These bowls aren’t just a meal; they’re a complete culinary experience that caters to both your health goals and your cravings. Here’s why they’re quickly becoming a household favorite:
- A Burst of Flavors: The combination of zesty seasonings on the roasted vegetables, the smoky heat from the chipotle, and the bright tanginess of lime in the dressing creates an explosion of flavors. Each spoonful offers a delightful mix of savory, sweet, and spicy notes that keeps you coming back for more.
- Nutrient-Dense and Wholesome: Packed with fiber from sweet potatoes and chickpeas, iron from spinach, and healthy fats from avocado, these bowls are a powerhouse of nutrition. They’re designed to keep you feeling satisfied and energized without the heavy feeling often associated with less healthy meals.
- Effortless to Prepare: Despite their gourmet appeal, these bowls are surprisingly simple to make. With a straightforward roasting process for the sweet potatoes and chickpeas, a quick sauté for the spinach, and a blitz in the blender for the dressing, you can have a nourishing meal on the table in under an hour. It’s perfect for busy weeknights or for efficient meal prepping.
- Naturally Vegan and Gluten-Free: Catering to a variety of dietary needs, this recipe is inherently plant-based and free of gluten. It’s an inclusive dish that everyone at your table can enjoy, offering deliciousness without compromise.
- Highly Customizable: These bowls serve as an excellent canvas for customization. Feel free to swap out vegetables, add different proteins, or experiment with various toppings to suit your preferences or utilize what you have on hand. It’s a recipe that encourages creativity in the kitchen.
- The Unforgettable Chipotle Tahini Dressing: This dressing truly elevates the entire dish. Its rich, creamy texture and complex flavor profile – a perfect balance of nutty tahini, bright lime, subtle sweetness from maple syrup, and a kick from chipotle in adobo – makes it incredibly versatile and utterly addictive.
Essential Ingredients for Your Bowl
Crafting these delectable bowls begins with selecting fresh, quality ingredients. Here’s a closer look at what you’ll need and why each component is vital:
- Chipotle Tahini Dressing: The heart of this dish! This incredible dressing is a harmonious blend of creamy tahini, fresh lime juice for that essential tang, a touch of maple syrup to balance the flavors, and chipotle in adobo sauce for a smoky, spicy depth. A little water helps achieve the perfect consistency. The beauty of this dressing lies in its simplicity and profound impact on the overall flavor of the bowl.
- Sweet Potatoes: These vibrant tubers form the hearty, slightly sweet base of our roasted component. Rich in vitamins, fiber, and antioxidants, sweet potatoes not only add nutritional value but also a wonderful caramelization when roasted. There’s no need to peel them unless preferred; simply dice them into 1/2-inch cubes for even cooking. For a time-saving hack, pre-diced frozen sweet potatoes work wonderfully too.
- Chickpeas: A fantastic source of plant-based protein and fiber, chickpeas provide a delightful textural contrast with their crispy exterior once roasted. To achieve maximum crispiness, it’s crucial to rinse and thoroughly pat them dry with a clean kitchen or paper towel, removing as much moisture as possible before tossing them with oil and seasonings.
- Seasonings: A robust blend of chili powder, ground cumin, garlic powder, sea salt, and black pepper transforms plain sweet potatoes and chickpeas into a flavorful explosion. These spices offer warmth, depth, and a touch of earthiness. For those who love an extra kick, a pinch of cayenne pepper can be added to the mix.
- Sautéed Spinach: Fresh baby spinach, quickly sautéed with olive oil, aromatic onion, and garlic, adds a vital element of freshness and a boost of greens to the bowl. It’s a simple addition that enhances both the nutritional profile and the overall flavor.
- Avocado: Slices of ripe avocado introduce a luxurious creaminess and healthy monounsaturated fats, perfectly balancing the zesty and smoky notes of the other ingredients. If you happen to have a batch of fresh guacamole on hand, a scoop makes an excellent alternative.
- Rice or Grains: To ensure a truly satisfying and filling meal, a base of cooked brown rice, farro, or quinoa is recommended. These whole grains provide complex carbohydrates and an earthy foundation. To expedite prep, consider using convenient pre-cooked frozen or packaged grains, now widely available.
- Toppings: Don’t underestimate the power of toppings! A generous sprinkle of fresh cilantro, hemp hearts for added protein and healthy fats, crunchy pepitas (pumpkin seeds), and/or salty cotija cheese (if not strictly vegan) adds an extra layer of flavor and texture that truly elevates the bowl.

Top Tips for Crafting Perfect Bowls
Achieving restaurant-quality results at home is easier than you think with these expert tips:
- Ensure Chickpeas Are Bone Dry Before Roasting: This is arguably the most crucial step for crispy chickpeas! After rinsing and draining, spread them out on a clean kitchen towel or paper towel and rub them vigorously. The drier they are, the crispier they will become in the oven, preventing them from steaming instead of roasting.
- Roast Sweet Potatoes and Chickpeas in a Single, Even Layer: Overcrowding your baking sheet is the enemy of crispiness. When sweet potatoes and chickpeas are spread in an even layer, hot air can circulate freely around each piece, promoting caramelization and browning. If your batch seems too large for one sheet, don’t hesitate to use two to ensure perfect results.
- Avoid Overcooking the Spinach: Spinach cooks incredibly fast. Once you add it to your sauté pan with the garlic and onions, it will wilt down in a matter of minutes. Toss it gently and frequently with tongs until it has just wilted, then immediately remove it from the heat. This preserves its vibrant color, delicate texture, and nutritional value, preventing it from becoming soggy.
- Be Generous with Your Toppings: Toppings are not mere garnishes; they are integral to the experience of these bowls. Fresh cilantro adds a burst of freshness, hemp hearts and pepitas contribute delightful crunch and nutrients, and cotija cheese (if using) provides a salty, tangy counterpoint. Don’t be shy – load them up!
- Consider Meal Prep: These bowls are excellent for meal prepping. You can roast the sweet potatoes and chickpeas, prepare the dressing, and cook the grains in advance. Store each component separately in airtight containers in the refrigerator. When it’s time to eat, simply warm the roasted components and grains, sauté fresh spinach, assemble, and add avocado and toppings.

Creative Recipe Variations to Explore
The beauty of these bowls lies in their versatility. Feel free to get creative and adapt the recipe to your liking with these fun variations:
- Experiment with Different Vegetables: While sweet potatoes are stellar, almost any roasting-friendly vegetable can be substituted or added. Consider broccoli florets, cauliflower, bell peppers (any color), red onions, asparagus, Brussels sprouts, or even cherry tomatoes. Adjust roasting times as needed for different vegetables.
- Swap Out the Greens: Instead of baby spinach, try heartier greens like finely chopped kale, collard greens, or Swiss chard. These greens might require a slightly longer sauté time to become tender.
- Incorporate Additional Beans: For an extra boost of protein and fiber, add a scoop of black beans or pinto beans to your bowl. They pair wonderfully with the existing flavors.
- Add Different Proteins: While the chickpeas offer ample protein, you can enhance the protein content further. Top your bowl with a fried or scrambled egg for breakfast or brunch, or add some baked tofu, tempeh, grilled chicken, or pan-seared salmon for a different meal.
- Adjust the Spice Level: If you prefer more heat, increase the amount of chipotle in adobo in the dressing, or add a pinch of cayenne pepper to the sweet potato and chickpea seasoning. For a milder version, reduce the chipotle or omit it entirely and add a pinch of smoked paprika for a smoky flavor without the heat.
- Try Alternative Dressings: While the chipotle tahini dressing is a star, feel free to experiment with other dressings. A creamy avocado lime dressing, a simple lemon-herb vinaigrette, or even a spicy peanut sauce could offer a delightful twist.
- Serve as a Side Dish: These roasted sweet potatoes and chickpeas can also be served as a flavorful side dish for various main courses, or the entire bowl can be enjoyed as a hearty salad without the grain base.

Description
These zesty roasted sweet potato and chickpea bowls are layered with sautéed spinach and brown rice and tossed with my favorite 4-ingredient chipotle tahini dressing. Naturally gluten-free and vegan too.
Ingredients
Bowl Ingredients:
- 1 1/2 pounds sweet potato, diced into 1/2-inch cubes
- 1 (15-ounce) can chickpeas, rinsed, drained and patted dry
- 2 tablespoons olive oil, divided
- 2 teaspoons chili powder
- 1 teaspoon each: ground cumin, garlic powder
- fine sea salt and freshly-ground black pepper
- half of a small white onion, thinly sliced
- 2 cloves garlic, thinly sliced
- 5 ounces baby spinach
- 4 cups cooked brown rice, farro or quinoa
- 1 ripe avocado, thinly sliced
- toppings: chopped fresh cilantro, hemp hearts, pepitas, and/or cotija cheese
Chipotle Tahini Dressing
- 1/2 cup water
- 1/4 cup tahini
- 2 tablespoons lime juice
- 1 to 2 teaspoons maple syrup
- 1 large chipotle in adobo sauce (plus 1 teaspoon adobo sauce)
Instructions
- Prep the oven and baking sheet. Heat oven to 425°F (220°C). Line a large baking sheet with parchment paper.
- Roast the sweet potatoes and chickpeas. Add the diced sweet potatoes and thoroughly dried chickpeas to a large mixing bowl. Drizzle evenly with 1 tablespoon of olive oil and sprinkle with chili powder, ground cumin, and garlic powder. Toss until all ingredients are well combined. Spread the mixture out onto the prepared baking sheet in a single, even layer, ensuring no overcrowding. Season generously with sea salt and black pepper. Bake for 30 minutes, or until the sweet potatoes are tender and lightly caramelized, and the chickpeas are delightfully crispy. Once baked, transfer the baking sheet to a wire rack.
- Prepare the dressing. Combine all dressing ingredients — water, tahini, lime juice, maple syrup, and chipotle in adobo sauce (including 1 teaspoon of the adobo sauce) — in a blender. Purée until the mixture is completely smooth and creamy. Taste and adjust seasoning with additional salt, pepper, or lime juice if desired.
- Sauté the spinach. In a large sauté pan, heat the remaining 1 tablespoon of olive oil over medium-high heat. Add the thinly sliced white onion and sauté for 4-5 minutes, stirring occasionally, until it has softened and become translucent. Add the thinly sliced garlic and sauté for another minute, stirring to prevent burning. Finally, add the baby spinach along with a generous pinch of salt and pepper. Cook, tossing frequently with tongs, until the spinach has just wilted. Remove the pan from the heat immediately.
- Assemble and serve. In each serving bowl, portion out the cooked brown rice (or chosen grain), a generous serving of the roasted sweet potatoes and crispy chickpeas, and a helping of the sautéed spinach. Arrange a few slices of ripe avocado on top. Drizzle generously with the prepared chipotle tahini dressing. Finish by adding your desired toppings, such as fresh chopped cilantro, hemp hearts, pepitas, and/or cotija cheese. Serve immediately and enjoy the harmonious blend of flavors and textures!
