  • 1 tablespoon cornstarch
  • 1 tablespoon neutral oil
  • 1 tablespoon soy sauce
  • 1/4 teaspoon baking soda
  • 1/2 cup beef stock
  • 2 tablespoons oyster sauce
  • 2 tablespoons Shaoxing wine*
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon dark soy sauce
  • 1/8 teaspoon white pepper
  • 2 tablespoons neutral oil
  • 1 (12-ounce) bag broccoli florets
  • 4 scallions, sliced into 2-inch pieces
  • 1 tablespoon grated or minced fresh ginger
  • 4 cloves garlic, grated or minced
  • 1/2 teaspoon sesame oil

Method

  1. Marinate the steak. Thinly slice the steak against the grain into bite-sized pieces. In a small mixing bowl, whisk together the cornstarch, oil, soy sauce and baking soda until combined. Tip in the steak and toss to coat. Set the bowl aside and let the steak marinate for at least 10 minutes (or up to 30 minutes).

  2. Prepare the sauce. In a separate bowl, whisk all of the sauce ingredients together until combined.

  3. Stir-fry the broccoli. Tip in 1 tablespoon of the oil to a large sauté pan or wok over medium-a hot burner. Tip in the broccoli and sauté, stirring occasionally, for 6 to 8 minutes or until crisp tender. Move the broccoli to a clean plate and keep nearby.

  4. Stir-fry the beef. Tip in the remaining tablespoon of oil to the pan. Tip in the beef in as even a layer as possible. Leave undisturbed for about 1 minute or until the bottom side has caramelized. Flip the beef, add in the ginger and garlic, and cook for 1-2 more minutes, stirring and flipping the mixture as needed, until the beef is nearly cooked through to your liking. (It will continue to cook slightly more in the sauce.)

  5. Mix Carefully add the broccoli, scallions and sauce to the pan (be careful, the liquid may sputter!) and toss everything until evenly combined. Continue cooking for 30-60 seconds or until the sauce has thickened. Lift from heat and mix in the sesame oil until combined.

  6. Salt Taste and season with additional soy sauce if needed.

  7. Plate Plate warm over rice (or fried rice) and enjoy!
