Easy Enchilada Cups: Your Ultimate Game Day Finger Food

There’s a reason they call it March Madness. The electric energy that sweeps through downtown Kansas City each spring is truly something to behold. My loft, just a few blocks from the Sprint Center, became an epicenter of fervent fandom during the Big XII tournament last week. The streets buzzed with activity, a kaleidoscope of team colors worn with pride, as fans scouted the perfect spot to catch the next thrilling game. The continuous roar of cheers, day and night, echoed through the buildings and into my open windows, serving as the week’s unofficial soundtrack. And of course, every Kansas City resident, myself included, cheered extra loud for our beloved Kansas Jayhawks, who continue their impressive run as the #1 seed. Rock Chalk!

While some of my neighbors may grumble about the downtown takeover and the perennial parking challenges, I’ve always found the festive atmosphere invigorating. I admit I’m more of a “social sports fan” – someone who enjoys the communal experience more than dissecting every play. I might have seen a grand total of 1.2 games this season before the tournament, but when it comes to gathering with friends to watch the tournament games, I’m all in! And naturally, I’m always ready to contribute a delicious, crowd-pleasing snack to the spread.

Today, I’m thrilled to share one of my latest culinary creations, perfect for any gathering: Easy Enchilada Cups.

The Inspiration Behind These Customizable Bites

These delightful enchilada cups came to life during one of my routine spring cleaning missions, specifically targeting the fridge and pantry. As usual, I found myself with an abundance of enchilada sauce, black beans, and flour tortillas. My initial thought was to whip up a traditional batch of enchiladas, but for game day, I wanted something a little more convenient, something that could be easily enjoyed as a finger food without the need for plates and forks. That’s when inspiration struck: what if I could transform those humble flour tortillas into charming, bite-sized cups?

The experiment was a resounding success! With a simple press into a standard muffin pan, the tortillas were baked until perfectly crispy, forming sturdy little vessels ready to be filled with flavor. The transformation was surprisingly effortless and incredibly effective.

Crafting the Perfect Enchilada Filling

Next, it was time to create the heart of these enchilada cups – a simple yet incredibly flavorful filling. I combined shredded rotisserie chicken, sweet whole-kernel corn, hearty black beans, and a can of chopped green chiles, all brought together with a generous pour of my favorite enchilada sauce. The beauty of this recipe lies in its adaptability. While chicken offers a classic touch, you can easily substitute it with any cooked protein you prefer. Imagine savory steak, tender fish, succulent shrimp, or even ground beef or turkey for a different twist. For vegetarian friends, simply omit the meat and boost the beans or add an array of sautéed vegetables like bell peppers, onions, or zucchini for a wholesome, delicious alternative.

Once the filling was perfectly mixed, I carefully spooned it into each crispy tortilla cup, filling them almost to the brim. A generous pinch of Mexican-blend cheese crowned each cup, promising a gooey, melted topping.

Back into the oven they went, just long enough for the cheese to melt into a golden, bubbly blanket and for the filling to warm through completely. The aroma filling my kitchen was simply irresistible, a preview of the deliciousness to come.

Finishing Touches and Serving Suggestions

As soon as they emerged from the oven, piping hot and fragrant, I added the final flourish: a sprinkle of fresh cilantro and thinly-sliced green onions. And just like that – voilà! – these adorable, bite-sized enchilada cups were ready to grace any party spread. They’re not just cute; they’re incredibly practical. Designed for easy handheld eating, they embody the perfect game day spirit. While they are wonderfully juicy inside thanks to that rich enchilada sauce, a plate or a stack of sturdy napkins nearby is always a good idea. But the best part? Absolutely no forks are required, which is precisely how I like my entertaining to roll.

These Easy Enchilada Cups are quick and simple to make, easy to customize with your favorite enchilada ingredients, and totally delicious!

Details

  • Prep Time: 15 minutes
  • Cook Time: 20 minutes
  • Total Time: 35 minutes
  • Yield: 10 servings

Ingredients

  • 1 (10-count) package Old El Paso Small Flour Tortillas
  • 1 (10-ounce) can Old El Paso Red Enchilada Sauce (or your favorite homemade enchilada sauce)
  • 1 (14-ounce) can black beans, rinsed and drained
  • 1 (4-ounce) can Old El Paso chopped green chiles
  • 2 cups shredded cooked chicken (*or other desired filling, see notes below)
  • ½ cup whole-kernel corn
  • 1 cup shredded Mexican-blend cheese
  • ¼ cup chopped fresh cilantro
  • ¼ cup thinly-sliced green onions

Instructions

  1. Heat oven to 350°F (175°C).
  2. Gently press each tortilla into the cups of a standard-sized muffin pan, carefully pleating the edges so they fit snugly inside each cup. Ensure not to let the tortillas fold too tightly into the middle, as you’ll need an opening for the filling. Bake for 10-12 minutes, or until the tortilla cups have hardened slightly and are lightly golden on all sides. Remove from the oven and set aside to cool slightly.
  3. While the tortillas are baking, combine the enchilada sauce, black beans, green chiles, shredded chicken, and corn together in a large mixing bowl. Toss the ingredients until they are evenly combined, ensuring every component is coated in the savory sauce.
  4. Once the tortilla cups are ready, carefully spoon the prepared filling into each cup until it is filled nearly to the brim. Place a small pinch of shredded cheese on top of each tortilla cup. Then, return the muffin pan to the oven and bake for an additional 15 minutes, or until the cheese is beautifully melted and bubbly, and the filling is thoroughly warmed through.
  5. Remove the enchilada cups from the oven. For a fresh finish, evenly sprinkle the top of each cup with the chopped fresh cilantro and thinly-sliced green onions. Serve warm and enjoy immediately!

Notes

*Feel free to substitute 2 cups total of another cooked protein (such as ground beef, steak, pulled pork, fish, or shrimp) and/or a variety of cooked vegetables (like sautéed bell peppers, onions, zucchini, or mushrooms) in place of the shredded chicken to customize your enchilada cups.
