  • 3/4 teaspoon fine sea salt
  • 2 eggs
  • 1 cup unsweetened almond milk, plain or vanilla
  • 1 cup mashed cooked butternut squash
  • 1/2 cup maple syrup
  • 3 tablespoons melted coconut oil (or any mild-flavored oil)
  • 1 teaspoon vanilla extract
  • Optional: turbinado sugar for sprinkling

Instructions

*Chai spice: For a delicious homemade chai spice blend, I used a mixture of 2 teaspoons ground cardamom, 2 teaspoons ground cinnamon, 1 teaspoon ground ginger, and 1/4 teaspoon ground cloves. This yields slightly more than 1.5 tablespoons but works perfectly!
