Experience Authentic Flavor: Ancho Chicken Enchiladas
There’s an undeniable joy that comes with gathering around a table laden with vibrant, flavorful Mexican food. And what better way to celebrate that culinary spirit than with a pan of bubbling, cheesy enchiladas? This isn’t just any enchilada recipe; these Ancho Chicken Enchiladas elevate a classic dish with a deep, smoky richness that will transport your taste buds straight to a fiesta. Whether you’re planning a festive Cinco de Mayo celebration, a cozy family dinner, or simply craving the irresistible comfort of homemade Mexican cuisine, these enchiladas are designed to impress with their robust flavor and satisfying texture.
My love affair with Mexican food is a year-round commitment, but it certainly reaches a crescendo around special occasions like Cinco de Mayo. I’ve spent countless hours in the kitchen perfecting favorites, from zesty homemade salsa to refreshing margaritas, ensuring every meal is a true celebration. This particular Ancho Chicken Enchiladas recipe emerged from a desire to infuse more complexity and depth into a beloved comfort food, and it quickly became a household favorite. It’s a dish that embodies warmth, flavor, and the joy of sharing good food with loved ones.

Earlier in the week, I prepared a generous batch of these enchiladas, knowing they’d be perfect for various Mexican food gatherings. This recipe, a delightful twist on my classic chicken enchiladas, owes its distinctive character to one extraordinary ingredient that truly transforms the flavor profile:

The Power of Ancho Chile Powder
…ancho chile powder! If this isn’t a staple in your spice cabinet yet, I wholeheartedly recommend adding a jar to your collection. Ancho chiles are simply dried poblano peppers, and when ground into a powder, they deliver an incredibly rich, earthy, and smoky flavor that is unparalleled. Unlike many other chili powders, ancho offers a depth that is both comforting and exciting, with a mild to medium heat level that adds a pleasant warmth without overwhelming the palate. It’s generally a bit spicier than standard American chili powder, providing that extra kick that makes these enchiladas truly stand out.
The beauty of ancho chile powder lies in its versatility. Beyond enchiladas, it’s a fantastic addition to chili, stews, marinades, and rubs, lending an authentic Mexican flair to any dish. Its smoky undertones pair beautifully with chicken, beef, or even vegetarian options, making it a powerful ingredient for any home cook looking to explore deeper flavors. Don’t be shy about experimenting with it; a little bit goes a long way in building layers of deliciousness.
Crafting the Irresistible Homemade Enchilada Sauce
As with all my homemade enchilada recipes, I cannot stress enough the importance of making your sauce from scratch. While store-bought options can be convenient, a homemade sauce elevates these Ancho Chicken Enchiladas from good to absolutely phenomenal. The extra effort is minimal, and the reward is a vibrant, fresh flavor that simply can’t be matched. Plus, you can easily prepare the sauce while you’re prepping the other ingredients for the enchiladas, maximizing your time in the kitchen.
Homemade sauce allows you to control the quality of ingredients, adjust the spices to your preference, and avoid unwanted additives. The rich aroma of toasted ancho chile powder, garlic, cumin, and oregano simmering on your stove is an experience in itself, promising the deliciousness that’s about to come. I often recommend making a double batch of this incredible sauce. It freezes beautifully or can be refrigerated for a few days, ready to be deployed in another recipe later in the week—perhaps for a batch of huevos rancheros, a savory tamale pie, or simply as a flavorful topping for grilled meats. It’s truly a versatile staple!

Assembling Your Ancho Chicken Enchiladas
The assembly process for these enchiladas is straightforward, culminating in a beautiful and incredibly tasty dish. Begin by preparing your delectable homemade ancho enchilada sauce. While the sauce is simmering, you’ll create the savory filling. Start by sautéing diced white onions until they’re translucent and fragrant. Then, add boneless, skinless chicken breasts, cut into small pieces, along with diced green chiles. Season this mixture generously with salt and pepper, allowing the chicken to cook through and absorb all the wonderful flavors. If you’re opting for pre-cooked shredded chicken, simply stir it in after the onions and green chiles have softened, as noted in the recipe below.
Once your chicken mixture is ready, it’s time to set up your assembly line: warm tortillas, the rich ancho enchilada sauce, rinsed and drained pinto beans, your flavorful chicken and chile mixture, and a generous amount of Mexican-blend shredded cheese. Lay out each large flour tortilla, spreading a thin layer of sauce across its surface. This helps keep the tortilla moist and infuses every bite with flavor. Next, add a line of pinto beans down the center, followed by a spoonful of the chicken mixture. Finally, sprinkle a hearty portion of shredded cheese over the filling. Carefully roll up the tortilla, securing the filling inside, and place it seam-side down in a greased 9×13-inch baking dish. Repeat this process until your dish is filled with these delightful bundles of flavor. The final touch? Drench the rolled enchiladas with the remaining homemade ancho enchilada sauce and crown them with a lavish layer of extra shredded cheese. This ensures every enchilada is moist, tender, and irresistibly cheesy.

The magic truly happens in the oven. Bake them until the cheese is wonderfully melted and bubbly, and the edges of the tortillas achieve a slight crispness, hinting at the perfect texture within. The aroma filling your kitchen will be absolutely intoxicating, a promise of the deliciousness awaiting you.

…then dish them UP!
Serving Suggestions & Finishing Touches
While these Ancho Chicken Enchiladas are incredibly satisfying on their own, a few fresh garnishes can truly elevate the experience. I love serving mine with a generous dollop of fresh avocado slices or a scoop of creamy guacamole, a sprinkle of vibrant chopped cilantro, and perhaps a spoonful of cool sour cream or a dusting of crumbled cotija cheese. These fresh additions provide a beautiful contrast in texture and temperature, brightening the rich flavors of the enchiladas. Feel free to customize your toppings based on your preferences – a squeeze of lime juice, a dash of hot sauce, or pickled jalapeños can all add another layer of excitement. For a complete meal, pair them with a side of fluffy Mexican rice or a simple green salad.
These Ancho Chicken Enchiladas are truly versatile – perfect for festive occasions like Cinco de Mayo, for celebrating a birthday with Mexican-food-filled abandon, or simply any evening you’re craving a profoundly satisfying and flavorful meal. Every bite is a testament to the power of quality ingredients and the joy of homemade cooking. Gather your ingredients, invite your friends and family, and prepare to enjoy a truly memorable meal.
Enjoy, amigos!

Ancho Enchilada Sauce Recipe:
- 2 tablespoons avocado oil (or vegetable oil, or any other neutral oil)
- 2 tablespoons all-purpose or gluten-free flour
- 4 tablespoons ancho chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cumin
- 1/4 teaspoon dried oregano
- 2 cups chicken or vegetable stock
Instructions
To Make The Enchiladas:
- Preheat oven to 350°F. Prepare your enchilada sauce according to the instructions below.
- In a large sauté pan, heat the oil over medium-high heat. Add the diced onion and sauté for about 3 minutes, stirring occasionally, until softened. Add the diced chicken pieces and diced green chiles to the pan, and season generously with salt and pepper. Continue to sauté for 6-8 minutes, stirring periodically, until the chicken is thoroughly cooked through and lightly browned. Remove the pan from the heat and set the chicken mixture aside.
- To assemble the enchiladas efficiently, set up an assembly line with your ingredients: the tortillas, a bowl of enchilada sauce, the rinsed pinto beans, the cooked chicken mixture, and the shredded cheese. Take one tortilla and spread approximately two tablespoons of the prepared ancho enchilada sauce evenly over its surface. Next, arrange a line of pinto beans down the middle of the tortilla, followed by a spoonful of the chicken mixture. Sprinkle about 1/3 cup of the shredded cheese over the filling. Carefully roll up the tortilla, ensuring the filling is enclosed, and place it seam-side down into a lightly greased 9 x 13-inch baking dish. Repeat this process with the remaining tortillas and filling ingredients until the baking dish is full. Once all enchiladas are rolled and placed, pour any remaining enchilada sauce generously over the top of the tortillas, then sprinkle with the rest of the shredded Mexican-blend cheese.
- Bake the enchiladas uncovered in the preheated oven for 20 minutes, or until the cheese is beautifully melted and bubbly, and the edges of the tortillas are slightly golden and crisp. Remove from the oven and let them rest for a few minutes before serving. Garnish immediately with freshly chopped cilantro, and any other desired toppings, then enjoy every delicious bite.
To Make The Ancho Enchilada Sauce:
- Heat the avocado oil (or alternative neutral oil) in a small saucepan over medium-high heat. Once hot, add the flour and whisk it continuously for one minute, allowing it to cook and form a roux. Stir in the remaining seasonings: the ancho chili powder, garlic powder, salt, ground cumin, and dried oregano, cooking for another 30 seconds until fragrant. Gradually pour in the chicken or vegetable stock, whisking constantly to ensure no lumps form, creating a smooth sauce. Reduce the heat to low and let the sauce simmer for 10-15 minutes, stirring occasionally, until it has thickened slightly to your desired consistency.
- The sauce is now ready to use for your enchiladas. If preparing ahead, allow it to cool completely before transferring to an airtight container. It can be refrigerated for up to 3 days. For convenient storage, I often use mason jars or Weck jars to keep the sauce fresh.
Notes
*If you prefer to use pre-cooked chicken (such as rotisserie chicken or leftover shredded chicken), adjust step 2 as follows: sauté the onion and green chiles for 1 additional minute (for a total of 4 minutes) to ensure they are tender. Once you remove them from the heat, stir in the pre-cooked chicken, ensuring it is shredded or chopped into bite-sized pieces. There’s no need to cook the pre-cooked chicken in the pan; simply warm it through with the vegetables.
