Essential Ingredients for Your Comfort Bowl

The beauty of these Cheesy Broccoli, Chicken & Rice Bowls lies in their straightforward ingredients, each playing a crucial role in creating a harmonious and satisfying dish. Here’s a closer look at what you’ll need and why each component matters:

The Stars: Chicken and Broccoli

You guessed it! The two main ingredients for this retro-inspired recipe are chicken and broccoli. They’re a classic pairing for a reason, offering a great balance of protein and vibrant greens.

  • Boneless Skinless Chicken Breasts: We opt for boneless, skinless chicken breasts for their lean protein content and quick cooking time. They absorb flavors beautifully and can be easily diced or shredded after cooking. Feel free to substitute with boneless, skinless chicken thighs for a juicier texture or even pre-cooked rotisserie chicken for an even faster prep time.
  • Fresh Broccoli: Two heads of fresh broccoli, cut into bite-sized florets, bring essential nutrients, a pleasant crunch, and a pop of color to the bowls. While fresh is preferred for optimal texture, frozen broccoli can also be used in a pinch; just ensure it’s thoroughly drained after cooking to avoid excess moisture. The Base: Rice or Quinoa

The foundation of these bowls is a hearty grain that soaks up all the delicious cheese sauce.

  • Cooked Rice or Quinoa: Three cups of your favorite cooked grain, such as white rice, brown rice, or quinoa, provide a wholesome and satisfying base. I often prepare mine in a rice cooker for hands-off convenience. Brown rice adds extra fiber and a nutty flavor, while quinoa offers a complete protein source.

The Secret Weapon: Lightened-Up Cheddar Cheese Sauce

This is where the magic happens! Our cheddar cheese sauce is intentionally designed to be lighter without skimping on flavor, ensuring a creamy, comforting experience.

  • Butter & Flour: These two create a simple roux, the thickening agent for our sauce, providing a rich base.
  • Garlic: Freshly pressed or minced garlic infuses the sauce with an aromatic depth that elevates the entire dish.
  • Chicken or Vegetable Stock: Used as the primary liquid for the sauce, stock adds an extra layer of savory flavor compared to just milk or water.
  • Warmed Milk: Adding warmed milk helps create a smooth sauce, preventing lumps and ensuring a velvety consistency.
  • Seasonings: A simple blend of salt and pepper enhances all the flavors without overpowering them.
  • Shredded Sharp Cheddar Cheese: The star of the sauce! Sharp cheddar delivers that quintessential cheesy tang. For the smoothest sauce, I highly recommend grating a block of cheddar cheese yourself. Pre-shredded cheeses often contain anti-caking agents that can prevent them from melting as smoothly.

Step-by-Step Guide to Crafting Your Delicious Bowls

Creating these Cheesy Broccoli, Chicken & Rice Bowls is a straightforward process, broken down into manageable steps. Follow along to achieve perfectly cooked ingredients and a dreamy cheese sauce.

Step 1: Prepare the Chicken

  1. Season and Sear: Begin by seasoning your boneless, skinless chicken breasts generously on both sides with kosher salt and freshly-cracked black pepper. Heat 1 tablespoon of olive oil in a large sauté pan over medium-high heat. Once the oil shimmers, carefully place the chicken breasts in the pan. Cook for 4-5 minutes per side, or until the chicken is beautifully golden brown on the outside and cooked through. To ensure doneness, use a meat thermometer; it should register 165°F (74°C).
  2. Rest and Dice: Transfer the cooked chicken to a clean plate and let it rest for at least 5 minutes. This crucial step allows the juices to redistribute, resulting in more tender and flavorful chicken. Once rested, dice the chicken into bite-sized pieces. Set aside.

Step 2: Cook the Broccoli

  1. Sauté to Perfection: Using the same sauté pan (to minimize dishwashing and leverage residual flavors), heat the remaining 1 tablespoon of olive oil over medium-high heat. Add the bite-sized broccoli florets and season with a pinch of salt and pepper. Toss to ensure the broccoli is evenly coated. Sauté for 4-5 minutes, stirring occasionally, until the broccoli is cooked through and tender, but still retains a slight crispness – what we call “crisp-tender.” Overcooked broccoli can become mushy, so keep an eye on it. Transfer the cooked broccoli to a separate plate and set aside with the chicken.

Step 3: Master the Lightened-Up Cheddar Cheese Sauce

  1. Start the Roux: In the same sauté pan (or a separate saucepan if you prefer to multi-task), melt 1 tablespoon of butter over medium heat. Add the pressed or minced garlic and sauté for 1-2 minutes until fragrant, stirring constantly to prevent burning.
  2. Build the Sauce: Whisk in 2 tablespoons of flour until it is evenly combined with the butter and garlic, creating a paste (roux). Continue to sauté for 1 more minute, stirring occasionally, to cook out the raw flour taste. Gradually add 1/2 cup of chicken or vegetable stock, whisking continuously to combine and prevent lumps. The mixture will start to thicken.
  3. Simmer and Thicken: Next, add 1/2 cup of warmed milk, 1/4 teaspoon of pepper, and 1/8 teaspoon of salt. Whisk everything together until the sauce is smooth and creamy. Continue cooking, stirring occasionally, until the mixture reaches a gentle simmer and visibly thickens.
  4. Melt the Cheese: Remove the pan from the heat. Stir in 1 cup (4 ounces) of shredded sharp cheddar cheese until it is completely melted and incorporated into a smooth, glossy sauce. Your delicious, lightened-up cheddar cheese sauce is now ready to use immediately!

Step 4: Assemble Your Comfort Bowls

  1. Combine and Serve: In the large sauté pan (or a separate mixing bowl), toss the cooked chicken and broccoli with the prepared cheddar cheese sauce until all the ingredients are evenly coated. Serve this delectable mixture immediately over your cooked rice or quinoa.
  2. Meal Prep for the Week: For convenient meal prep, portion the chicken, broccoli, and cheese sauce mixture evenly into 6-8 individual food storage containers, alongside your cooked rice or quinoa. For an extra touch of cheesy goodness, garnish each serving with a light sprinkle of additional shredded cheddar cheese and a dash of pepper while still warm – it will melt beautifully. These sealed containers can be refrigerated for up to 4 days, providing quick and easy meals throughout your busy week.

Tips for Perfect Meal Prep and Storage

Making these Cheesy Broccoli, Chicken & Rice Bowls part of your meal prep routine is a fantastic way to ensure you have wholesome, delicious meals ready to go. Here are some tips to maximize flavor and freshness:

  • Portioning is Key: Invest in high-quality, airtight food storage containers with separate compartments if you prefer to keep your rice and chicken/broccoli mixture distinct until reheating. This can help prevent the rice from getting soggy.
  • Cool Before Sealing: Always allow your cooked ingredients to cool completely before portioning and sealing them in containers. This prevents condensation from building up, which can lead to sogginess and affect food safety.
  • Reheating Instructions: When ready to eat, simply remove the lid (or vent it) and microwave on high for 2-3 minutes, or until thoroughly heated through. You can also reheat in a pan on the stovetop over medium heat, stirring occasionally, adding a splash of milk or stock if the sauce appears too thick.
  • Shelf Life: These meal prep bowls will stay fresh in the refrigerator for up to 4 days. They are perfect for Monday through Thursday lunches or dinners!
  • Freezing (Optional): While best enjoyed fresh, you can freeze individual portions for longer storage (up to 2-3 months). Thaw overnight in the refrigerator before reheating. Note that the texture of the cheese sauce and broccoli might change slightly after freezing and thawing.

Delicious Variations & Add-Ins

This recipe is incredibly versatile! Feel free to experiment with these ideas to keep things fresh and cater to different tastes:

  • Protein Swaps: Instead of chicken, try cooked shrimp for a seafood twist, ground turkey or beef, diced pork loin, or even plant-based proteins like pan-fried tofu or chickpeas for a vegetarian option.
  • Vegetable Boosts: Enhance the nutritional value and flavor by adding more vegetables. Sautéed mushrooms, diced bell peppers, peas, corn, or a handful of fresh spinach (stirred in at the end until wilted) would be excellent additions.
  • Grain Alternatives: While rice and quinoa are fantastic, consider other grains like couscous, farro, or even pasta for a different texture. Whole wheat pasta would also work beautifully.
  • Cheese Alternatives: Experiment with different cheeses! Monterey Jack, Colby, or a blend of Italian cheeses can offer a new flavor dimension. For a dairy-free option, use a high-quality dairy-free cheddar alternative.
  • Spice It Up: If you enjoy a bit of heat, add a pinch of red pepper flakes to the cheese sauce or a dash of your favorite hot sauce when serving.
  • Herbaceous Touches: Fresh herbs like chopped parsley, chives, or a sprinkle of dried thyme or oregano in the sauce can brighten the flavors.
  • Make it a Casserole: Craving that old-school casserole feel? Combine all ingredients in a baking dish, top with extra cheese and breadcrumbs, and bake until bubbly and golden brown.

Frequently Asked Questions (FAQ)

Here are some common questions you might have about making these delightful bowls:

  • Can I use frozen broccoli? Yes, you can! Thaw frozen broccoli and pat it dry before sautéing to remove excess moisture. The cooking time might be slightly shorter.
  • Can I use pre-cooked chicken? Absolutely! If you have leftover rotisserie chicken or grilled chicken, shred or dice it and add it to the cheese sauce with the cooked broccoli at the assembly stage. This will significantly reduce your prep time.
  • How can I make this gluten-free? To make this recipe gluten-free, simply substitute the all-purpose flour in the cheese sauce with a gluten-free all-purpose flour blend (ensure it contains xanthan gum for thickening) or cornstarch (use half the amount of cornstarch as flour, mixed with a little cold water before adding).
  • How can I make this dairy-free? For a dairy-free version, use dairy-free butter, unsweetened plain dairy-free milk (like almond or soy milk), and your favorite brand of dairy-free shredded cheddar cheese.
  • Can I bake this as a casserole? Yes! If you’re yearning for a classic casserole, simply combine the cooked chicken, broccoli, cheese sauce, and rice in a greased 9×13 inch baking dish. Top with extra shredded cheddar cheese and a sprinkle of breadcrumbs (optional). Bake at 375°F (190°C) for 20-25 minutes, or until bubbly and golden brown.
  • What kind of rice is best? Any cooked rice works well. White rice (like jasmine or basmati) is quick and fluffy, while brown rice offers more fiber and a nutty flavor. Quinoa is also an excellent, protein-rich alternative.

There you have it – a truly adaptable and satisfying meal that delivers on all fronts: flavor, comfort, and convenience. These Cheesy Broccoli, Chicken & Rice Bowls are more than just a recipe; they’re an invitation to enjoy wholesome, delicious food even on your busiest days. Description

This Cheesy Broccoli, Chicken and Rice Bowls recipe is easy to make for lunch meal prep or weeknight dinners, it is tossed with a lightened-up cheddar cheese sauce, and it’s totally comforting and delicious!

Ingredients

Scale

Meal Prep Bowls Ingredients:

  • 1.5 pounds boneless skinless chicken breasts
  • Kosher salt and freshly-cracked black pepper
  • 2 tablespoons olive oil, divided
  • 2 heads broccoli, cut into bite-sized florets
  • 1 batch cheddar cheese sauce (see below)
  • 3 cups cooked rice or quinoa
  • extra shredded cheddar cheese*, for topping

Cheddar Cheese Sauce:

  • 1 tablespoon butter
  • 2 cloves garlic, pressed or minced
  • 2 tablespoons flour
  • 1/2 cup chicken or vegetable stock
  • 1/2 cup warmed milk
  • ¼ teaspoon pepper
  • ⅛ teaspoon salt
  • 1 cup (4 ounces) shredded sharp cheddar cheese*

Instructions

To Make The Meal Prep Bowls:

  1. To Make The Chicken: Season the chicken breasts on both sides with salt and pepper.  Heat 1 tablespoon olive oil in a large sauté pan over medium-high heat.  Cook chicken for 4-5 minutes per side, or until the chicken is no longer pink on the inside (and registers 165°F with a meat thermometer).  Transfer the chicken to a plate and let it rest for at least 5 minutes before dicing into bite-sized pieces.
  2. To Make The Broccoli: Heat the remaining 1 tablespoon olive oil in the same sauté pan.  Add the broccoli and season with salt and pepper, tossing to combine.  Sauté for 4-5 minutes, stirring occasionally, until the broccoli is cooked and tender, but still slightly crispy.  Transfer broccoli to a separate plate, and set aside.
  3. To Make The Cheddar Cheese Sauce: Heat the butter in the same sauté pan (or a separate saucepan) until melted.  Add garlic and sauté for 1-2 minutes or until fragrant, stirring occasionally.  Whisk in the flour until evenly combined and sauté for 1 more minute, stirring occasionally.  Gradually add in the stock, whisking to combine.  Then add in the milk, pepper and salt, and whisk together until smooth.  Continue cooking until the mixture reaches a simmer and thickens.  Then stir in the shredded cheese, and stir until melted.  Remove from heat and use immediately.
  4. To Assemble: Toss the cooked chicken and broccoli with the cheese sauce until evenly combined.  Serve immediately over rice.  Or portion the mixture evenly into food storage containers along with the rice, garnishing with an extra sprinkle of shredded cheese and pepper.  Refrigerate in sealed containers for up to 4 days.

Notes

*I recommend purchasing a block of cheddar cheese and grating it yourself, rather than buying a pre-shredded bag of cheese.  The pre-shredded cheese usually contains a coating that prevents the cheese from melting quite as smoothly.
