- 3 pounds red (or Yukon Gold) potatoes, roughly cut into 1-inch pieces
- 4 tablespoons (¼ cup) butter, divided
- 1 small white onion, peeled and diced (about 1 cup)
- 1 small green bell pepper, cored and diced (about 1 cup)
- 1 small red bell pepper, cored and diced (about 1 cup)
- 1 jalapeno, seeded and finely diced (optional, for extra heat)
- 2 (4-ounce) cans Old El Paso chopped green chiles
- 1 ½ cups shredded sharp cheddar cheese
- ¾ cup milk, warmed (add more if needed)
- 1 teaspoon salt, or more to taste
- ½ teaspoon black pepper, or more to taste

- Add the roughly cut potatoes to a large stockpot and cover them generously with cold water. Place the stockpot over high heat and bring the water to a rolling boil. Once boiling, reduce the heat to medium-high and continue to boil for about 15-20 minutes, or until the potatoes are completely fork-tender (meaning you can easily mash them with a fork). Carefully drain the water, then return the cooked potatoes to the empty stockpot.
- While the potatoes are cooking, prepare your flavorful vegetable mixture. Heat 1 tablespoon of the butter in a large sauté pan over medium-high heat until it’s fully melted and slightly shimmering. Add the diced onion to the pan and sauté for about 5 minutes, stirring occasionally, until the onion pieces become soft and translucent.
