As a long-time admirer of ATK’s meticulous approach to recipes—I’ve probably gifted 50 copies of The New Best Recipe as wedding presents over the years, deeming it essential for aspiring cooks—I eagerly acquired their gluten-free volume.
And it did not disappoint! While I’ve experimented with gluten-free cooking for friends over the years, this cookbook finally offers concrete answers to the scientific intricacies behind ingredient combinations, especially how different gluten-free flours interact with various main components. It demystifies the process, making allergy-friendly baking approachable and consistently successful. If you’re seeking a foundational gluten-free cookbook, I wholeheartedly recommend picking up a copy. This isn’t a paid endorsement, simply a genuine recommendation borne from fantastic results.

Flax Eggs: The Vegan Baking Marvel
To transform the ATK recipe into a truly vegan delight, I made a few key adjustments. Beyond fine-tuning the spices and salt to my preferred carrot cake profile, the most significant change involved substituting traditional eggs with flax eggs. Chia eggs also work beautifully and often impart less flavor, but flax eggs are my go-to for their reliable binding properties.

- 2.5 cups (12.5 ounces) gluten-free all-purpose flour blend (Bob’s Red Mill GF All-Purpose Baking Flour is recommended), plus extra for dusting the pans
- 1 Tablespoon ground cinnamon
- 1 1/4 teaspoon baking powder
- 1 1/4 teaspoon baking soda
- 1 teaspoon salt
- 1/2 teaspoon ground nutmeg
- Pinch of ground cloves
- Pinch of ground ginger
- 1 pound carrots, peeled and freshly grated
- 1 cup granulated sugar
- 1 cup light brown sugar, packed
- 4 flax eggs (*Prepared using 1/4 cup ground flaxmeal and 3/4 cup water; refer to instructions below*)
- 3/4 cup vegetable oil

- 8 cups gluten-free powdered sugar
- 1 1/2 cups (3 sticks) vegan butter or margarine, softened
- 3 Tablespoons unsweetened non-dairy milk (almond milk works well)
- 1 Tablespoon apple cider vinegar
- 2 teaspoons vanilla extract
- 1 teaspoon fresh lemon juice
- Pinch of salt
Instructions
Prepare your oven and baking pans:
- Adjust your oven rack to the middle position and preheat to 350 degrees F (175°C).
- Thoroughly grease the inside of your chosen baking pan(s) with cooking spray or vegan butter. You can use:
- One 9×13-inch baking pan, or
- Two 9-inch round cake pans, or
- Three 8-inch round cake pans
- Dust the inside of each prepared pan with gluten-free flour until the grease is completely covered, ensuring no spots of the pan are visible.
Prepare the dry and wet ingredients:
- In a large separate bowl, whisk together the gluten-free all-purpose flour blend, baking powder, baking soda, cinnamon, nutmeg, salt, ground cloves, and ground ginger until thoroughly combined.
- Using a food processor fitted with the large shredding disk, shred the peeled carrots. Transfer the shredded carrots to the mixing bowl containing the dry flour mixture.
- Wipe the food processor bowl clean, then replace the shredding disk with the metal blade. Add the granulated sugar, light brown sugar, and prepared flax eggs (see notes for preparation) to the food processor. Process until the mixture is frothy and well combined, which should take about 20 seconds.
- With the food processor running, gradually add the vegetable oil in a steady stream. Continue processing until the egg mixture is light in color and thoroughly emulsified, approximately 20 more seconds.
Combine and bake the cake batter:
- Transfer the wet egg mixture from the food processor to the large bowl containing the carrots and flour. Using a rubber spatula, gently stir the mixture until everything is just combined. If you are adding nuts, fold them in now until evenly distributed.
- Pour the cake batter evenly into your prepared pan(s).
- Bake until a toothpick inserted into the center of the cake comes out clean. Baking times will vary depending on the pan size:
- For a 9×13-inch baking pan: 30-35 minutes
- For two 9-inch round cake pans: 25-30 minutes
- For three 8-inch round cake pans: 18-23 minutes
- Allow the cake to cool completely in the pan(s) on a wire rack for about 1 hour. Once cooled, run a knife around the edge of the cake to loosen it. Carefully remove the cake from the pan(s) if transferring to a different serving platter, and then proceed to frost as desired.
How to make the Vegan Gluten-Free “Cream Cheese” Frosting:
- Combine all the frosting ingredients (gluten-free powdered sugar, vegan butter/margarine, non-dairy milk, apple cider vinegar, vanilla extract, lemon juice, and a pinch of salt) in the bowl of a stand mixer or a food processor.
- Mix on medium speed until the frosting is smooth, creamy, and well combined. If the frosting appears too thick, add a bit more non-dairy milk (1 teaspoon at a time) to thin it. If it’s too thin, gradually add more powdered sugar until it reaches your desired consistency.
Notes
**How to prepare flax eggs: To create one flax egg, simply stir together 1 tablespoon of freshly-ground flaxmeal with 3 tablespoons of water until well combined. For this recipe, which requires 4 eggs, you would multiply these amounts by four (using 1/4 cup ground flaxmeal and 3/4 cup water).
Refrigerate the mixture for at least 15 minutes to allow it to thicken. After chilling, remove and whisk again; the mixture should be thick and sticky, ready to act as a perfect binder in your vegan baking.
