Delicious Honey Lemon Cupcakes with Honey Cream Cheese Frosting

A recent exciting development in my loft building brought about a wave of community spirit: we finally acquired a grill! After countless attempts to host barbecue nights in my small apartment, often filling it with smoke from my trusty grill pan, it became abundantly clear that summer was the perfect season for a genuine outdoor grilling experience. My friend, Liz, and I took the initiative, petitioning our building management for approval. To our pleasant surprise, they agreed, and a gleaming new grill was delivered to our loft building just last Friday. This marked a monumental success for our communal living space!

To inaugurate this fantastic new addition, I spontaneously found myself orchestrating the very first of our “Neighbor Nights” (#neighbornights, as we’ve affectionately dubbed them) over the past weekend. My initial plan involved grilling some shrimp and zucchini, but I confess I had no idea if anyone would actually show up. I began a flurry of text messages to everyone I knew in the building and spread the word to every familiar face I encountered on the stairwell. Slowly but surely, responses started trickling in, confirming attendance. Soon, it became evident that quite a crowd was planning to join the celebration.

My excitement was palpable, but the internal host in me quickly surfaced, bringing with it the familiar worry: would there be enough food? (Despite never actually running out of food, or even coming close, at any gathering I’ve hosted, I suppose everyone is entitled to an irrational fear. At least mine consistently leads to an abundance of delicious leftovers!) So, I made a quick dash to the market, stocking up on essentials. My haul included ingredients for a humongous strawberry spinach salad, a generous batch of balsamic-marinated vegetables perfect for grilling, and several pounds of shrimp, which I planned to season with my favorite blackening spice blend from the local spice merchant. It felt like enough food to feed a small army, ensuring no one would leave hungry.

However, no good meal is truly complete without dessert, and my mind was utterly fixed on cupcakes. While perhaps not traditional “grill food,” they are unequivocally my kind of dessert. And for some reason, on a warm summer night, a rich, creamy batch of cream cheese frosting sounded like absolute perfection.

That week, my thoughts had been particularly drawn to honey after discovering the Haagen-Dazs for Honey Bees initiative. This is a remarkably significant project that Haagen-Dazs actively supports through various innovative approaches (and I wholeheartedly encourage you to explore it too!). Inspired by this, I decided to bake cupcakes as a sweet gesture of support, incorporating my favorite comforting hot tea combination: honey and lemon.

The honey lemon cupcakes surpassed all my expectations! Each bite offered a perfect harmony of sweet and tart, tasting incredibly fresh thanks to the generous inclusion of freshly squeezed lemon juice and vibrant lemon zest. To complement these exquisite cakes, I prepared a substantial batch of luscious honey cream cheese frosting, piping it on each cupcake with a flourish. Just after capturing these photos, I had a sudden burst of inspiration to sprinkle a little extra lemon zest on top, adding a final, charming touch that truly elevated their appeal.

True to form, as I began to ferry my impressive smorgasbord of grilled delights and, of course, the cupcakes, downstairs to the grill area, I also brought along some delightful treats from my recent Moment for Me surprise box from Haagen-Dazs – an assortment of tasty snacks, crisp white wine, and refreshing limoncello gelato. I was overjoyed to discover that others had already arrived, drinks in hand, eagerly awaiting the festivities. Naturally, they too had brought an impressive array of food, confirming my usual observation that a food shortage is never a concern at our gatherings. We swiftly loaded up the new grill, with everyone taking turns cooking a variety of brats, fresh vegetables, flavorful kabobs, succulent fish, and juicy burgers. Soon, we had an absolute feast spread before us, promising an unforgettable evening.

As the evening progressed, more and more neighbors joined the gathering, including friends from the surrounding lofts who simply couldn’t resist missing out on the burgeoning fun. Even the talented chefs from the farm-to-table restaurant next door graced us with their presence, generously contributing some enormous, fresh pork chops as a “grill-warming” gift to the hungry crowd. Every attendee, it seemed, brought their beloved dogs, who were absolutely thrilled to spend the evening off-leash, romping and playing, and, of course, diligently inspecting for any fallen crumbs. The atmosphere was vibrant, filled with laughter, delicious aromas, and the joyous camaraderie that defines true community.

After everyone had indulged in the savory dinner and was thoroughly stuffed, they enthusiastically insisted on making room for dessert. Having experimented with the recipe, I had prepared a triple batch of cupcakes, ensuring there were more than enough to go around. We even had some delightful extras, which we happily shared with surprised passersby enjoying a Friday night stroll through the market.

Needless to say, the honey lemon cupcakes were an absolute sensation. Everyone present asked for the recipe, gushing effusively over the sheer magic that is cream cheese frosting. While they might not have been traditionally considered “grill food,” I am quite certain they provided the perfect, sweet conclusion to our inaugural and undeniably successful grilling neighbor night.

Ingredients

Honey Lemon Cupcake Ingredients:

  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 cup milk (whole or 2%)
  • 1/4 cup honey (local honey for best flavor)
  • 1 Tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • 2 Tbsp finely grated lemon zest (from about 2 medium lemons)

Honey Cream Cheese Frosting Ingredients:

  • 1 (8 ounce) package cream cheese, softened to room temperature
  • 1/4 cup unsalted butter, softened to room temperature
  • 1/3 cup honey
  • 3–4 cups powdered sugar, sifted (adjust to desired consistency)

Instructions

To Make The Honey Lemon Cupcakes:

  1. Preheat your oven to 350 degrees F (175 degrees C). Line a standard muffin tin with paper baking cups.
  2. In a large bowl, using an electric stand mixer fitted with the paddle attachment (or a hand mixer), cream together the softened butter and granulated sugar on medium-high speed for about 2 minutes, until light and fluffy. Add the eggs one at a time, mixing well after each addition until just combined and scraping down the sides of the bowl as needed.
  3. In a separate medium bowl, whisk together the all-purpose flour, baking powder, and salt. In a smaller bowl, combine the milk, honey, vanilla extract, fresh lemon juice, and lemon zest.
  4. Gradually add half of the dry flour mixture to the butter mixture, beating on low speed until just combined. Pour in the wet milk mixture, then add the remaining flour mixture, continuing to mix on low speed until the batter is smooth and just combined. Be careful not to overmix.
  5. Fill each baking cup approximately 2/3 of the way full with batter. (For tips on achieving uniformly filled cupcakes, check out this helpful post). Bake for 18-20 minutes, or until a wooden toothpick inserted into the center of a cupcake comes out clean. Transfer the baked cupcakes to a wire rack to cool completely before applying frosting.

To Make The Honey Cream Cheese Frosting:

  1. In a clean bowl, using an electric mixer, beat the softened cream cheese, room temperature butter, and honey together on medium speed until the mixture is light, fluffy, and well combined, usually about 2-3 minutes. Gradually add the sifted powdered sugar, one cup at a time, beating until you reach your desired consistency and sweetness. Add more powdered sugar if you prefer a thicker frosting. Once smooth, pipe or spread generously onto the cooled cupcakes. For an extra touch, garnish with a sprinkle of fresh lemon zest.

Joyful moments shared over Honey Lemon Cupcakes

To be honest, I initially intended to write about the serene experience of making these cupcakes as my personal Moment for Me – a project with Haagen-Dazs where a few bloggers celebrate those cherished small and large moments (#hdmoments) we carve out for ourselves to recharge and savor. However, as with some of my previous posts for this campaign, I’ve come to realize that, more often than not, my most treasured moments are those shared with wonderful friends – especially when delicious food is involved.

I will always find immense joy in my kitchen, meticulously mixing batter, taste-testing, and adding that extra teaspoon of lemon zest here and there. Cooking and baking have always been an intensely comforting and deeply rewarding part of my daily life. Yet, when it came to these honey lemon cupcakes, the “moments” I will undoubtedly cherish most were the collective ones: seeing my friends’ faces light up at the sight of a table laden with sweet treats, their eager bounce towards the cupcake display after finishing their last bite of grilled steak, and the sheer delight in their eyes as they savored the first bite, happily licking frosting from their fingers, laughing as the ever-vigilant dogs sat nearby, on high alert for any potential crumbs.

These are the kinds of moments that fill me with profound gratitude and serve as a powerful reminder of why I began cooking and baking in the first place. Life is undeniably sweeter when shared, and even more so when accompanied by delightful treats like these vibrant Honey Lemon Cupcakes. They truly embody the spirit of community, connection, and culinary joy.
